Steps
Before you start
- Position an oven rack in the center and preheat to 300°F (150°C) before you start mixing.
- Separate the egg white carefully; any yolk will keep it from foaming well. Save the yolk for another use.
- Use large unsweetened coconut flakes (chips), not fine shredded coconut, which burns quickly.
- Plan for 45 minutes of undisturbed cooling at the end. The clusters only harden as the granola cools.
Preheat and line panOven 300°F / 150°C
- Position a rack in the center of the oven and preheat to 300°F (150°C).
- Line a 13×18-inch (33×46 cm) rimmed baking sheet with parchment paper so the granola doesn't stick.

Ready when: Oven reaches 300°F (150°C) and the parchment lies flat on the pan.
Tip: Use a rimmed sheet; the rim keeps clusters from sliding off when you stir.
Mix the dry ingredients
- In a large bowl, stir together the chopped almonds, chopped pecans, sunflower seeds, pumpkin seeds, chia seeds, cinnamon, and salt until the spices are evenly distributed and no clumps of cinnamon remain.
- Keep the coconut flakes aside for later.

Ready when: The mixture looks evenly speckled with cinnamon.
Tip: Chop the nuts to similar sizes so they toast at the same rate.
Whisk the wet binder
- In a medium bowl, whisk the egg white vigorously for about 30 seconds until frothy with a layer of small bubbles on top.
- Whisk in the maple syrup, melted coconut oil, and vanilla until combined.

Ready when: The mixture is frothy and uniform, with no streaks of oil.
Tip: Let the coconut oil cool a few minutes first so it doesn't cook the egg white.
Coat and spread
- Pour the wet mixture over the nut and seed mixture.
- Fold with a spatula for about 1 minute until every piece is glossy and the mixture sticks together when squeezed.
- Scrape onto the lined pan and spread into an even layer about ½ inch (1 cm) thick.
- Press down firmly with the back of the spatula to pack it together.

Ready when: No dry spots remain, and the granola forms a compact, even slab.
Tip: Pressing firmly is what creates big clusters later.
Bake first roundOven 300°F / 150°C
- Bake at 300°F (150°C) for 20 minutes, without stirring, until the edges are lightly golden and the kitchen smells nutty.

Ready when: Edges are pale golden and the surface looks dry, though the center is still slightly soft.
Tip: Don't stir during this stage or the slab won't set into clusters.
Add coconut and re-press
- Remove the pan from the oven.
- Scatter the coconut flakes over the granola and gently fold them in with the spatula, breaking the slab into rough chunks as you go.
- Spread back into an even layer and press down firmly again.

Ready when: Coconut is coated with a little of the sticky syrup and the layer is compact again.
Tip: Coconut is added late because thin flakes burn in a full 32-minute bake.
Finish bakingOven 300°F / 150°C
- Return the pan to the 300°F (150°C) oven and bake 10 to 12 minutes more, checking at 10 minutes.
- The granola is done when the coconut is golden brown at the edges and the nuts look deeply toasted.

Ready when: Coconut flakes are golden brown and the nuts smell toasty; the granola will still feel slightly soft but will crisp as it cools.
Tip: Coconut goes from golden to burnt in under 2 minutes, so watch closely near the end.
Cool undisturbed
- Place the pan on a wire rack or heatproof surface and leave the granola completely untouched for 45 minutes, until it is fully room temperature and hard to the touch.

Ready when: The slab is completely cool and snaps crisply when pressed.
Tip: Stirring or breaking it while warm will give you crumbs instead of clusters.
Break up and store
- Break the cooled granola into clusters of whatever size you like, from nuggets about 1 inch (2.5 cm) to chunky pieces.
- Transfer to an airtight container once completely cool.

Ready when: Clusters are dry and crunchy, with no sticky or chewy spots.
Tip: If any pieces feel chewy, spread them out on the pan for 15 more minutes at room temperature to dry.
Good to know
Tips
- Press the granola into a compact layer both times; this is the key to big clusters.
- Don't skip the cooling time. The granola crisps as the sugars harden, not in the oven.
- Add dried fruit, such as cranberries or chopped apricots, only after baking, since it burns and turns hard in the oven.
- If your oven runs hot, check at 15 minutes into the first bake; nuts and seeds brown quickly.
Make ahead
Granola keeps well, so make it up to 2 weeks ahead. Cool completely before packing so it stays crisp.
Storage & reheating
Room temperature: airtight container for up to 2 weeks. Freezer: up to 3 months in a freezer-safe bag; no thawing needed, or refresh on a baking sheet at 300°F (150°C) for 5 minutes and cool before eating. Refrigeration isn't necessary but extends the life of the nuts a little.
Substitutions
- pure maple syrup → Honey. Works at the same quantity, but it browns faster, so check 2 minutes earlier. Not vegan.
- raw pecan halves → Walnuts or hazelnuts. Use the same weight, chopped to the same size.
- coconut oil → Melted ghee or avocado oil. Use 2 tablespoons (30 ml); avocado oil gives a more neutral flavor.
- large egg white → 3 tablespoons (45 ml) aquafaba. Whisk until foamy, as with the egg white, for a vegan option. Clusters will be slightly less firm.
