Steps
Before you start
- Chill the mixing bowl and beaters in the freezer for 15 minutes before whipping cream
- Pit the dates if using whole dates
- Have parchment paper ready to line your baking sheets
- Remove pistachios from their shells if using unshelled ones
Whip rose water cream
- Pour the cold heavy cream into the chilled mixing bowl.
- Using an electric mixer on medium-high speed, beat for 1–2 minutes until soft peaks form.
- Add the powdered sugar, rose water, vanilla extract, and a pinch of salt.
- Continue beating for another 30–45 seconds until stiff peaks form and the mixture is fluffy and pale.
- Do not overmix or the cream will turn to butter.

Ready when: Cream holds stiff peaks when beaters are lifted
Tip: Chilling the bowl and beaters ensures the cream whips faster and holds its shape better
Make pistachio-date filling
- In a food processor, combine the unsalted pistachios, pitted Medjool dates, melted ghee, ground cardamom, and a small pinch of salt.
- Pulse 8–10 times, then process continuously for 30–45 seconds until the mixture is finely chopped and crumbly but holds together when pressed.
- The texture should be grainy but cohesive, not smooth.
- Transfer to a shallow bowl and set aside.

Ready when: Mixture is finely chopped and holds together when squeezed, resembling wet sand
Tip: Don't overprocess or the natural oils from the pistachios will make the filling too paste-like; you want some texture
Fill and roll
- Line a 9×13-inch baking sheet with parchment paper.
- Place a dollop of rose water cream (about 1½ tablespoons or 22 ml) in your palm.
- Press 1 tablespoon (12 g) of the pistachio-date filling firmly into the center of the cream.
- Gently roll and press the cream around the filling to form a log about 3 inches (7.5 cm) long and ¾ inch (2 cm) thick.
- Place seam-side down on the prepared baking sheet.
- Repeat with the remaining cream and filling to make 12 rolls, arranging them in a single layer with ½ inch (1 cm) space between each.

Ready when: All 12 rolls are formed and evenly spaced on the baking sheet
Tip: Keep your hands clean and slightly moist by dipping them in cool water to prevent the cream from sticking; work quickly so the cream stays cold
Chill and set
- Transfer the baking sheet to the freezer for 2 hours (or until the rolls are completely firm and no longer sticky to the touch).
- If preparing ahead, you can freeze the rolls for up to 1 week covered with parchment and sealed in a freezer container.

Ready when: Rolls are completely firm and do not yield to gentle pressure
Tip: Freezing is essential; the rolls must be firm enough to hold their shape and prevent the filling from leaking when served
Finish and serve
- Remove the rolls from the freezer 2–3 minutes before serving.
- If using garnish, pour the finely chopped pistachios into a shallow dish.
- Roll each chilled roll in the chopped pistachios to coat evenly, or simply dust with edible gold leaf if desired.
- Arrange on a serving platter and enjoy immediately.

Tip: Serve rolls within 5 minutes of removing from the freezer while they're still firm but just beginning to soften slightly, which creates the best creamy texture
Good to know
Tips
- For an elegant presentation, dust each roll lightly with edible gold leaf just before serving—it catches the light beautifully and is very festive for Eid celebrations
- If the rose water cream begins to soften while you're rolling, return the bowl to the freezer for 5 minutes to re-firm it
- These rolls are excellent served alongside strong Arabic coffee (qahwa) or mint tea—the floral and nutty flavors complement each other perfectly
- For variety, you can add a small pinch of saffron threads (soaked in 1 tablespoon warm water) to the cream before whipping for a regal golden hue and subtle earthy note
Make ahead
Prepare the rolls up to 1 week ahead and store in the freezer in a sealed container between parchment layers. You can also whip the cream and make the filling 1 day ahead, then assemble and freeze the rolls when ready.
Storage & reheating
Room temperature: Not recommended; these rolls must stay frozen. Refrigerator: Not suitable; the cream will soften and the texture will degrade. Freezer: Up to 2 weeks in a sealed container, separated by parchment paper. To serve, remove from freezer 2–3 minutes before eating for the best texture—soft cream center with a gently firm exterior.
Substitutions
- rose water → Orange blossom water (1 teaspoon / 5 ml) or almond extract (½ teaspoon / 2.5 ml). Orange blossom water gives a floral, citrusy note; almond extract provides a subtle nuttiness that pairs beautifully with pistachios
- Medjool dates, pitted → Deglet Noor dates (1 cup / 150 g) or dried figs (¾ cup / 120 g), chopped. Deglet Noor dates are less sweet; figs add a different floral complexity. Adjust by mixing with dates if using figs to maintain balance
- ghee → Unsalted butter, melted (2 tablespoons / 30 ml) or coconut oil (2 tablespoons / 30 ml). Butter is a direct swap; coconut oil adds a subtle tropical note that complements the pistachios
- ground cardamom → Ground cinnamon (¼ teaspoon / 0.5 g) or ⅛ teaspoon ground clove (0.25 g). Cinnamon brightens the flavor; clove adds warmth and depth. Use sparingly as clove is potent
