  • Use fresh, pliable 10-inch (25 cm) flour tortillas. Stale or cold, stiff tortillas crack when rolled; warm them for 10 seconds in the microwave wrapped in a damp paper towel if needed.
  • Allow at least 2 hours of chilling (up to overnight) so the rolls firm up and slice cleanly.
  • Shred the cheddar yourself from a block if you can; it melts into the filling less and tastes sharper than pre-shredded.
  1. Mix the filling

    • In a medium bowl, combine the very soft cream cheese, ranch seasoning mix, sliced green onions, shredded cheddar and garlic powder (if using).
    • Stir and press with a rubber spatula for about 2 minutes until completely smooth, evenly speckled and no white cream cheese streaks remain.

Make ahead

Assemble the logs, wrap tightly and refrigerate up to 24 hours before slicing. Slice within 2 to 4 hours of serving for the best look, since cut edges dry out.

Storage & reheating

Keep sliced pinwheels covered in an airtight container in the refrigerator up to 3 days (best within 2). Uncut, wrapped logs keep up to 4 days. Do not leave at room temperature longer than 2 hours (1 hour if above 90°F/32°C). Freezing is not recommended because the tortilla turns soggy and the cream cheese becomes grainy when thawed. No reheating is needed; serve cold.

Substitutions
  • thinly sliced deli ham → thinly sliced deli turkey or roast beef. Use the same weight and pat dry in the same way.
  • dry ranch seasoning mix → 1 tsp dried dill, 1 tsp garlic powder, 1 tsp onion powder, ½ tsp dried parsley and ½ tsp salt. A homemade stand-in for the 2 tablespoons of mix; taste and adjust the salt.
  • sharp cheddar cheese → Colby Jack or Swiss cheese, finely shredded. Milder flavor but works the same.
  • flour tortillas, 10-inch (25 cm) burrito size → spinach or sun-dried tomato flour tortillas. Same size; adds color to the spiral.
