
Classic Graham Cracker Icebox Cake
Crisp graham crackers and vanilla whipped cream turn into tender, sliceable cake after a night in the fridge. It needs no oven and only five ingredients. Chocolate shavings finish the top.

Steps
Before you start
- Plan ahead: the cake needs at least 6 hours in the fridge, and overnight (8 hours) gives the best texture.
- Chill the mixing bowl and beaters in the freezer for 15 minutes so the cream whips faster and holds its shape.
- Keep the cream refrigerated until the moment you whip it.
- Use standard graham cracker sheets, about 5 × 2½ inches (12.5 × 6 cm). If yours are a different size, trim them to make 3 neat rows per layer.
Chill the tools
- Place a large mixing bowl and the whisk or beaters in the freezer for 15 minutes.
- Meanwhile, sift the powdered sugar through a fine-mesh sieve into a small bowl to remove lumps.
- Snap 4 or 5 of the graham cracker sheets in half crosswise so you have 9 half-sheets (about 2½ × 2½ inches), and keep 3 of the remaining whole sheets per layer set aside.

Tip: Do not sift the sugar straight into the cream; lumps will not whisk out.
Whip the cream
- Pour the cold heavy cream into the chilled bowl.
- Beat on medium speed for about 1 minute until it begins to thicken, then add the sifted powdered sugar, vanilla and salt.
- Increase to medium-high and beat for 2 to 3 more minutes until stiff peaks form.

Ready when: When you lift the beaters, the peak stands straight up and the cream holds its shape on a spatula without slumping
Tip: Stop as soon as stiff peaks form. Over-whipped cream turns grainy and starts to become butter.
Prepare the pan
- Spread about ½ cup (a scant 120 g) of the whipped cream in a thin, even layer across the bottom of an 8×8-inch (20×20 cm) pan.
- This keeps the first layer of crackers from sliding and helps them soften evenly.

Lay the first crackers
- Arrange 3 whole graham cracker sheets side by side across the pan, with the long sides touching and running top to bottom.
- Fill the remaining 2½ inches (6 cm) at the end with 3 half-sheets in a row, so the layer covers the pan with no big gaps.
- Trim or break pieces as needed to fit.

Tip: Small gaps are fine; the crackers expand a little as they soften.
Build the layers
- Spread about 1½ cups (roughly 350 g) of whipped cream over the crackers, all the way to the edges.
- Sprinkle with about one-third of the chocolate shavings.
- Add a second layer of 3 whole and 3 half crackers, then another 1½ cups cream and one-third of the chocolate.
- Add a third layer of crackers.

Tip: Dollop the cream over the crackers and spread gently; dragging the spatula can shift or crack them.
Top the cake
- Spread all the remaining whipped cream (about 1½ cups) over the top layer of crackers.
- Smooth it with the back of a spoon or an offset spatula, or make soft swoops.
- Leave the rest of the chocolate for after chilling so the shavings stay crisp and dark.

Chill until soft
- Cover the pan loosely with plastic wrap (tent it so it does not touch the cream) and refrigerate for at least 6 hours, ideally 8 hours or overnight.
- The moisture from the cream soaks into the crackers and turns them into soft cake layers.

Ready when: A knife slides through the crackers with no resistance and no crisp, crunchy bite remains
Tip: If a cracker in the middle still snaps when you cut it, give it another 2 hours.
Garnish and slice
- Scatter the remaining chocolate shavings over the top.
- Dip a sharp knife in hot water and wipe it dry, then cut the cake into 9 squares, wiping the blade between cuts.
- Lift out with a small spatula and serve cold.

Tip: Add the chocolate just before serving; if it sits on the cream for hours it can get soft and dull.

Tips
- Use cream with at least 36% fat; lighter whipping cream will not hold up between the layers.
- Make the cream layers generous and spread them right to the edges so every cracker gets moisture.
- Cut with a hot, dry knife and wipe it clean between cuts for neat squares.
- For a stabilized cream that holds for longer, beat in 2 tablespoons (30 g) of mascarpone or cream cheese at the start.
Make ahead
"Assemble up to 2 days ahead and keep covered in the fridge. Add the chocolate shavings just before serving."
Storage & reheating
"Refrigerator: covered, up to 4 days; the crackers keep softening, so the texture gets more cake-like each day. Room temperature: no more than 1 hour. Freezer: freeze the covered pan, or individual slices wrapped well, for up to 1 month. Thaw in the fridge for 4 hours or serve partly frozen like an ice cream cake. No reheating is needed."
Substitutions
- graham cracker sheets (about 5 × 2½ inches each) → chocolate graham crackers or digestive biscuits. Chocolate grahams give a brownie-like flavor. Digestives are less sweet and may need 1 to 2 more hours to soften.
- bittersweet or semisweet chocolate bar → mini chocolate chips, crushed toffee bits or fresh berries. Use about ⅓ cup (60 g) of mini chips, or 1 cup (150 g) of berries between layers and on top.
- pure vanilla extract → vanilla bean paste. Use the same amount, 2 teaspoons, for more visible specks of vanilla.
- powdered sugar → superfine (caster) sugar. Use 6 tablespoons (75 g); beat a little longer so it dissolves. The cream will be slightly less stable than with powdered sugar, which contains starch.
