Honey Puff Pastry Swirls

Crispy, golden puff pastry pinwheels studded with walnuts, warm cinnamon, and a drizzle of honey. A Middle Eastern-inspired pastry that's elegant enough for entertaining but simple enough for a weekend treat. The contrast between the shattered pastry and gooey honey filling makes these irresistible.

Steps

Before you start
  • If using frozen puff pastry, remove from the freezer and thaw at room temperature for 30–40 minutes—it should be cool but pliable, not stiff and cracked.
  • Preheat your oven to 400°F (200°C) before you begin rolling the pastry so it's ready to bake.
  • Measure and prep all ingredients (chop walnuts, melt butter, beat the egg) ahead of time so you can work quickly once rolling begins.
  • Clear a large work surface for rolling out the pastry sheets.
  1. Preheat oven and line baking sheetsOven 400°F / 205°C

    • Place the oven rack in the middle position and preheat the oven to 400°F (200°C).
    • Line two large baking sheets with parchment paper and set aside.

Tip: Having your equipment ready before working with pastry prevents the dough from warming up too much while you prep.

  2. Mix the walnut-honey filling

    • In a small bowl, combine the finely chopped walnuts, ground cinnamon, ground cardamom (if using), and sea salt.
    • Add ¼ cup (85g) of the honey and stir gently until the mixture forms a chunky paste that holds together when pressed.
    • The honey should coat the walnuts evenly without making the filling too wet.

Ready when: Mixture is a sticky paste with distinct walnut pieces visible

Tip: Avoid over-stirring or the honey will make the filling too wet, which will seep into the pastry and make it soggy instead of crispy.

  3. Unfold and rest pastry sheets

    • Remove the puff pastry sheets from the package and gently separate them (they may stick together).
    • Place one sheet on a lightly floured work surface.
    • Let it rest at room temperature for 2–3 minutes to warm up slightly—this makes it pliable and less likely to crack or tear when rolling.
    + Show details

Ready when: Pastry is flexible but still cool to the touch

Tip: If pastry is too cold, it will crack and spring back while rolling. If it warms too much, the butter will seep out and prevent proper puffing. Room temperature is the sweet spot.

  4. Roll pastry and spread filling

    • Using a rolling pin, gently roll the first puff pastry sheet into a 10 × 14 inch rectangle (approximately 25 × 35 cm).
    • Let the pin do the work—avoid pressing down hard, which flattens air bubbles that create the puff.
    • Brush the entire surface with 1 tbsp (15g) of melted butter.
    • Spread half of the prepared walnut-honey filling (about ½ cup / 150g) evenly over the buttered surface, leaving a ½-inch border on all edges.
    + Show details

Ready when: Pastry is rolled to even thickness; filling is distributed uniformly

Tip: If the pastry springs back as you roll, let it rest for 1–2 minutes and continue rolling. This is normal and actually preserves the laminations that make it puff.

  5. Roll pastry into a log

    • Starting from one long edge (the 14-inch side), tightly roll the pastry into a log, pressing gently as you go to seal in the filling and create gentle tension.
    • The finished roll should be about 2 inches (5 cm) in diameter.
    • Seal the seam by pinching it gently with your fingers.

Ready when: Pastry is rolled tightly and seam is sealed

Tip: Roll firmly enough to prevent unrolling during baking, but not so aggressively that filling squeezes out the sides. A medium, controlled roll gives the best results.

  6. Cut into swirls and arrange on sheets

    • Using a sharp knife, cut the log into 6 equal pieces (each about 1⅓ inches / 3.5 cm wide).
    • Transfer each swirl to one of the prepared baking sheets, placing them cut-side up with at least 2 inches (5 cm) of space between each one—puff pastry expands significantly as it bakes.
    • Gently press the top of each swirl with the palm of your hand to flatten it slightly so it doesn't unroll.
    • Repeat the rolling, filling, and cutting process with the second puff pastry sheet and the remaining walnut-honey filling, arranging those 6 swirls on the second baking sheet.

Ready when: 12 swirls are arranged on baking sheets with adequate spacing between them

Tip: Leave enough space between swirls so they don't fuse together as they puff. Crowding them will prevent proper rise and even browning.

