Steps

Before you start
  • Preheat oven to 400°F (200°C)
  • Line a baking sheet with parchment paper or foil for easy cleanup
  • Have all spices measured and ready before you begin
  • Allow roasted sweet potatoes to cool for 10 minutes before blending
  1. Roast sweet potatoesOven 400°F / 205°C

    • Preheat oven to 400°F (200°C).
    • Pierce each sweet potato several times with a fork to allow steam to escape.
    • Rub lightly with the 2 tablespoons olive oil and place directly on a baking sheet.
    • Roast for 35–40 minutes, until the skin is slightly charred and the flesh yields easily to a fork.
    • The potatoes should be very soft inside.

Ready when: Sweet potatoes are very soft inside when pierced with a fork and skin is lightly charred

Tip: Don't skip the pricking step—it prevents the sweet potatoes from bursting and helps them cook evenly.

  2. Cool and scoop flesh

    • Remove the baking sheet from the oven and let the sweet potatoes rest for 10 minutes.
    • Once cool enough to handle, slice each potato in half lengthwise.
    • Scoop the soft flesh away from the skin using a spoon, discarding the skin.
    • You should have about 1½ cups (375 g) of cooked sweet potato flesh.

Ready when: Sweet potatoes are cool enough to handle but still warm

Tip: Cooling briefly makes scooping easier and prevents the dip from becoming too warm before blending.

  3. Blend sweet potato base

    • Place the cooked sweet potato flesh into a food processor or blender.
    • Add the cold heavy cream and room-temperature Greek yogurt.
    • Blend on medium speed for 2–3 minutes, stopping to scrape down the sides as needed, until the mixture is completely smooth and creamy with no lumps.

Ready when: Mixture is completely smooth and creamy

Tip: Using cold cream and room-temperature yogurt balances texture; cold cream aids blending, while yogurt at room temperature mixes in more easily.

  4. Add rose water and spices

    • Add the rose water, cinnamon, cardamom, nutmeg, and honey to the blended sweet potato mixture.
    • Pulse the food processor 4–5 times, then blend on low speed for 30 seconds until the spices and rose water are fully incorporated and the color is even.
    • The dip should smell floral and warm.

Ready when: Rose water, honey, and spices are evenly mixed throughout

Tip: Start with 1 tablespoon rose water and blend gently—rose water is potent. You can add a little more (½ teaspoon at a time) if you prefer a stronger floral note.

  5. Taste and season

    • Transfer the dip to a bowl.
    • Taste and add sea salt, starting with ¼ teaspoon and adjusting by pinches until the flavors brighten and the sweetness is balanced.
    • The dip should taste warm and subtly floral, not overly sweet.

Ready when: Flavors are balanced and salt enhances sweetness and spices

Tip: Season conservatively—you can always add more salt, but you cannot take it out. A pinch of salt makes the rose water and cinnamon shine.

  6. Garnish and serve

    • Transfer the dip to a serving bowl.
    • Arrange the chopped pistachios in a ring or pile on top.
    • If using pomegranate seeds, scatter them over the pistachios for color and brightness.
    • Optionally dust with edible rose petals and drizzle with a thin stream of finishing olive oil.
    • Serve warm or at room temperature with pita bread, flatbreads, or fresh vegetables such as cucumber slices and carrot sticks.

Ready when: Dip is beautifully garnished and ready to serve

Tip: Arrange the pistachios and pomegranate seeds just before serving to keep them from sinking into the dip and to maintain visual appeal.

Good to know

Tips
  • Rose water varies widely in strength and quality. Start with 1 tablespoon and taste before adding more. A little goes a long way—too much will taste perfume-like and overwhelm the other flavors.
  • For an Eid celebration, arrange the dip on a platter with an array of warm flatbreads, fresh vegetable crudités, and small bowls of olives and nuts around it for a festive spread.
  • If your sweet potatoes are very large, weigh them to ensure you're using about 500 g total; this keeps the dip proportions consistent.
  • This dip is delicious served warm straight from the food processor, at room temperature after an hour of resting, or chilled. Choose based on the occasion and weather.
Make ahead

You can roast the sweet potatoes and store them (wrapped in foil, unpeeled) in the refrigerator for up to 3 days. Scoop the flesh and prepare the dip up to 1 day ahead (without garnish), then cover and refrigerate. Bring to room temperature or gently reheat in a small pot over low heat before serving, stirring in an extra splash of cream if needed. Do not garnish until just before serving.

Storage & reheating

Room temperature: Keep the dip covered for up to 2 hours before serving. Refrigerator: Store in an airtight container for up to 4 days. To serve cold, let it soften at room temperature for 15 minutes before plating. Freezer: Freeze the dip (without garnish) in an airtight container or freezer bag for up to 3 months. Thaw overnight in the refrigerator and stir in a splash of fresh cream before serving to restore creaminess.

Substitutions
  • heavy cream, cold → Coconut cream or full-fat sour cream. Use the same amount. Sour cream adds tangy brightness; coconut cream lends richness but will mute the floral notes slightly.
  • Greek yogurt, full-fat → Labneh (strained yogurt) or mascarpone. Use the same amount. Labneh adds mild tang; mascarpone makes the dip richer and less tangy.
  • raw honey → Maple syrup or agave nectar. Use the same amount. Each brings a different sweetness profile—maple is deeper, agave is more neutral.
  • roasted unsalted pistachios → Roasted almonds, walnuts, or pine nuts. Use the same amount, roughly chopped. Almonds are milder; walnuts are earthier; pine nuts add buttery elegance.
