
Air Fryer Crispy Tofu Bites with Garlic-Soy Dip
Golden, crunchy-edged tofu cubes marinated in soy, garlic and toasted sesame oil, coated in a thin cornstarch crust and air fried with very little oil. Serve them as a snack, a rice-bowl topper or a party bite with a tangy dipping sauce.

Steps
Before you start
- Use extra-firm (or super-firm) tofu. Soft, medium or silken tofu will crumble and won't crisp.
- Timing: 20 minutes pressing, then 10 minutes marinating, then 14 minutes of air frying. Pressing must finish before you marinate. You make the dipping sauce and preheat the air fryer while the tofu marinates.
- This recipe is sized for a 5–6 quart (4.7–5.7 L) basket-style air fryer. The cubes must fit in a single layer with a little space between them. Cook in two batches in a smaller machine, adding about 5 minutes total.
- Cornstarch is what makes the crust crisp. Don't swap in flour.
Press the tofu
- Drain the tofu and wrap the block in a clean kitchen towel or several layers of paper towels.
- Set it on a plate or cutting board and put a heavy skillet on top, with a couple of full cans inside for extra weight.
- Press for 20 minutes, replacing the towel once if it becomes soaked.

Ready when: The block feels noticeably firmer and the towel is damp, with only a little water still coming out when you squeeze gently.
Tip: Don't skip pressing. Wet tofu turns rubbery in the air fryer, not crisp.
Cut and marinate
- Unwrap the tofu, pat the surface dry and cut the block into ¾-inch (2 cm) cubes.
- You should get about 40 cubes.
- Put the cubes in a medium bowl and add 1 tablespoon (15 ml) soy sauce, the sesame oil, minced garlic and black pepper.
- Toss gently with a spatula so you don't break the corners.
- Let it sit for 10 minutes, and make the dip and preheat the air fryer (next two steps) during this time.

Ready when: The cubes look evenly glossy and slightly tan, with minced garlic clinging to them and a thin film of liquid in the bowl.
Tip: Cut the cubes the same size so they brown at the same rate.
Mix the dipping sauce
- While the tofu marinates, stir 1 tablespoon (15 ml) soy sauce, the rice vinegar and maple syrup together in a small bowl until the syrup dissolves.
- Stir in the sliced scallion and sesame seeds if using.
- Set aside.

Ready when: The sauce looks uniform with no syrup streaks at the bottom of the bowl.
Preheat the air fryerOven 400°F / 205°C
- During the last 3 minutes of marinating, set the air fryer to 400°F (200°C) and preheat with the empty basket inside, so the tofu starts sizzling as soon as it goes in.

Ready when: The preheat cycle finishes, or the machine has run for 3 minutes at 400°F (200°C).
Tip: Some models have no preheat setting. Just run them empty at 400°F (200°C) for 3 minutes. This overlaps the marinating time and isn't counted in the cook time.
Drain and coat
- Tilt the bowl and spoon or pour off any marinade pooled at the bottom, leaving the cubes damp but not dripping.
- Sprinkle half of the cornstarch over the cubes and fold gently with a spatula, then add the rest and fold again.
- The coating will look thin, damp and slightly pasty, which is normal.
- Drizzle the neutral oil over the cubes and toss gently once so any dry white patches are absorbed.

Ready when: Every cube looks matte and evenly coated, with no loose dry cornstarch left in the bottom of the bowl.
Tip: Don't leave the coated cubes sitting. Air fry right away so the coating doesn't turn gummy.
Air fry first roundOven 400°F / 205°C
- Lightly brush or spray the air fryer basket with oil if it isn't nonstick.
- Tip in the tofu and spread it into a single layer with a little space between the cubes.
- Air fry at 400°F (200°C) for 8 minutes.
- At the 4-minute mark, pull out the basket and shake it firmly or turn the cubes with tongs.

Ready when: The cubes are pale golden, the coating feels dry and the edges have started to harden.
Tip: Crowded tofu steams. If cubes overlap more than a little, cook in two batches.
Crisp until goldenOven 400°F / 205°C
- Shake the basket again and return it to the air fryer.
- Cook at 400°F (200°C) for 6 more minutes, checking at 5 minutes.
- The bites are done when they are deep golden brown and rattle slightly when you shake the basket.

Ready when: Deep golden brown all over, with firm, crunchy edges that feel hard when tapped with tongs.
Tip: Garlic and soy can darken fast. If any cubes look dark brown before the others, move them to a plate and keep cooking the rest.
Serve right away
- Tip the hot tofu bites onto a plate or bowl and serve immediately with the dipping sauce.
- For a main dish, spoon them over steamed rice or a salad with vegetables, and drizzle with a little of the sauce.

Ready when: The bites are crackly-crisp outside and tender and creamy inside when you bite into one.
Tip: Serve within 10 minutes. The crust softens as steam from the inside moves outward.
Good to know
Tips
- Tear or cut the tofu into slightly uneven pieces if you like extra crunch. The craggy edges brown more.
- Shake the basket firmly partway through, so the cubes cook evenly and don't stick together.
- For a spicy version, add ¼ teaspoon chili flakes or 1 teaspoon sriracha to the marinade.
- Air fryers vary in power. Start checking 2 minutes early the first time you make this.
Make ahead
Press, cube and marinate the tofu up to 8 hours ahead and keep it covered in the fridge. Drain, then add the cornstarch and oil just before air frying. The dipping sauce keeps in the fridge for up to 3 days, with the scallion added fresh.
Storage & reheating
Room temperature: up to 2 hours, uncovered or loosely covered. Fridge: cool completely, then store in an airtight container for up to 4 days. Freezer: not recommended, since thawed tofu turns spongy. To reheat, air fry at 375°F (190°C) for 3–5 minutes, shaking once, until hot and crisp again. Do not microwave, which makes the crust soft.
Substitutions
- soy sauce → tamari or coconut aminos. Tamari keeps the recipe gluten-free (check the label). Coconut aminos are sweeter and less salty, so add a pinch of salt.
- cornstarch → arrowroot powder or potato starch. Use the same amount. The crust will be equally crisp.
- maple syrup → honey or agave. Honey isn't vegan. Use agave or maple syrup to keep the recipe vegan.
- unseasoned rice vinegar → fresh lime juice. Gives a sharper, brighter dip. Use the same amount.
