Crispy Tofu Bites with Soy-Ginger Dip

Golden-baked tofu cubes with a crunchy panko coating, served alongside a vibrant soy-ginger dipping sauce. This simple, protein-packed Asian-inspired appetizer is naturally vegetarian, comes together quickly, and is perfect for parties or snacking. The key to crispy tofu is proper pressing to remove moisture, then a three-stage coating that bakes up golden and crunchy.

Steps

Before you start
  • Press the firm tofu for 15–20 minutes to remove excess moisture—this is essential for crispiness and can be done while prepping other ingredients.
  • Preheat your oven to 400°F (200°C) before you begin coating.
  • Line a baking sheet with parchment paper.
  • Have all ingredients measured and within reach—the coating process moves quickly.
  1. Press and cut tofu

    • Pat the firm tofu dry with paper towels.
    • Place it on a clean kitchen towel, fold the towel around it, and weight it down with a heavy plate, baking dish, or cast-iron skillet for 15–20 minutes to remove excess moisture.
    • (If you have a tofu press, follow its instructions.) Once pressed, unwrap and cut the tofu into 1-inch cubes on a cutting board.
    • You should have about 24–28 cubes.

Ready when: Tofu is firm, and no water drips when you pick up a cube

Tip: Pressing is non-negotiable for crispiness—do not skip this step, or the tofu will steam instead of crisp in the oven.

  2. Brief soy-ginger marinade

    • In a medium mixing bowl, combine 2 tbsp of the soy sauce with 1.5 tbsp of the minced fresh ginger.
    • Add the pressed tofu cubes and gently toss to coat evenly.
    • Let sit for 2–3 minutes while you set up the coating station.

Ready when: Tofu is evenly coated with the soy-ginger mixture

  3. Preheat oven and prep coatingsOven 400°F / 205°C

    • If not already done, preheat your oven to 400°F (200°C).
    • Line a 9×13-inch (23×33 cm) baking sheet with parchment paper.
    • Arrange three shallow bowls or plates in a row for the coating station.
    • Pour the 1/4 cup rice flour into the first bowl.
    • Whisk the 2 beaten eggs in the second bowl.
    • In the third bowl, combine the 1/2 cup panko breadcrumbs with 1/4 tsp salt, 1/8 tsp white pepper, 1 minced garlic clove, and 1 tbsp of the sesame oil.
    • Stir the panko mixture until the oil is evenly distributed and the crumbs are slightly moistened.

Tip: Pre-coating the panko with sesame oil helps the tofu brown more evenly and creates a crispier, more flavorful crust.

  4. Coat tofu in three stages

    • Working with one tofu cube at a time, roll it in the rice flour to coat lightly, then shake off excess flour.
    • Dip it into the beaten egg, allowing excess to drip back into the bowl.
    • Finally, press it gently into the panko mixture, turning to coat all sides.
    • Place the coated cube on the prepared baking sheet, spacing each about 1 inch apart.
    • Repeat with all remaining tofu cubes until they are all coated and arranged on the sheet.

Ready when: All tofu cubes are fully coated on all sides and spaced evenly on the baking sheet

Tip: Don't crowd the pan—spacing them at least 1 inch apart allows hot air to circulate and crisp all sides evenly.

  5. Bake until golden and crispyOven 400°F / 205°C

    • Place the baking sheet in the preheated 400°F (200°C) oven.
    • Bake for 18–22 minutes, stirring gently and shaking the pan halfway through (about 10 minutes in) to ensure even browning.
    • The tofu is done when the panko coating is deep golden brown and feels crispy to the touch.

Ready when: Panko coating is deep golden brown and crispy when touched with a fork

Tip: Stir halfway through baking to prevent uneven browning on the bottom of the tofu.

  6. Make soy-ginger dip

    • While the tofu bakes, whisk together in a small bowl the remaining 3 tbsp soy sauce, remaining 1 tbsp minced fresh ginger, remaining 1 tbsp sesame oil, 1 tbsp rice vinegar, and 1 tsp sugar.
    • Whisk until the sugar dissolves completely.
    • Taste and adjust seasonings if needed—add more soy for saltiness, more vinegar for tang, or more sugar for sweetness.

Ready when: Sugar is fully dissolved and dip is smooth, glossy, and evenly combined

  7. Cool and serve

    • Remove the baking sheet from the oven.
    • Let the tofu bites cool on the sheet for 3–5 minutes—they will firm up and crisp further as they cool.
    • Transfer them to a serving platter.
    • Scatter or drizzle the sliced scallions and sesame seeds (if using) over the top or arrange around the plate for garnish.
    • Pour the dip into a small serving bowl and place it alongside the tofu.
    • Serve warm.

Tip: Let them cool for a few minutes—they are extremely hot straight from the oven and will burn your mouth.

Tips
  • Pressing tofu is non-negotiable. Use a dedicated tofu press or weight down with a heavy plate and paper towels for 15–20 minutes to remove water that would otherwise cause steaming instead of crisping.
  • For extra-crispy bites with a more tender interior, lightly spray the coated tofu with cooking spray before baking.
  • Serve the tofu bites immediately after cooling slightly for maximum crispiness. If making ahead, reheat in a 350°F oven for 5–8 minutes before serving.
  • This recipe doubles easily—simply use two baking sheets and bake on separate racks in the oven, rotating the sheets halfway through for even cooking.
Make ahead

The firm tofu can be pressed and cut up to 1 day ahead and stored in an airtight container in the refrigerator. The soy-ginger dip can be made up to 2 days ahead. The baked tofu bites are best served fresh but can be stored in an airtight container in the refrigerator for up to 3 days and reheated in a 350°F (175°C) oven for 8–10 minutes until warm and crispy.

Storage & reheating

Uncooked prepared tofu (after pressing and cutting): room temperature up to 2 hours (loosely covered), refrigerator in an airtight container up to 1 day. Cooked tofu bites: room temperature on a plate (uncovered or loosely covered) up to 2 hours for best crispiness, refrigerator in an airtight container up to 3 days (reheat in a 350°F oven for 8–10 minutes). Dip: refrigerator in an airtight container up to 4 days.

Substitutions
  • Panko breadcrumbs → Crushed cornflakes, regular breadcrumbs, or panko flour. Regular breadcrumbs and crushed cornflakes will be slightly less crispy and less golden but still delicious. Use the same volume (1/2 cup).
  • Rice flour → Cornstarch or all-purpose flour. Cornstarch yields an even crispier, more delicate crust. All-purpose flour works well too. Use the same amount (1/4 cup).
  • Rice vinegar → White vinegar, unseasoned rice vinegar, white wine vinegar, or fresh lime juice. Adjusts the brightness and tang slightly but works equally well in the dip.
  • Fresh ginger → Ground ginger powder: use 1/2 tsp per 1 tbsp fresh ginger. Ground ginger is less bright and peppery but is convenient if fresh ginger is unavailable. For this recipe, use 1/4 tsp ground ginger for the tofu and 1/2 tsp for the dip.
