Honey Walnut Shortbread Cookies
Buttery shortbread cookies studded with toasted walnuts and sweetened with honey, inspired by Middle Eastern confectionery traditions. These tender, crumbly cookies have a delicate texture balanced by nutty depth and subtle honey notes. Perfect with tea or coffee.
Steps
Before you start
- Bring butter to room temperature for 1 hour so it creams easily
- Preheat oven to 325°F (160°C)
- Toast walnuts in a dry skillet for 3–4 minutes until fragrant, then let cool slightly before chopping
Cream butter and honey
- In a stand mixer fitted with the paddle attachment (or using an electric mixer in a bowl), combine softened butter and honey.
- Beat on medium speed for 2–3 minutes until the mixture is pale, fluffy, and noticeably lighter in color.
- Scrape down the bowl as needed.

Ready when: Mixture is pale and fluffy
Tip: Room-temperature butter creams much faster and incorporates more air, giving cookies a tender crumb.
Mix in flour, walnuts, and salt
- Add flour and salt to the butter mixture.
- Mix on low speed for 1–2 minutes until just combined—the dough should resemble coarse sand with visible walnut pieces.
- Do not overmix or the cookies will be tough.
- Fold in the chopped toasted walnuts by hand using a wooden spoon until evenly distributed.

Ready when: Dough is just combined and crumbly, with visible walnut pieces throughout
Tip: Overmixing develops gluten and makes shortbread tough; mix only until the ingredients are barely combined.
Press into baking pan
- Transfer the dough to a 9×13-inch (23×33 cm) baking pan lined with parchment paper.
- Press gently and evenly to an even thickness of about ½ inch (1.25 cm), using your fingers or the bottom of a measuring cup if needed.
- The dough should be compact but not compressed so hard that it becomes dense.

Ready when: Dough is pressed evenly into the pan with an even surface
Tip: Press gently—tight compression creates a hard, cake-like texture instead of tender shortbread.
Score and bakeOven 325°F / 165°C
- Using a sharp knife, score the dough into 24 squares (6 columns by 4 rows), cutting about ¼ inch (6 mm) deep without cutting all the way through the dough.
- Place the pan in a preheated 325°F (160°C) oven and bake for 18–22 minutes until the edges are pale golden brown and the center is just firm to a light touch.
- The top should not be deeply browned—look for a subtle, even golden color.

Ready when: Edges are pale golden brown, center is firm to light touch, top is evenly colored
Tip: Use a lower oven temperature (325°F) to avoid over-browning the honey; shortbread should be pale and delicate.
Cool and cut
- Remove the pan from the oven and let cool for 8–10 minutes on a wire rack.
- While still warm, cut along the scored lines with a sharp, dry knife, pressing straight down without sawing.
- Once completely cooled, carefully lift cookies from the pan.

Ready when: Cookies are cool and hold their shape when lifted
Tip: Cut while still warm so the cookies separate cleanly; if they cool too much, they'll crumble as you cut.
Good to know
Tips
- Toast the walnuts just before using them; this brings out their flavor and prevents them from becoming rancid during storage.
- Do not substitute salted butter—the salt amount is precisely calibrated for the recipe. Unsalted butter gives you control over salt levels.
- For extra flavor, add ½ teaspoon of ground cinnamon or ¼ teaspoon of cardamom to the flour mixture.
- These cookies taste even better the next day as flavors meld; store them in an airtight container to keep them tender.
Make ahead
Dough can be made and pressed into the pan up to 4 hours ahead, covered with plastic wrap and kept at room temperature. Bake as directed. Cookies can be baked up to 3 days ahead and stored in an airtight container.
Storage & reheating
Room temperature in an airtight container for up to 5 days. Refrigerator in an airtight container for up to 7 days. Freezer in an airtight container or freezer bag for up to 1 month; thaw at room temperature for 1 hour before serving. Do not refrigerate or freeze after baking, as this can dry them out.
Substitutions
- walnuts → almonds, pistachios, or hazelnuts. Toast nuts of choice for 3–4 minutes until fragrant. Different nuts will give subtle flavor variations but the same tender texture.
- honey → light agave nectar or maple syrup. Use the same amount by weight. Maple syrup will add a distinct flavor; agave is more neutral.
- all-purpose flour → a mixture of 1¾ cups (220 g) all-purpose flour and ¼ cup (30 g) cornstarch. Cornstarch adds extra tenderness to the shortbread crumb.
- fine sea salt → table salt. Use ¼ teaspoon (1.5 g) table salt, as it is finer and more concentrated than sea salt.
