Steps

Before you start
  • Read the full recipe to understand the timeline (marinating is 2-24 hours, most of the total time).
  • If using frozen drumsticks, thaw them in the refrigerator 24 hours ahead.
  • Have a meat thermometer on hand for accurate doneness checking.
  • Preheat the oven to 400°F when you're ready to begin cooking the marinated chicken.
  1. Mix the marinade base

    • Whisk together the olive oil, minced garlic, lemon juice, kosher salt, and black pepper in a large bowl until well combined.
    • Strip the rosemary and thyme leaves from their stems, discarding the stems, and add the leaves to the bowl.
    • Stir well.
    • If using red pepper flakes, add them now for a gentle kick of heat.

Ready when: Marinade is evenly combined with herbs distributed throughout

Tip: Don't chop the herbs too finely; whole or roughly torn leaves add better texture and more complex flavor to the finished dish

  2. Coat chicken with marinade

    • Pat the chicken drumsticks dry with paper towels, ensuring they're as dry as possible.
    • Add them to the bowl with the marinade and toss thoroughly with tongs or by hand, ensuring each drumstick is well coated on all sides, including the underside.

Ready when: All drumsticks are evenly coated with marinade and herbs cling to the skin

Tip: Pat the chicken very dry before coating; moisture prevents the marinade from adhering and will prevent the skin from crisping nicely when cooked

  3. Marinate the drumsticks

    • Transfer the chicken and all the marinade to a 9×13-inch (23×33 cm) baking dish or large resealable plastic bag.
    • Cover the dish with plastic wrap or seal the bag, and refrigerate for at least 2 hours (minimum), or preferably overnight (8-24 hours).
    • If marinating in a dish, turn the drumsticks halfway through marinating so all sides are evenly flavored.

Tip: Overnight marinating (8-24 hours) yields the best flavor; even a minimum 2-hour marinate adds wonderful herbaceous taste. The longer you marinate, the more tender and flavorful the chicken becomes

  4. Bring to room temperature

    • Remove the drumsticks from the refrigerator 15 minutes before you plan to start cooking.
    • Let them sit uncovered on the counter at room temperature.
    • This helps them cook more evenly throughout, preventing the outside from overcooked while the interior stays cool.

Tip: This step is short but important; it ensures the drumsticks cook through evenly without the skin getting overly dark

  5. Sear skin until crispyOven 400°F / 205°C

    • Preheat the oven to 400°F (200°C).
    • Heat the large oven-safe skillet over medium-high heat until very hot, about 2 minutes.
    • Using tongs, remove the drumsticks from the marinade (pour excess marinade back into the dish to reserve it) and place them skin-side down in the hot skillet.
    • Do not move them for 6-7 minutes until the skin is deeply golden brown and crispy, with rendered fat pooling at the bottom.
    • If the drumsticks don't all fit in one layer without crowding, work in two batches.
    • The skin should be visibly caramelized and stick slightly to the pan.

Ready when: Skin is deeply golden brown and crispy; fat has rendered and pooled at the bottom of the pan

Tip: Resist the urge to move or shake the chicken; letting it sit undisturbed creates a better crust and more flavorful skin. A larger skillet means fewer batches needed

  6. Roast until cooked throughOven 400°F / 205°C

    • Flip the drumsticks skin-side up.
    • Pour the reserved marinade from the dish over the chicken in the skillet, distributing the herbs and garlic evenly.
    • Transfer the skillet to the preheated 400°F (200°C) oven and roast for 25-30 minutes until a meat thermometer inserted into the thickest part of the largest drumstick (without touching bone) reads 165°F (74°C).
    • The chicken should be cooked through and the pan sauce bubbling gently at the edges.

Ready when: Meat thermometer reads 165°F (74°C) in the thickest part without touching bone; juices run clear when pierced

Tip: Use a meat thermometer for accuracy; don't rely on color or piercing alone, as the marinade herbs can make the juices appear darker than expected

  7. Rest and serve

    • Remove the skillet from the oven.
    • Let the drumsticks rest in the skillet for 5 minutes; this allows the juices to redistribute throughout the meat, keeping it moist and tender.
    • Transfer the chicken to a serving platter and spoon the pan sauce (with herbs and garlic) over the top.
    • Serve immediately while hot.

Tip: Don't skip the resting period; it makes a noticeable difference in how juicy and tender the drumsticks are

Good to know

Tips
  • For the crispiest skin, pat the drumsticks very dry before marinating. The drier they are at the start, the better the skin crisps when seared.
  • Don't skip the searing step. While it adds 12 minutes of cooking time, it creates a deeply flavorful, caramelized crust that isn't achievable by roasting alone.
  • Use fresh herbs whenever possible. They add a brightness and complexity that dried herbs, while good, cannot fully replicate.
  • Overnight marinating (8-24 hours) is worth the planning. The longer the marinade sits, the more tender and deeply flavored the chicken becomes.
Make ahead

You can marinate the drumsticks up to 24 hours ahead; the flavor actually improves with overnight marinating. After marinating, store covered in the refrigerator. Cook when ready—the recipe can be completed in about 40 minutes of active and oven time. You can also partially prepare ahead by making the marinade the night before and marinating the chicken the next day.

Storage & reheating

Cooked drumsticks will keep in an airtight container in the refrigerator for 3-4 days. Reheat in a 350°F (175°C) oven for 10-15 minutes until warmed through. You can also freeze cooked drumsticks for up to 3 months; thaw overnight in the refrigerator and reheat as above. Raw marinated chicken can be frozen for up to 2 months; thaw in the refrigerator and cook as directed.

Substitutions
  • fresh rosemary sprigs → dried rosemary (use 1 to 1.5 teaspoons instead of fresh sprigs). Dried herbs are significantly more concentrated in flavor; use about one-third to one-half the fresh amount. The result will be very flavorful but slightly less delicate
  • fresh thyme sprigs → dried thyme (use 1 to 1.5 teaspoons instead of fresh sprigs). Same ratio as rosemary; dried thyme is potent. Start with the lower amount and adjust to taste
  • fresh lemon juice → lime juice or white wine vinegar (same amount). Both provide the same acidic brightness. Lime adds a tropical note; vinegar is more pungent. Adjust to taste if needed
  • chicken drumsticks → bone-in, skin-on chicken thighs, breasts, or a mix (3-4 lbs total). Thighs are more forgiving and stay juicy; breasts dry out more easily. Adjust searing and oven time based on size—larger pieces may need 5-10 extra minutes in the oven
