Steps
Before you start
- Trim the beans and slice the garlic before you turn on any heat, because the sauté moves quickly.
- Fill a large bowl with ice water for shocking the beans.
- Dry the blanched beans well so the butter sizzles instead of steaming.
- Use a 12-inch skillet so the beans sauté in a mostly single layer.
Prep the beans
- Snap or cut the stem ends off the green beans, leaving the tapered tips if you like.
- Thinly slice the garlic into rounds about ⅛ inch (3 mm) thick.
- Zest the lemon, then juice it.

Tip: Slice garlic rather than mincing it, since slices are much less likely to burn.
Set up ice bath
- Fill a large bowl with the ice and enough cold water to make it float freely.
- Place it beside the stove with a slotted spoon.
Boil the water
- Pour the water into a large pot, add the 2 tablespoons kosher salt, and bring to a full rolling boil over high heat.

Blanch the beans
- Add the green beans to the boiling water and cook for 3 to 4 minutes, stirring once, until bright green and just tender when bitten but still snappy.

Tip: Start tasting at 3 minutes; thick beans may need up to 4½.
Shock and dry
- Use the slotted spoon to move the beans straight into the ice bath.
- Chill for 1 minute, then drain well and pat thoroughly dry on a clean towel.

Start garlic butter
- Set a 12-inch skillet over medium heat.
- Add the olive oil and butter.
- When the butter has melted and stops foaming, add the sliced garlic and the red pepper flakes if using.
- Stir constantly for 45 to 60 seconds.

Ready when: Garlic smells fragrant and is pale golden at the edges.
Tip: If the garlic darkens past golden brown it turns bitter. Pull the pan off the heat if it browns too fast.
Sauté the beans
- Increase the heat to medium-high and add the dry green beans.
- Toss with tongs to coat in the garlic butter.
- Cook for 3 to 4 minutes, tossing every 30 seconds or so, until the beans are hot through and a few have blistered spots.

Ready when: Beans are steaming hot, glossy, and lightly blistered in spots.
Tip: Don't overcrowd the pan. If your skillet is smaller, sauté in two batches.
Season and finish

- Add the lemon zest, lemon juice, ¼ teaspoon kosher salt, and several grinds of black pepper.
- Toss for 15 seconds, then taste and add more salt if needed.

- For firmer beans, shorten blanching by 30 seconds; for softer, more traditional beans, extend it by 1 minute.
Make ahead
"Blanch, shock, dry, and refrigerate the beans up to 2 days ahead in a covered container lined with a paper towel. Sauté with the garlic butter just before serving."
Storage & reheating
"Room temperature: up to 2 hours. Refrigerator: airtight up to 3 days. Reheat in a skillet over medium heat for 2 to 3 minutes, adding a splash of water if dry. Freezing is not recommended because the beans turn soft."
Substitutions
- unsalted butter → extra olive oil (4 tablespoons / 60 ml total). Makes the dish dairy-free; the flavor is less rich.
- fresh green beans → haricots verts. Thinner, so blanch only 2 to 3 minutes.
- fresh lemon juice → white wine vinegar. Use 2 teaspoons; skip the zest or use orange zest.
- red pepper flakes → toasted sliced almonds. Add ¼ cup (30 g) at the end for crunch.
