Egg and Sausage Breakfast Wrap
A hearty, handheld breakfast wrap loaded with seasoned sausage, fluffy scrambled eggs, melted cheddar cheese, and sautéed bell peppers and onions, all wrapped in a warm flour tortilla. Perfect for busy mornings or meal prep.
Steps
Before you start
- Have all ingredients prepped and within arm's reach before you start cooking
- Warm the tortillas in the oven or on the skillet just before assembling
- Use a nonstick skillet or well-seasoned cast iron to prevent sticking
Brown the sausage
- Heat the 10-inch nonstick skillet over medium-high heat.
- Add the ground breakfast sausage and cook, breaking it into small crumbles with a wooden spatula as it cooks, for 6–8 minutes, until no longer pink and any fat has rendered.
- Drain off excess fat into a small bowl, leaving about 1 tablespoon in the pan.
- Transfer the cooked sausage to a plate and set aside.

Ready when: Sausage is crumbly and no longer pink inside
Tip: Don't press the sausage; let it rest briefly between stirs so it browns instead of steaming.
Sauté vegetables
- In the same skillet with the reserved sausage fat, add the diced bell pepper and onion.
- Cook over medium heat, stirring occasionally, for 4–5 minutes, until the vegetables are softened and beginning to caramelize at the edges.
- Return the cooked sausage to the skillet and stir to combine.

Ready when: Vegetables are tender and lightly browned at the edges
Tip: Cut vegetables into uniform ¼-inch pieces so they cook evenly.
Prepare the eggs
- While the vegetables cook, crack all 8 eggs into a medium bowl.
- Whisk them with a fork until well combined and slightly frothy, about 1 minute.
- Season generously with salt and freshly ground black pepper.
- Set aside.

Tip: Whisking the eggs thoroughly ensures they cook evenly and stay fluffy.
Scramble the eggs
- Push the sausage and vegetable mixture to the sides of the skillet, leaving the center open.
- Add the 2 tablespoons of butter to the center and let it melt over medium heat for 30 seconds.
- Pour the whisked eggs into the center of the skillet and let them sit undisturbed for 20 seconds.
- Then, using a wooden spatula, gently push the eggs from the edges toward the center, folding them over the filling, for 4–5 minutes, stirring slowly and constantly.

Ready when: Eggs are just set and creamy, with no visible raw liquid
Tip: Remove the skillet from heat while the eggs are still very slightly wet; they will finish cooking from residual heat and stay tender.
Add cheese
- Sprinkle the shredded cheddar cheese over the egg mixture.
- Remove the skillet from heat and let it sit for 1 minute, allowing the cheese to melt slightly.

Ready when: Cheese is mostly melted and slightly gooey
Warm the tortillas
- While the cheese melts, warm the 4 flour tortillas.
- You can either wrap them in a damp paper towel and microwave for 30 seconds, or warm them one at a time on the warm skillet for 10 seconds per side.
- Keep them stacked and covered with a clean kitchen towel to stay warm.

Ready when: Tortillas are warm and pliable
Tip: Warm tortillas are less likely to tear when you fill and roll them.
Assemble the wraps
- Lay one warm tortilla on a clean work surface.
- Spoon one-quarter of the egg, sausage, and vegetable mixture onto the lower third of the tortilla, leaving a 1-inch border on the sides.
- Do not overfill.
- If desired, add a drizzle of hot sauce.
- Fold the left and right sides of the tortilla over the filling, then roll up from the bottom, tucking the filling as you go, until the wrap is closed and the seam is on the bottom.
- Repeat with the remaining tortillas and filling.

Ready when: All 4 wraps are tightly rolled and seam is sealed
Tip: Don't overstuff the wraps, or the filling will spill out when you bite into them. Divide the filling into 4 equal portions.
Rest and serve
- Let the assembled wraps rest, seam-side down, on a plate for 2–3 minutes so they hold together.
- Serve warm, optionally with extra hot sauce on the side for drizzling.

Good to know
Tips
- Cook the sausage in batches if your skillet is crowded; overcrowding causes steaming instead of browning and reduces flavor.
- For extra moisture, add 2–3 tablespoons of salsa or pico de gallo to each wrap before rolling.
- If you prefer crisper vegetables, cook them for 1 minute longer before adding the sausage back in.
- Serve wraps immediately after assembling for the best texture; the cheese will continue to soften the tortilla as it cools.
Make ahead
You can prep and dice the bell pepper and onion up to 2 days ahead; store them in separate airtight containers in the refrigerator. The cooked sausage and egg filling can be made up to 4 hours ahead, refrigerated in an airtight container, and reheated gently on the stovetop or in the microwave (30 seconds at a time, stirring between intervals) just before assembling.
Storage & reheating
Store leftover filled wraps wrapped individually in foil and refrigerated in an airtight container for up to 3 days. To reheat, wrap each wrap in a damp paper towel and microwave for 45–60 seconds, or unwrap and warm in a dry skillet over low heat for 2–3 minutes per side. Do not freeze filled wraps as the tortilla becomes tough; instead, freeze the filling and tortillas separately for up to 2 months.
Substitutions
- bulk breakfast sausage → Ground turkey or lean ground beef. Use the same weight; turkey will be leaner with slightly less fat to drain. Cook time remains the same.
- red bell pepper → Green bell pepper or a mix of red and green. Red peppers are slightly sweeter; green peppers are more grassy. Either works well.
- sharp cheddar cheese, shredded → Monterey Jack, Colby, or pepper jack cheese. Monterey Jack is milder; pepper jack adds heat. Use the same weight and shred before adding.
- large flour tortillas (10-inch / 25 cm) → Whole wheat or spinach flour tortillas. These work equally well; adjust warming time slightly if they are thicker.
