Tip: Whisking the spices into the acidic lime juice blooms their flavors and prevents grittiness
Emulsify with oil
- While whisking constantly, drizzle in the olive oil in a slow, steady stream.
- Continue whisking until the vinaigrette becomes slightly thicker and the oil is fully incorporated.

Good to know
Tips
- Toast the spices dry (without oil) to unlock deeper, more complex flavors rather than using ground spices straight from the jar.
- The vinaigrette will naturally separate as it sits—this is normal. A quick whisk before serving recombines it and refreshes the texture.
- Use this dressing on grain bowls, roasted vegetable salads, or alongside grilled chicken and fish. It pairs beautifully with black beans, corn, and avocado.
- For a creamier texture, whisk in 1 tablespoon of crema, sour cream, or Greek yogurt at the end.
Make ahead
Prepare up to 2 days ahead and store in a covered jar in the refrigerator. The flavors deepen slightly as it sits. Shake or whisk before each use, as the dressing will separate over time.
Storage & reheating
Room temperature: Not recommended (oil spoils quickly). Refrigerator: Up to 5 days in a covered jar or bottle. Shake or whisk before serving. Freezer: Not recommended (oil becomes unstable when frozen).
Substitutions
- fresh lime juice → fresh lemon juice. Use equal amounts. Lemon will be slightly less aromatic but still bright and acidic.
- chili powder (preferably ancho or a mild blend) → cayenne pepper or a pinch of dried chipotle powder. Reduce cayenne to ¼ teaspoon as it is much hotter. Chipotle adds smokiness and works well with cumin.
- honey → agave nectar or light brown sugar (dissolved first). Use the same amount. Honey adds a subtle floral sweetness that balances heat and acid.
- extra-virgin olive oil → avocado oil or walnut oil. Both have milder flavors that won't compete with the spices. Use equal amounts.
