Steps

Before you start
  • Preheat oven to 425°F (220°C)
  • Wash and zest 2 lemons before cutting them in half
  • Bring ricotta to room temperature for 5–10 minutes if using cold dip
  1. Prepare and roast asparagusOven 425°F / 220°C

    • Toss asparagus spears and unpeeled garlic cloves with 2 tbsp (30 ml) olive oil.
    • Season generously with kosher salt and black pepper.
    • Spread in a single layer on an 18×13-inch sheet pan.
    • Roast at 425°F (220°C) for 12–15 minutes, shaking the pan halfway through.
    • Asparagus should be tender with lightly caramelized tips, and garlic should be soft when pierced with a fork.

Ready when: Asparagus is bright green with lightly browned tips; garlic cloves yield easily to a fork

Tip: Don't crowd the pan—spread asparagus in a single layer so it roasts rather than steams

  2. Crisp the lemon zest

    • While asparagus roasts, heat 2 tbsp (30 ml) olive oil in a small skillet over medium heat.
    • Add 1 tbsp (3.5 g) of the lemon zest and cook, stirring constantly, for 1–2 minutes until the zest becomes fragrant and turns golden-brown but not burnt.
    • Pour the mixture (zest and oil) into a small dish and let cool for 1 minute.

Ready when: Lemon zest is golden and fragrant; oil is infused with lemon flavor

Tip: Watch the zest closely—it can burn quickly. If it darkens, start fresh as burnt zest will taste bitter

  3. Remove garlic and cool briefly

    • Remove the roasted asparagus and garlic from the oven.
    • Once the garlic cloves are cool enough to handle (about 1 minute), squeeze the soft garlic from its skin into a small bowl.
    • Discard skins.

Ready when: Garlic is easily squeezed from its papery skin

Tip: Cool garlic slightly so your fingers don't burn, but work while it's still warm so it squeezes out easily

  4. Blend the dip

    • Place ricotta, roasted garlic, 2 tbsp (30 ml) lemon juice, and remaining 0.5 tbsp (1.5 g) lemon zest into a food processor.
    • Pulse until smooth and creamy, about 30–45 seconds.
    • Taste and adjust seasoning with kosher salt and black pepper.
    • If the dip seems too thick, add 1–2 tbsp (15–30 ml) water to loosen it slightly.
    • Transfer to a serving bowl.
    + Show details

Ready when: Dip is smooth and spreadable, with no visible lumps of ricotta

Tip: Don't overprocess—you want a creamy, rustic texture, not completely smooth like a mousse

  5. Assemble and serve

    • Arrange roasted asparagus on a serving platter.
    • Spoon the ricotta dip into a small bowl and drizzle generously with the crispy lemon zest and its infused oil.
    • Sprinkle with red pepper flakes if using.
    • Serve immediately while asparagus is still warm.

Ready when: Platter is ready for serving

Tip: Serve this dish warm or at room temperature, but eat it within 20 minutes so the asparagus stays crisp-tender

Good to know

Tips
  • For a more herbaceous dip, stir in 1 tbsp fresh basil or flat-leaf parsley before serving.
  • If your ricotta is very cold, bring it to room temperature before blending—cold ricotta will result in a lumpy dip.
  • The crispy lemon zest oil is the star of the plate. Don't skip it, but prepare it last so it stays warm and fragrant.
  • Roast the asparagus and garlic on the same pan to save cleanup and let the garlic infuse the asparagus with its flavor.
Make ahead

The dip can be blended up to 4 hours ahead and refrigerated, covered. Bring to room temperature 10 minutes before serving. Roast the asparagus fresh just before serving for best texture and flavor.

Storage & reheating

Leftover dip: refrigerate in an airtight container for up to 3 days. Leftover roasted asparagus: refrigerate for up to 2 days and serve cold or reheat gently in a 300°F (150°C) oven for 5 minutes. Do not freeze either component.

Substitutions
  • whole milk ricotta cheese, creamy → Greek yogurt or labneh. Use 3/4 cup (170 g) Greek yogurt to match the dip's creaminess. The result will be slightly tangier but equally delicious.
  • fresh asparagus spears, medium thickness → Broccolini or thin green beans. Roast for the same time at 425°F. Broccolini will char nicely; green beans may need 1–2 extra minutes.
  • fresh lemon juice → White wine vinegar. Use 1.5 tbsp (22.5 ml) for a slightly more acidic note. Adjust to taste.
  • red pepper flakes → Smoked paprika. Use 0.25 tsp for a smoky warmth instead of heat. Add to the dip before blending.
