Steps

Before you start
  • Have cream cheese at room temperature for easy mixing
  • Dry the apricots gently with paper towels if they are sticky
  • Measure all ingredients before you begin assembling
  • Chill the yogurt until serving time
  1. Prepare the apricots

    • Pat the dried apricots gently with paper towels if they feel sticky.
    • Lay them flat on a cutting board.
    • Using a small sharp knife, cut each apricot in half lengthwise, removing the pit if still present.
    • You should have 24 apricot halves.
    • Set them aside on a clean plate.

Ready when: All apricots are halved and pitted

Tip: Choose plump, moist apricots for easier splitting; over-dried ones may crack. Work gently to keep halves intact.

  2. Make the pistachio filling

    • In a small bowl, combine the softened cream cheese, finely ground pistachios, rose water, powdered sugar, honey, and a pinch of salt.
    • Using a fork, mix until smooth and well blended, about 1–2 minutes.
    • The filling should be creamy and hold together slightly.

Ready when: Filling is smooth, creamy, and well combined

Tip: Don't overmix or the cream cheese will become grainy. Stir just until combined.

  3. Fill the apricots

    • Spoon a small amount of filling (about ½ tsp) onto the flat side of each apricot half.
    • You can use a small spoon or transfer the filling to a piping bag fitted with a small round tip for neater presentation.
    • Press the filling gently into the center of each apricot, creating a slight dome.
    • Arrange the stuffed apricots on a serving platter.

Ready when: All 24 apricots are filled and arranged

Tip: If the filling is too soft to pipe, refrigerate it for 10 minutes. Don't overfill or the fruit will split.

  4. Plate with yogurt and garnish

    • Divide the cold Greek yogurt among serving bowls or arrange dollops on a platter.
    • Nestle 2–4 stuffed apricots next to the yogurt.
    • Sprinkle with the coarsely chopped pistachios and, if using, top with a small piece of edible gold leaf for festive shimmer.
    • Serve immediately.

Ready when: Dish is plated and ready to serve

Tip: Handle edible gold leaf with tweezers or clean fingers—it is delicate and sticks easily. Add it just before serving so it doesn't dissolve into the yogurt.

Good to know

Tips
  • Rose water is potent—start with 1 tbsp and taste before adding more. You can always add a few extra drops, but you cannot remove it.
  • For a less sweet filling, reduce the powdered sugar to 1 tbsp and omit the honey; the apricots provide plenty of natural sweetness.
  • Toast the pistachios yourself at 350°F (175°C) for 10 minutes to deepen their flavor, then cool and grind them finely.
  • Edible gold leaf is entirely decorative and edible—it adds visual elegance for Eid and special celebrations but is not essential.
Make ahead

The pistachio filling can be made 1 day ahead and refrigerated in an airtight container. Fill the apricots up to 4 hours before serving and keep them covered in the fridge; they will soften slightly but remain delicious. Assemble and garnish only just before serving.

Storage & reheating

Store assembled apricots in an airtight container in the refrigerator for up to 3 days. The filling and yogurt should stay fresh and creamy. Do not freeze, as the texture of the apricots will become mushy once thawed. The unfilled apricots will keep in the pantry for several weeks in a sealed container.

Substitutions
  • Plain Greek yogurt (full-fat or 2%) → Labneh (strained yogurt) or thick plain yogurt. Labneh is richer and more luxurious; use the same amount. Plain yogurt will be thinner—serve in smaller portions.
  • Rose water (food-grade) → Orange blossom water or 1 tsp finely grated lemon zest. Orange blossom water is also traditional in Persian desserts. Lemon zest will brighten the filling instead of floral perfume.
  • Roasted unsalted pistachios → Finely ground walnuts or almonds. Walnuts will add earthiness; almonds are milder. Use the same amount; flavor and color will differ.
  • Cream cheese, full-fat → Mascarpone or softened ricotta. Mascarpone is richer and tangier; ricotta is lighter. Both work equally well at the same amount.
