Greek Stifado-Style Potatoes with Pearl Onions
A rustic Greek braise of waxy potatoes and pearl onions in a deep red-wine and tomato sauce, finished with cinnamon and oregano. The low, slow cooking yields tender vegetables and a rich, glossy sauce that clings to every bite—a satisfying side that pairs beautifully with grilled lamb or feta-topped chicken.

Steps
Before you start
- Peel and trim pearl onions no more than 30 minutes before cooking to prevent them from browning or drying
- Choose firm, waxy potatoes (Yukon Gold or similar) that hold their shape during braising
- Have red wine and tomato paste at hand before you begin sautéing
Sauté pearl onions
- Heat olive oil in a large Dutch oven over medium-high heat.
- Once shimmering, add the peeled pearl onions and sauté for 5–6 minutes, stirring occasionally, until they are lightly golden on all sides and slightly softened.
- This caramelization deepens their flavor.
- Transfer the onions to a plate and set aside.

Ready when: Pearl onions are pale golden and tender when pierced
Tip: Don't overcrowd the pan; work in batches if necessary to ensure even browning rather than steaming.
Build the braising sauce
- Add the minced garlic to the pot and cook for 1 minute over medium heat until fragrant, stirring constantly.
- Stir in the tomato paste and cook for another 2 minutes, allowing it to darken slightly and lose its raw taste.
- Pour in the red wine, scraping the bottom of the pot with a wooden spoon to release any browned bits (fond).
- Add the beef stock, bay leaves, oregano, cinnamon, salt, and black pepper.
- Stir well to combine.

Ready when: Sauce is well combined and simmering gently
Tip: Browning the tomato paste removes any metallic taste and adds depth to the final sauce.
Add potatoes and onions
- Stir the potato chunks into the sauce, then nestle the sautéed pearl onions back into the pot, distributing them evenly among the potatoes.
- Add the rosemary sprigs if using.
- Bring the liquid to a gentle simmer over medium heat.

Ready when: Liquid is just beginning to bubble gently around the edges
Tip: Keep the liquid at a gentle simmer, not a rolling boil, so the potatoes cook evenly without breaking apart.
Braise until tender
- Reduce heat to medium-low, cover the pot with its lid, and braise for 35–40 minutes, stirring gently halfway through.
- The potatoes are done when they are completely tender when pierced with a fork and the sauce has reduced and thickened slightly, coating the vegetables with a glossy film.
- The liquid should reduce from approximately 2¼ cups to about 1½ cups.

Ready when: Potatoes are easily pierced with a fork and sauce clings to vegetables, coating them glossily
Tip: Stir gently at the halfway point to ensure even cooking and prevent the bottom from catching. If the sauce is still too thin after 35 minutes, raise the heat slightly and simmer uncovered for 3–5 minutes to reduce further.
Finish and serve
- Remove from heat and taste the sauce.
- Adjust seasoning with additional salt and pepper if needed.
- Fish out and discard the bay leaves and rosemary sprigs.
- Transfer the stifado to a serving dish or individual bowls and serve warm, spooning extra sauce over each portion.
- The dish is best enjoyed immediately while the flavors are vibrant.

Tip: A final drizzle of fresh olive oil and a scatter of chopped fresh parsley or mint elevates the dish before serving.
Good to know
Tips
- Choose a Dutch oven or pot that just holds the ingredients snugly; too much empty space allows the liquid to spread thin and cook off too quickly, while too small a pot causes splashing and uneven cooking.
- For an authentic presentation, leave the pearl onions whole rather than halving them—their glossy, caramelized exterior against the dark wine sauce is visually striking.
- This dish is especially delicious served alongside grilled lamb, roasted chicken, or even cooked white beans for a vegetarian-friendly meal. A dollop of thick Greek yogurt adds creaminess without overwhelming the wine-forward sauce.
- Make the recipe a day ahead: the stifado actually improves as the flavors meld overnight, and the sauce becomes glossier and more cohesive after resting.
Make ahead
Stifado can be made up to 2 days ahead. Cool to room temperature, transfer to an airtight container, and refrigerate. The flavors actually deepen overnight. Reheat gently on the stovetop over medium-low heat, covered, for about 10–12 minutes, stirring occasionally and adding a splash of stock or water if the sauce has thickened too much.
Storage & reheating
Room temperature: up to 2 hours. Refrigerator: up to 3 days in an airtight container. Freezer: up to 2 months. Thaw overnight in the refrigerator and reheat as described above.
Substitutions
- pearl onions (small, about ¾ inch diameter) → Regular yellow onions, halved or cut into large wedges. Pearl onions are traditional in stifado for their sweetness and whole appearance, but regular onions work well if peeled onions are unavailable; increase cooking time to 45–50 minutes for larger pieces.
- dry red wine (such as Xinomavro or Cabernet Sauvignon) → Dry white wine or an additional ½ cup beef stock. Red wine gives the dish its signature deep color and earthiness. White wine will lighten the sauce but still deliver good flavor; additional stock makes a lighter braise.
- Yukon Gold potatoes → Baby potatoes or fingerling potatoes, halved if large. These smaller varieties cook more quickly (reduce braise time to 25–30 minutes) and require less cutting; save the skins for a rustier presentation.
- dried oregano → 2 tsp fresh oregano, or 1 tsp thyme. Fresh oregano is bright and herbaceous; thyme gives a slightly earthier note. If using fresh herbs, add them in the last 5 minutes of cooking to preserve their delicate flavor.
