Steps

Before you start
  • Preheat oven to 425°F (220°C)
  • Wash and cut potatoes into 1-inch chunks (do this just before tossing to prevent browning)
  • Have all seasonings and lime juice measured and ready
  1. Toast cumin seeds

    • Heat a small skillet over medium heat.
    • Add cumin seeds and toast for 1–2 minutes, stirring often, until fragrant and lightly browned.
    • Transfer to a small bowl and lightly crush with the back of a spoon (you want some texture, not powder).
    • This blooms the flavor and adds depth.

Ready when: Seeds are fragrant and lightly darkened

Tip: Toasting whole cumin intensifies its warmth and prevents a raw spice taste in the final dish

  2. Toss potatoes with oil and seasonings

    • In a large bowl, combine the cut potatoes, olive oil, toasted cumin seeds, salt, pepper, minced garlic, and lime zest (if using).
    • Toss until every piece is evenly coated.
    • The potatoes should glisten with oil.

Ready when: All potatoes are evenly coated with oil and spices

Tip: Coat potatoes just before roasting to prevent the salt from drawing out moisture and making them soggy

  3. Spread on sheet pan and roastOven 425°F / 220°C

    • Spread the potatoes in a single layer on the sheet pan, spacing them so they're not crowded (this allows them to crisp, not steam).
    • Roast at 425°F (220°C) for 22–25 minutes, stirring once at the halfway point, until the edges are golden brown and crispy and the interiors are fork-tender.

Ready when: Edges are deep golden brown, cut potato is easily pierced with a fork

Tip: Don't crowd the pan—if potatoes overlap too much, they'll steam instead of roast and won't get crispy

  4. Finish with lime juice and cilantro

    • Remove the pan from the oven and immediately drizzle the fresh lime juice over the hot potatoes.
    • Scatter the chopped cilantro on top and gently toss to combine.
    • Taste and add a pinch more salt or lime juice if needed.

Ready when: Cilantro is evenly distributed, potatoes are glossy from lime juice

Tip: Add the lime juice while potatoes are still hot so the acid brightens the flavors and the heat prevents cilantro from turning dark

Tips
  • Use waxy potatoes (Yukon Gold, red, or fingerling) rather than starchy varieties—they hold their shape and get crispy without becoming mealy.
  • Don't skip toasting the cumin seeds; it makes a noticeable difference in depth and complexity, turning a simple side into a flavorful one.
  • Stir the potatoes halfway through roasting to ensure even browning on all sides.
  • Serve these warm or at room temperature; they're excellent as a make-ahead side for a dinner party.
Make ahead

Potatoes can be cut up to 4 hours ahead and stored in a bowl of cold water (this prevents browning). Drain and pat dry just before tossing with oil and seasonings.

Storage & reheating

Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat in a 350°F (175°C) oven for 10 minutes, or warm gently on the stovetop with a splash of water to restore crispness. Not recommended for freezing.

Substitutions
  • fresh cilantro → fresh flat-leaf parsley or a mix of parsley and mint. Cilantro has a distinct flavor; if you dislike it, parsley keeps the brightness without the distinctive taste. Mint adds a different but complementary herbal note.
  • fresh lime juice → fresh lemon juice. Lemon works well and is often more readily available, though it's slightly less vibrant than lime in this Latin American context.
  • waxy potatoes (such as Yukon Gold or red potatoes) → new potatoes or small fingerling potatoes, left whole or halved. These have similar waxy texture and won't fall apart. Adjust roasting time slightly based on size (smaller pieces will cook faster).
  • cumin seeds → ground cumin (use ½ tsp). Ground cumin is more convenient, but toast it briefly with the potatoes and seasonings to bloom its flavor. Use half the amount since it's more concentrated.
