Substitutions
  • red wine vinegar → fresh lemon juice. Use the same amount for a brighter, slightly fruitier tang.
  • green bell pepper → extra cucumber or a handful of fresh purple basil-free greens such as romaine. Replace with about 4 oz (115 g) cucumber if you dislike bell pepper.
  • Greek feta cheese → firm vegan feta-style block or ricotta salata. Ricotta salata is milder and less tangy; add a pinch more salt to the dressing.
  • ripe tomatoes → halved cherry or grape tomatoes. Use about 1½ lb (680 g) when good large tomatoes are out of season; they hold sweetness better.
