Steps
Before you start
- Rinse the basmati rice under cold running water until the water runs mostly clear (this removes excess starch and prevents stickiness)
- Peel the cardamom pods by gently crushing them with the side of a knife and removing the black seeds; discard the green husks
- Slice the almonds lengthwise into thin slivers
- Have all ingredients measured and ready before starting the rice cooker
Toast the almonds and raisins
- Heat 2 tablespoons (30 g) of ghee in a small skillet over medium heat.
- Once shimmering, add the sliced almonds and cook, stirring often, for 2–3 minutes until they turn light golden brown and smell fragrant.
- Add the raisins (if using) and stir for 1 minute more until they plump slightly.
- Transfer to a small bowl and set aside.

Ready when: Almonds are light golden brown and fragrant
Tip: Watch carefully so the almonds don't burn; they brown quickly once they start coloring.
Prepare the rice cooker
- Add the rinsed and drained basmati rice to the rice cooker.
- Pour in the whole milk and water.
- Add the remaining 2 tablespoons (30 g) ghee, crushed cardamom seeds, salt, and sugar (if using).
- If using saffron, steep the strands in 2 tablespoons of hot milk for 1 minute, then stir the saffron milk into the rice cooker.
- Stir everything together gently with a wooden spoon until the ingredients are evenly distributed.

Ready when: All ingredients are evenly mixed
Tip: The ratio of liquid to rice (3 cups total to 2 cups rice) is slightly higher than plain rice to account for the milk, which cooks more gently than water.
Cook the rice
- Cover the rice cooker and press the cook button.
- Allow the rice to cook undisturbed until the rice cooker switches to warm mode (typically 20–25 minutes).
- Do not open the lid during cooking.

Ready when: Rice cooker switches to warm mode and steam stops escaping
Tip: Resist the urge to peek; opening the lid releases steam and affects cooking time.
Rest and fluff the rice
- Let the rice rest in the warm rice cooker for 10 minutes.
- This allows any remaining moisture to distribute evenly and the grains to firm up slightly.
- Open the lid carefully (steam will be hot) and fluff the rice gently with a wooden spoon or fork, breaking up any clumps.

Ready when: Rice grains are separate and fluffy; no condensation on the lid
Tip: Use a light hand when fluffing so you don't crush the delicate grains.
Finish with fried almonds
- Gently fold the toasted almonds and raisins into the fluffy rice using a wooden spoon, combining gently so the grains stay separate.
- Transfer to a serving platter or bowl.
- Reserve a few toasted almonds to scatter on top as garnish if desired.

Ready when: Almonds are evenly distributed throughout the rice
Tip: Fold rather than stir to preserve the delicate texture of the cooked rice and keep the grains from breaking apart.

Tips
- For extra richness and a traditional touch, drizzle the finished rice with 1 additional tablespoon of melted ghee before serving.
- If your rice cooker runs hot, check the rice at the 20-minute mark; it may be done before the cooker switches off.
- This dish is naturally celebratory but can be made vegan by substituting coconut milk for whole milk and using neutral oil instead of ghee; the flavor will shift slightly but remains delicious.
- Cardamom flavor builds and intensifies as the rice sits; the dish actually tastes better 1–2 hours after cooking, making it ideal for preparing ahead on celebration days.
Make ahead
Prepare the rice up to 4 hours ahead: cook and fluff as directed, then keep it covered on the rice cooker's warm setting. Toast the almonds and raisins up to 1 day ahead and store in an airtight container at room temperature; fold them in just before serving for the best texture and flavor.
Storage & reheating
Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat by placing in a rice cooker with 2–3 tablespoons of water, covering, and warming for 5–10 minutes, or microwave in a covered dish with a splash of milk, stirring halfway through, for 2–3 minutes. The rice does not freeze well due to the milk base; it becomes grainy when thawed.
Substitutions
- ghee (clarified butter) → unsalted butter. Ghee has a richer, more authentic flavor, but butter works and should be clarified or the milk solids will affect the rice's appearance.
- whole almonds (raw or blanched) → cashews, roughly chopped or halved. Cashews provide a similar richness and texture; fry them the same way until golden.
- golden raisins → dried cranberries or dried apricots, chopped. These add tartness and chewiness; use the same amount and fry briefly as directed.
- saffron strands → a pinch of turmeric. Turmeric adds color and subtle earthiness but lacks saffron's floral notes; use about ¼ teaspoon.
