Steps

Before you start
  • Position an oven rack in the upper third of the oven and preheat to 425°F (220°C).
  • Set up a wire rack inside a rimmed baking sheet so hot air can circulate and the bottoms crisp.
  • Set up your breading station left to right: flour, eggs, panko, so you can work in one direction.
  • Use one hand for wet ingredients and the other for dry to avoid clumpy fingers.

Tips
  • Slice strips to an even thickness so they all finish cooking at the same time.

Make ahead

"Bread the tenders up to 4 hours ahead and refrigerate uncovered on the rack-lined baking sheet. Spray and bake straight from the fridge, adding 2 to 3 minutes. Or freeze unbaked tenders on the rack until solid, bag them, and bake from frozen at 425°F (220°C) for 25 to 28 minutes."

Storage & reheating

"Room temperature: no more than 2 hours. Fridge: up to 3 days in an airtight container. Freezer: up to 3 months. Reheat on a wire rack at 400°F (200°C) for 8 to 10 minutes (12 to 15 from frozen) until hot at 165°F (74°C) and crisp. Avoid the microwave, which makes the crust soggy."

Substitutions
  • boneless, skinless chicken breasts → Chicken tenderloins. Use about 1.5 lb (680 g) as is, with no cutting needed. Baking time may be a few minutes shorter.
  • panko breadcrumbs → Crushed cornflakes. Use 2 cups (about 60 g), unsweetened, crushed. Skip the toasting step and spray well.
  • all-purpose flour → Gluten-free 1-to-1 flour. Pair with gluten-free panko for a fully gluten-free version.
  • smoked paprika → Sweet paprika. A milder, less smoky flavor. Add a pinch of cayenne for heat.
