- Makes
- About 2 cups (480 ml) dip; serves 6 as an appetizer
Steps
Before you start
- Dice zucchini into ¼-inch pieces so it cooks evenly and quickly
- Crumble feta cheese into ¼-inch pieces to distribute throughout the dip
- Have all ingredients prepped and ready before you start cooking (mise en place)
- Preheat your serving bowl or keep it warm on the stovetop so the dip stays hot
Sauté aromatics
- Heat 3 tablespoons (45 ml) olive oil in a large 12-inch skillet over medium heat.
- Add the diced onion and cook for 3–4 minutes, stirring occasionally, until softened and starting to turn translucent.
- Add the minced garlic and cook for 30 seconds more, just until fragrant.
- Do not let garlic brown.

Ready when: Onion is soft and slightly translucent; garlic is fragrant
Tip: Mincing garlic finely and cooking it briefly prevents a harsh or burned flavor that overpowers the dip.
Cook zucchini down
- Add all the diced zucchini (about 4 cups, 680 g) to the skillet and stir to combine with the oil and aromatics.
- Cook over medium heat, stirring occasionally, for 12–14 minutes.
- The zucchini will first release liquid, then reabsorb it as it softens and begins to break down slightly.
- Once the pieces are very tender and the liquid has mostly evaporated, the zucchini is ready.

Ready when: Zucchini is very tender, broken down in places, with most liquid evaporated
Tip: Stir every few minutes to prevent sticking; do not cover the pan or moisture will steam the zucchini instead of evaporating.
Fold in feta and herbs
- Remove the skillet from heat.
- Gently fold in the crumbled feta cheese (6 oz, 170 g), fresh dill (3 tablespoons, 9 g), lemon zest, and lemon juice (about 2–3 tablespoons or 30–45 ml, depending on lemon size).
- Stir gently until the feta begins to soften from residual heat but does not fully melt; some crumbles should remain visible for texture.

Ready when: Feta is partially softened and distributed throughout; dill and lemon are evenly mixed
Tip: Remove from heat before adding feta so it softens gently; stirring off-heat keeps the feta in small, creamy pieces rather than turning the dip uniform and heavy.
Season to taste
- Taste the dip.
- Season with ½ teaspoon (3 g) kosher salt and black pepper to taste.
- If desired, add a pinch of red pepper flakes (about ¼ teaspoon, 0.5 g) for subtle heat.
- Stir gently and taste again, adjusting as needed.
- Remember that feta is already salty, so taste before adding extra salt.

Ready when: Flavor is balanced: bright from lemon, savory from feta, herbal from dill
Tip: Taste as you go; feta varies in saltiness by brand, so you may need less salt than the recipe suggests.
Rest and serve
- Let the dip rest in the skillet for 2–5 minutes off heat, allowing flavors to meld.
- Transfer to a warm serving bowl or leave in the skillet on a trivet.
- Serve warm with pita chips, crusty bread, or fresh vegetables (bell peppers, cucumber, celery, or cherry tomatoes).

Ready when: Dip is warm and flavors are cohesive
Tip: Serve the dip warm for best flavor and texture; cold feta will harden and become less creamy.

Tips
- For a smoother dip, pulse 1 cup (240 ml) of the cooked zucchini mixture in a food processor until chunky, then stir back into the skillet before adding feta. This creates a creamier texture while preserving some texture contrast.
- If you don't have fresh dill, use 1 tablespoon (3 g) fresh mint or parsley, or ½ teaspoon (0.5 g) dried dill (but fresh is much better here).
- Feta quality matters: use creamy, full-fat feta packed in brine for the best result. Pre-crumbled feta often contains added starch and will not integrate as well.
- This dip can be made even more budget-friendly by substituting half the feta with Greek yogurt or a mix of ricotta and a bit of yogurt, though the flavor will be less sharp and creamy.
Make ahead
Prepare the dip up to 3 hours ahead. Cool completely, cover, and refrigerate. Reheat gently in a small saucepan over medium-low heat, stirring occasionally, for 5–8 minutes until warm through. Do not boil or the feta will separate.
Storage & reheating
Store in an airtight container in the refrigerator for up to 3 days. The dip will thicken as it cools due to the feta. Reheat gently over medium-low heat or in a microwave (30-second intervals, stirring between) until warm. Not recommended for freezing, as the zucchini texture degrades and feta becomes grainy upon thawing.
Substitutions
- crumbled feta cheese, full-fat → Crumbled goat cheese or ricotta salata. Goat cheese will be tangier; ricotta salata is milder and firmer. Use the same weight. Both work well with the lemon and dill.
- fresh dill → Fresh mint or flat-leaf parsley. Mint will add a cooler, more refreshing note; parsley is more neutral. Use the same amount and chop finely.
- medium zucchini, unpeeled → Yellow summer squash or a mix of zucchini and summer squash. Yellow squash has a slightly milder, sweeter flavor but cooks in the same time. Use the same total weight.
- fresh lemon → Fresh lime juice. Lime will shift the flavor profile slightly, adding brightness with a different citrus note. Use the same amount of juice; omit zest or add lime zest instead.
