Creamy Honey Chia Overnight Oats

Thick, spoonable oats made by soaking rolled oats, milk, yogurt and chia seeds in the fridge overnight. Lightly sweetened with honey, they're ready to eat straight from the jar, with no cooking at all.

Steps

Before you start
  • Plan for at least 6 hours of chilling; 8 hours (overnight) gives the best texture.
  • Use old-fashioned rolled oats, not instant or steel-cut oats, which turn mushy or stay hard.
  • Have two 12-ounce (350 ml) jars or containers with lids ready.
  • If your honey is crystallized, warm the jar in hot water for a few minutes so it stirs in easily.
  1. Mix the base

    • In a medium bowl, combine the oats, chia seeds and salt.
    • Stir briefly so the chia is evenly distributed through the oats.

  2. Add the wet ingredients

    • Add the milk, yogurt, honey and vanilla.
    • Whisk or stir for about 30 seconds, scraping the bottom of the bowl, until the yogurt is fully blended and no dry pockets of oats remain.

    Ready when: The mixture looks like a loose, uniform, creamy batter with no yogurt streaks or clumps.

    Tip: Mixing well now prevents chia seeds from clumping into gel pockets later.

  3. Rest and re-stir

    • Let the mixture sit on the counter for 5 minutes, then stir again.
    • This lets the chia begin to gel and redistributes any seeds that sank.

    Tip: Skipping this rest is the most common cause of a clumpy layer of chia at the bottom of the jar.

  4. Portion into jars

    • Divide the mixture evenly between two 12-ounce (350 ml) jars, about 1 ¼ cups (300 g) each.
    • It should fill each jar about two-thirds full, leaving room for toppings.

  5. Chill overnight

    • Refrigerate the jars for at least 6 hours, ideally 8.
    • The oats will soften and the chia will thicken the mixture into a creamy, spoonable pudding-like texture.

    Tip: If it seems too thick in the morning, stir in 1–2 tablespoons of milk.

  6. Top and serve

    • Stir each jar well.
    • Top with the berries and chopped nuts, if using.
    • Eat cold straight from the jar, or let stand 10 minutes for a less chilled bowl.

  • Use jars with wide mouths so you can stir easily in the morning.
  • Add soft or juicy fruit such as banana or mango just before eating to prevent it from turning mushy or watering down the oats.
Make ahead

"Make up to 4 days ahead and keep the jars refrigerated. Add fresh fruit and nuts only when serving so they stay fresh and crunchy."

Storage & reheating

"Refrigerate in sealed jars for up to 4 days; the oats thicken over time, so stir in a splash of milk before eating. Not recommended at room temperature for more than 1 hour. Freezing is not ideal, but the base (without toppings) can be frozen up to 2 months; thaw overnight in the fridge and stir well. Eat cold, or warm in the microwave for 60–90 seconds, stirring halfway through, with a splash of milk."

Substitutions
  • honey → maple syrup. Use the same amount; this also makes it vegan if you use plant yogurt and milk.
  • plain Greek yogurt → dairy-free coconut or soy yogurt. Use the same weight; texture will be slightly looser with some brands.
  • chia seeds → ground flaxseed. Use the same amount; the result will be a little less thick and have a nuttier flavor.
  • milk (dairy or unsweetened plant-based) → unsweetened almond or oat milk. Use the same amount; oat milk gives the creamiest result.