  7. Brush with egg wash

    • In a small bowl, beat the large egg with 1 tbsp (15ml) water until well combined.
    • Using a pastry brush, lightly brush the top and sides of each swirl with the egg wash.
    • This will give them a glossy, deep golden-brown finish when baked.
    + Show details

Ready when: All swirls are evenly brushed with a thin, even coat of egg wash

Tip: Use a light touch—a thin, even coat of egg wash gives a better finish than too much, which can pool and create uneven browning.

  8. Bake until golden and puffedOven 400°F / 205°C

    • Place both baking sheets in the preheated 400°F (200°C) oven.
    • Bake for 18–22 minutes, until the pastry is puffed and the swirls are deep golden brown all over, including the exposed cinnamon-honey filling.
    • The pastry should be crispy and sound hollow when tapped lightly.
    + Show details

Ready when: Pastry is deep golden brown; edges are crispy and swirls are fully puffed

Tip: If the pastry begins to brown too quickly before the inside is cooked through, lower the oven temperature to 375°F (190°C) and add 3–5 minutes to the baking time. If baking both sheets simultaneously, rotate them halfway through for even browning.

  9. Drizzle with warm honey

    • Remove the baked swirls from the oven and let them cool on the baking sheet for 2–3 minutes.
    • While still warm, generously drizzle with the remaining honey (approximately 3–4 tbsp / 85g), allowing it to pool slightly into the spiral crevices and around the base of the pastry.
    • The heat will help the honey seep into the layers, creating a gooey, luxurious texture.
    + Show details

Ready when: Honey is drizzled over all swirls and has begun seeping into the crevices

Tip: Drizzling warm honey onto warm pastry is key—the heat opens up the pastry's pores and allows the honey to penetrate, creating better flavor and texture than cold honey on cooled pastry.

Good to know

Tips
  • Keep the pastry cool as you work. If it warms up and feels soft, refrigerate it for 5–10 minutes to re-chill the butter before continuing rolling. Cold butter creates the steam that lifts the layers.
  • Don't overfill—the ½ cup of filling per sheet is plenty. Too much filling makes the pastry hard to roll and causes it to leak out during baking, leaving you with both greasy swirls and a dirty oven.
  • Invest in quality, all-butter puff pastry if possible. It will puff more dramatically and brown more evenly than pastry made with vegetable shortening.
  • Serve these warm and fresh, ideally within a few hours of baking. The contrast between the crispy pastry and gooey honey is the whole appeal, and both are best enjoyed at this moment.
Make ahead

The walnut-honey filling can be made up to 1 day ahead and refrigerated in an airtight container. The assembled swirls can be egg-washed and frozen on a baking sheet for up to 1 month; bake directly from frozen, adding 3–5 minutes to the baking time. Do not drizzle with honey until just before serving.

Storage & reheating

Room temperature: Keep in an airtight container for up to 2 days; these are best served fresh and warm. Refrigerator: Store in an airtight container for up to 4 days; reheat in a 300°F (150°C) oven for 5 minutes to re-crisp the pastry. Freezer: Freeze baked, cooled swirls in an airtight container or freezer bag for up to 3 months; thaw at room temperature for 1–2 hours, then reheat in a 325°F (160°C) oven for 8–10 minutes, or warm directly from frozen at 325°F for 12–15 minutes.

Substitutions
  • Walnuts → Pistachios, almonds, or hazelnuts. Use the same amount. Pistachios especially add a traditional Middle Eastern flavor and beautiful color.
  • Honey → Agave nectar or pure maple syrup. Use an equal amount by volume. The flavor will shift, and these alternatives are slightly sweeter, so taste before drizzling the full amount.
  • All-purpose puff pastry, thawed if frozen → Homemade puff pastry or all-butter pie dough. Store-bought is convenient and yields excellent results, but homemade all-butter puff pastry will be even more luxurious.
  • Ground cinnamon → Baharat spice blend or 1 tbsp ground pistachios plus ¼ tsp rose water. These create a more complex, traditional Middle Eastern flavor profile. Use sparingly with rose water—it's potent.
