Steps
Before you start
- Use pearl barley, not hulled or hull-less barley, which needs a much longer cook time.
- Chop all vegetables before you start so the sauté goes smoothly.
- The soup thickens as it sits; keep an extra cup of broth or water on hand to thin it.
- If your broth is unsalted, you will need the full amount of salt listed; if salted, add salt gradually at the end.
Heat the oil
- Set a 5- to 6-quart soup pot over medium heat and add the olive oil.
- Let it heat for about 1 minute until it shimmers and flows easily across the pot.

Sauté the mirepoix
- Add the onion, carrots, celery and 1 teaspoon of the salt.
- Cook, stirring every minute or so, for 8 to 10 minutes, until the onion is soft and translucent and the carrots begin to look slightly tender at the edges.
- Do not let them brown deeply.

Add garlic and paste
- Stir in the garlic, tomato paste, thyme and pepper.

Toast the barley
- Add the rinsed, drained barley and stir for 1 minute so the grains are coated in the oil and vegetables and smell lightly nutty.

Add liquids
- Pour in the broth and the canned tomatoes with their juices.
- Add the bay leaves and scrape the bottom of the pot with a wooden spoon to release any browned bits.
- Increase the heat to high and bring to a boil, about 5 minutes.

Simmer the barley
- Reduce the heat to medium-low so the soup bubbles gently.
- Cover with the lid slightly ajar and simmer for 35 minutes, stirring every 10 minutes to keep the barley from sticking to the bottom.

Tip: Stir from the bottom; barley settles and scorches easily.
Add green beans
- Stir in the green beans and the remaining ½ teaspoon salt.
- Continue simmering uncovered for 10 to 12 minutes, until the beans are tender-crisp and the barley is fully tender and plump with a pleasantly chewy bite.

Tip: If the soup is thicker than you like, add up to 1 cup (240 ml) hot water or broth.
Finish and season
- Remove the pot from the heat and fish out the bay leaves.
- Stir in the lemon juice and parsley.
- Taste and add more salt or pepper as needed.
- Let the soup rest 5 minutes before serving.

Make ahead
Make the soup up to 3 days ahead and refrigerate. Barley keeps absorbing liquid, so thin with broth or water when reheating, and add the parsley and lemon juice fresh.
Storage & reheating
Room temperature: no more than 2 hours. Refrigerator: up to 4 days in an airtight container. Freezer: up to 3 months; leave 1 inch (2.5 cm) headspace and thaw overnight in the fridge. Reheat in a pot over medium-low heat, stirring often, adding ½ to 1 cup (120–240 ml) water or broth to loosen, until steaming hot.
Substitutions
- pearl barley → farro or brown rice. Farro cooks in about the same time; brown rice may need 5–10 more minutes. Only rice is gluten-free.
- green beans → frozen peas or diced zucchini. Add peas in the last 3 minutes; zucchini in the last 8 minutes.
- dried thyme → Italian seasoning. Use the same amount for a more herbal flavor.
- lemon juice → apple cider vinegar. Use 2 teaspoons in place of 1 tablespoon lemon juice.
