Steps
Before you start
- Have all ingredients at room temperature except the cream, which should be cold
- If using fresh pomegranates, halve and seed them 30 minutes ahead
- Preheat your oven to 400°F (200°C) if charring pomegranate seeds
- Set out a medium bowl for whipping cream
Char the pomegranate seedsOven 400°F / 205°C
- Place 1 cup (150 g) of pomegranate seeds on a baking sheet or cast-iron skillet.
- Spread in a single layer and toast in a 400°F (200°C) oven for 6–8 minutes, shaking halfway through.
- The seeds should begin to split and char slightly at the edges.
- Remove and let cool for 5 minutes.
- They will become slightly shriveled and concentrated in flavor.

Ready when: Seeds split slightly, edges begin to char, and they shrivel
Tip: Watch carefully so seeds don't burn; they should still be juicy inside
Whip the cream
- In a medium bowl, whip the cold heavy cream with a whisk or hand mixer on medium-high speed for 2–3 minutes until soft peaks form.
- The cream should be light and fluffy but still hold its shape.
- Do not overbeat or it will turn to butter.

Ready when: Cream forms soft peaks that hold briefly before collapsing
Tip: Keep cream cold until the last moment; warm cream takes much longer to whip
Blend the base
- In a blender or food processor, combine Greek yogurt, remaining ½ cup (75 g) fresh pomegranate seeds, pomegranate molasses, honey, and ¾ cup (105 g) of the chopped pistachios.
- Blend until smooth and bright pink, about 1–2 minutes.
- Scrape down the sides as needed.
- The mixture should be creamy with no large pistachio pieces remaining.

Ready when: Mixture is smooth, bright pink, and uniform in color
Tip: Don't overblend or the pistachios will become too fine and the dip may darken
Season the mixture
- Transfer the blended mixture to a medium bowl.
- Taste and season generously with kosher salt and freshly cracked black pepper.
- Start with ½ teaspoon salt and adjust to your preference; the dip should be well-seasoned to balance the cream and tartness.

Ready when: Dip tastes balanced between tart, sweet, and savory
Tip: Taste as you season; pomegranate molasses is already salty and tart
Fold in the whipped cream
- Using a rubber spatula, gently fold the whipped cream into the pomegranate-pistachio mixture in two additions.
- Fold until no white streaks remain and the dip is light pink and fluffy, about 1 minute.
- Do not stir aggressively or you will deflate the cream.

Ready when: No white streaks visible; dip is light and airy throughout
Tip: Use a gentle folding motion from bottom to top, rotating the bowl, to preserve airiness
Assemble and garnish
- Transfer the dip to a shallow serving bowl or platter.
- Top with the charred pomegranate seeds, sprinkle with the remaining ¼ cup (35 g) chopped pistachios, and dust lightly with sumac powder if using.
- The charred seeds should sink slightly into the dip while remaining visible on top.

Ready when: Toppings are evenly distributed and garnish is attractive
Tip: Add garnishes just before serving so the charred seeds stay crunchy and distinct

Tips
- This dip is best served the same day it's assembled, while the charred pomegranate seeds are still crunchy and the whipped cream is at its fluffiest. As it sits, the dip will become softer and the seeds will lose their texture.
- Charring the pomegranate seeds concentrates their flavor and creates a sophisticated smoky-tart note that sets this dip apart. Don't skip this step if you want the true Eid celebration version.
- For a dairy-free version, replace the Greek yogurt with silken tofu blended smooth, and use whipped coconut cream instead of heavy cream; the texture will be lighter but still delicious.
- This dip pairs beautifully with warm Lebanese flatbread, crispy pita chips, or crudités. It's also excellent dolloped on grilled vegetables or served alongside kebabs at Eid celebrations.
Make ahead
The blended yogurt-pistachio base can be made up to 2 days ahead and refrigerated in a covered container. The whipped cream and charred pomegranate seeds should be prepared no more than 4 hours before serving. Fold together and garnish 15 minutes before serving.
Storage & reheating
Store the assembled dip in an airtight container in the refrigerator for up to 2 days. The dip will lose its fluffiness as the cream settles and the charred seeds soften. For longer storage, keep the blended base separate from the whipped cream and charred seeds for up to 5 days. Do not freeze, as the texture will become grainy. Serve chilled with flatbread, crackers, or fresh vegetables.
Substitutions
- full-fat Greek yogurt → 1 cup (240 ml) labneh (strained yogurt) or mascarpone. Labneh will make the dip tangier and more authentic; mascarpone will make it richer. Adjust pomegranate molasses slightly if using mascarpone.
- roasted unsalted pistachios → raw pistachios, lightly toasted in a dry pan for 3–4 minutes and cooled before chopping. Fresh-toasted pistachios will have a more delicate, subtle flavor than pre-roasted. Toast just before use to preserve crunch.
- pomegranate molasses → 3 tablespoons pomegranate juice reduced with 1 teaspoon lemon juice and 1 teaspoon sugar simmered until syrupy (about 5 minutes). Homemade reduction will be less concentrated; start with 2 tablespoons and adjust to taste. The tang will be slightly different.
- sumac powder → lemon zest or a pinch of dried mint for garnish. Sumac provides color and tangy flavor; lemon zest adds brightness, and mint adds herbaceous notes. Use either if sumac is unavailable.
