Steps
Before you start
- Pat the chicken very dry with paper towels; this is the key to a crisp crust.
- Set up a breading station with three shallow dishes (flour, egg, panko) before you touch the chicken.
- Have the sauce, wraps, and vegetables ready so you can assemble right after frying; crispy chicken softens quickly once sauced.
- Use a wide skillet (12-inch/30 cm) with sides at least 2 inches (5 cm) tall so the tenders fry in one layer and the 1¼ cups of oil sit safely below the rim.
Season the chicken
- Pat the tenders very dry with paper towels.
- Place in a large bowl and toss with the kosher salt, black pepper, garlic powder, and smoked paprika until evenly coated.

Ready when: Every piece has a light, even dusting of spices.
Tip: Dry chicken is essential; surface moisture makes the coating slide off.
Set up breading station
- Put the flour in one shallow dish, the eggs beaten with 1 tablespoon water in a second, and the panko in a third.
- Set a wire rack over a baking sheet at the end of the line.

Tip: Use one hand for dry and the other for wet ingredients to avoid clumpy fingers.
Bread the tenders
- Dredge each tender in flour and shake off the excess.
- Dip in the egg, letting excess drip off, then press firmly into the panko, coating all sides.
- Place on the rack.
- Rest for 10 minutes so the coating sets.

Ready when: Panko looks evenly coated with no bare patches.
Tip: Press the panko on firmly with your palm for the crunchiest crust.
Heat the oil
- Pour the 1¼ cups (300 ml) oil into the 12-inch skillet; it should form a layer about ¼ inch (6 mm) deep.
- Heat over medium-high until it reaches 350°F (175°C), about 4 minutes.
- If you have no thermometer, a panko crumb dropped in should sizzle steadily right away.

Ready when: Oil shimmers and registers 350°F (175°C).
Tip: If the oil smokes, lower the heat; if it is too cool the breading turns greasy.
Pan-fry in batches
- Fry half the tenders in a single layer, not touching, for 3 to 4 minutes per side, flipping once with tongs.
- Move to a clean wire rack.
- Repeat with the remaining tenders, letting the oil come back to 350°F (175°C) between batches.

Ready when: Crust is deep golden brown and the thickest tender reads 165°F (74°C).
Tip: Crowding drops the oil temperature and makes the crust soggy.
Make buffalo sauce
- While the last batch fries or right after, melt the butter with the buffalo sauce in a small saucepan over low heat (or microwave in a bowl for 20 seconds), whisking until smooth and glossy.

Ready when: Sauce is smooth, emulsified, and steaming gently with no butter slicks.
Tip: Don't boil it, or the butter can separate.
Toss and slice
- Slice the cooked tenders into 1-inch (2.5 cm) pieces if you like.
- Place in a large bowl, pour over about three-quarters of the sauce, and toss gently until coated.
- Keep the rest of the sauce for drizzling.

Ready when: Chicken is glossy and evenly coated, with crust still crisp at the edges.
Tip: Toss right before assembling so the crust stays crunchy.
Warm the tortillas
- Heat a dry 10-inch (25 cm) skillet over medium heat.
- Warm each tortilla 15 to 20 seconds per side, or wrap the stack in a damp paper towel and microwave for 20 seconds.

Ready when: Tortillas are soft, pliable, and lightly speckled.
Tip: Warm tortillas won't crack when rolled.
Assemble and roll
- Spread 2 tablespoons ranch down the center of each tortilla.
- Top with lettuce, celery, buffalo chicken, and blue cheese if using.
- Drizzle with a little extra buffalo sauce.
- Fold in the sides, then roll up tightly from the bottom.
- Slice in half on the diagonal and serve with the remaining ranch for dipping.

Ready when: Wrap is snug, seam-side down, and holds together when cut.
Tip: Don't overfill: about a quarter of the filling per wrap makes rolling easy.
Good to know
Tips
- Keep the sauce warm but toss the chicken in it only at the last minute to preserve crunch.
- Adjust heat by mixing in 1 to 2 tablespoons extra butter for milder wraps or a dash of hot sauce for hotter ones.
- Thin slices of celery on a bias add crunch without overpowering the wrap.
- Wrap tightly in parchment or foil if you need to pack the wraps to go.
Make ahead
Bread the tenders up to 4 hours ahead and refrigerate uncovered on the rack. Slice the vegetables and mix the buffalo sauce a day ahead; store separately in the refrigerator and re-warm the sauce gently before tossing.
Storage & reheating
Assembled wraps are best eaten immediately. Store leftover chicken, vegetables, and sauce separately in airtight containers in the refrigerator for up to 3 days. Reheat the chicken on a rack in a 400°F (200°C) oven for 8 to 10 minutes until hot and crisp, then re-toss in warm sauce. Unsauced fried chicken can be frozen up to 2 months; reheat from frozen at 400°F (200°C) for 15 minutes. Let leftover frying oil cool completely before straining or discarding.
Substitutions
- chicken tenderloins (tenders) → boneless, skinless chicken breasts. Slice into ¾-inch (2 cm) thick strips or pound cutlets to an even thickness; cook to 165°F (74°C).
- ranch dressing → blue cheese dressing. Use the same amount for a more traditional wing flavor.
- panko breadcrumbs → crushed cornflakes. Gives a very crunchy, slightly sweeter crust; press on firmly.
- burrito-size flour tortillas → gluten-free large tortillas. Also swap the flour for a gluten-free flour blend and use gluten-free crumbs.
