Steps

Before you start
  • Boil the eggs 20 minutes ahead and set aside in cool water
  • Preheat the oven to 350°F (175°C)
  • Measure all spices before you begin; dum cooking is sealed, so you cannot adjust mid-way
  • Have a 4-quart (3.8 L) heavy-bottomed pot or 9×9-inch (23×23 cm) Dutch oven ready with a tight-fitting lid
  1. Steep saffron

    • Place the saffron threads in a small bowl and pour the warm milk over them.
    • Let sit for 10 minutes so the threads soften and release their color and flavor into the milk.

Ready when: Saffron threads have softened and milk has taken on a golden hue

  2. Caramelize onions

    • Heat 4 tablespoons (60 ml) of ghee in a large skillet over medium-high heat.
    • Add the sliced onions and cook for 12–15 minutes, stirring frequently, until the onions are deep golden brown and crispy at the edges.
    • This step develops the sweet, nutty flavor essential to biryani.
    • Transfer to paper towels with a slotted spoon to drain excess ghee.
    • Reserve the remaining ghee in the pan.

Ready when: Onions are deep golden brown with crispy edges

Tip: Do not rush this step; golden onions transform the biryani's flavor. Stir occasionally to prevent burning on the bottom.

  3. Marinate eggs

    • In a medium bowl, whisk together the yogurt, ginger-garlic paste, green chiles, half the cilantro, mint, black pepper, and salt until smooth.
    • Gently nestle the egg halves in the marinade, coating them lightly.
    • This marination adds flavor and richness to the eggs.

Ready when: Eggs are evenly coated with yogurt mixture

Tip: Handle the eggs gently to avoid cracking the delicate yolk.

  4. Boil rice

    • Bring 3.5 cups (840 ml) of water to a boil in a medium saucepan.
    • Add 1.5 teaspoons (9 g) of salt, the black cardamom pods, green cardamom pods, cinnamon stick pieces, bay leaf, and cloves.
    • Once the water returns to a boil, add the rinsed rice and stir once.
    • Cook for 5 minutes at a rolling boil until the rice is 70% cooked (just starting to soften but still firm in the center).
    • The rice will finish cooking in the dum phase.
    • Drain in a colander.

Ready when: Rice is 70% cooked: grains are starting to soften but still have a firm center

Tip: Do not overcook at this stage; the rice finishes in the sealed dum step, so undercooking now prevents mushy grains.

  5. Layer the biryani potOven 350°F / 175°C

    • Preheat oven to 350°F (175°C).
    • In your 4-quart heavy pot or Dutch oven, spread one-third of the partially cooked rice evenly on the bottom.
    • Top with half of the egg-yogurt mixture (about 4 egg halves), spreading the yogurt across the rice.
    • Sprinkle one-third of the caramelized onions over the eggs.
    • Repeat: another third of rice, remaining eggs and yogurt, another third of caramelized onions.
    • Top with the final third of rice, smoothing it gently with the back of a spoon.
    • Pour the saffron-milk mixture evenly over the top layer of rice.
    • Drizzle the remaining 1 tablespoon (15 ml) of ghee over the surface.
    • Sprinkle the remaining cilantro on top.

Ready when: Pot is ready for sealing with clear layers visible

Tip: Do not stir the layers; keep them distinct so the flavors remain layered rather than mixed.

  6. Seal and dum cookOven 350°F / 175°C

    • Place the pot on the stovetop over high heat for 2 minutes to bring the bottom to a simmer (you will hear a gentle sizzle).
    • This jump-starts the cooking.
    • Cover the pot with aluminum foil, pressing the edges firmly against the pot sides, then place the tight-fitting lid on top, pressing down firmly.
    • Transfer the sealed pot to the preheated 350°F (175°C) oven.
    • Bake for 45 minutes.
    • Do not open the lid—the steam trapped inside cooks the rice and eggs gently and evenly.
    • The sealed environment (dum pukht) ensures the rice stays fluffy and absorbs all the spice flavors.
    + Show details

Ready when: Biryani has rested in the sealed pot; steam inside has cooked the rice fully

Tip: Resist the urge to open the lid during cooking. The seal is crucial—if it breaks, the steam escapes and the rice may dry out. If using a pot without a very snug lid, reinforce the seal with foil.

  7. Rest and serve

    • Remove the pot from the oven and let it rest, still sealed, for 5 minutes off the heat.
    • This allows the steam to redistribute and the flavors to fully meld.
    • Carefully remove the lid and foil, releasing the fragrant steam.
    • Using a fork, gently fluff the rice, breaking up any clumps and mixing the layers lightly to distribute the eggs and onions throughout.
    • Taste and adjust salt if needed.
    • Serve hot, garnished with any remaining caramelized onions and fresh cilantro.
    + Show details

Ready when: Rice is fluffy, grains are separate, and eggs are soft-boiled with creamy yolks

Tip: Use a fork to fluff, not a spoon—spoons can crush the grains. The eggs should still have slightly creamy centers; if cooked longer than 6 minutes originally, the yolk will be firmer.

Good to know

Tips
  • The quality of saffron matters greatly: genuine saffron threads are deep crimson and have a complex, warm aroma. Avoid bright red imposters or powdered versions that may be adulterated.
  • Dum cooking requires a truly sealed pot. If your lid is loose or warped, reinforce the seal with a double layer of aluminum foil to prevent steam from escaping.
  • Boil eggs for exactly 6 minutes for a soft, creamy yolk. If you prefer a firmer yolk, boil for 7–8 minutes, but the soft yolk is traditional in egg biryani for its richness.
  • Caramelizing onions properly takes time and patience. Rushing this step results in pale onions and a less flavorful biryani. Low-and-slow is the secret.
Make ahead

You can marinate the eggs in yogurt mixture up to 4 hours ahead and refrigerate. Boil and peel eggs up to 1 day ahead. You can also caramelize the onions up to 2 hours ahead and store them in an airtight container at room temperature. Assemble and cook the biryani just before serving for the best flavor and texture.

Storage & reheating

Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat gently in a covered pot over low heat with a splash of water, stirring occasionally, for about 8 minutes, or microwave a portion in a covered dish for 2 minutes, stirring halfway through. Biryani does not freeze well due to the eggs and yogurt; consume fresh or refrigerated.

Substitutions
  • ghee → unsalted butter or vegetable oil. Ghee provides a rich, nutty flavor and crisps the onions beautifully. Butter works but will brown slightly differently; oil will yield a lighter result.
  • plain whole-milk yogurt → cashew cream (soak 0.5 cup cashews in warm water for 30 minutes, then blend smooth with 0.25 cup water). Cashew cream adds richness and creaminess without the tanginess of yogurt, creating a richer biryani.
  • basmati rice → jasmine rice or long-grain white rice. Basmati has the ideal length and fragrance for biryani, but jasmine or long-grain rice will work; jasmine adds a subtle floral note.
  • green chiles, fresh → jalapeños or 0.25 teaspoon cayenne pepper. Green chiles provide mild heat and fresh flavor. Cayenne is much hotter and more one-dimensional; use sparingly if substituting.
