Steps
Before you start
- Set the cream cheese out about 1 hour ahead so it is fully soft. Cold cream cheese makes a lumpy filling.
- Thaw the whipped topping in the refrigerator overnight, or for a few hours, until soft but still cold.
- Plan for at least 4 hours of chilling after assembly. Overnight is even better.
- The crust and the gelatin must both be completely cool before you assemble. Warm crust melts the filling, and hot gelatin melts the cream layer.
Heat oven, prep panOven 350°F / 175°C
- Position a rack in the center of the oven and heat to 350°F (175°C).
- Have the 9×13-inch baking dish ready.
- No greasing is needed because the buttery crust won't stick.

Ready when: Oven reaches 350°F (175°C).
Crush and mix crust
- Put the pretzels in a large zip-top bag, press out the air, and seal.
- Crush with a rolling pin into pea-sized pieces with some finer crumbs.
- Tip into a bowl, add the sugar, and pour in the melted butter.
- Stir with a fork until every crumb looks damp and the mixture clumps when squeezed.

Ready when: Mixture looks evenly moistened and holds together when pinched.
Tip: Don't grind the pretzels to dust. Coarse pieces keep the crust crunchy under the creamy layers.
Press and bake crustOven 350°F / 175°C
- Tip the crumbs into the baking dish and press firmly and evenly across the bottom with the flat base of a measuring cup, going into the corners.
- Bake at 350°F (175°C) for 10 minutes, until the crust smells toasty and the edges are a shade darker.

Ready when: Crust is fragrant, lightly golden at the edges, and feels firm when pressed.
Tip: Press hard. A loosely packed crust crumbles into the filling when you slice.
Make strawberry gelatin
- While the crust bakes, whisk the gelatin mix and the boiling water in a medium heatproof bowl for 2 full minutes, until no grains remain on the bottom or sides.
- Stir in the cold water.
- Set aside at room temperature to cool.
- Hull and slice the strawberries ¼ inch (6 mm) thick.

Ready when: Gelatin liquid is perfectly clear with no visible granules.
Tip: Take your time dissolving the gelatin. Undissolved grains leave gritty spots.
Cool crust and gelatin
- Let the crust cool in the dish on a rack until it feels completely cool to the touch, about 30 minutes.
- The gelatin cools in the same time.
- Both should feel at room temperature, with the gelatin still fully liquid.

Ready when: Crust is cool when touched; gelatin is at room temperature and still pourable.
Tip: Don't refrigerate the gelatin. If it starts to thicken, it won't pour smoothly.
Beat cream cheese filling
- In a large bowl, beat the softened cream cheese, sugar, and vanilla (if using) with a mixer on medium speed for about 2 minutes, scraping the bowl once or twice, until completely smooth with no lumps.
- Add the thawed whipped topping and fold it in gently with a spatula until the mixture is uniform and fluffy.

Ready when: Filling is smooth, light, and streak-free.
Tip: Fold the topping in by hand. Beating it can deflate it and make the layer runny.
Spread cream layer
- Dollop the filling over the cooled crust.
- Spread with an offset spatula into an even layer, pushing it all the way to the edges and corners so it touches the sides of the dish.
- This seals the crust and keeps the gelatin from seeping underneath.

Ready when: Filling covers the crust fully with no gaps at the edges.
Tip: If the crust is even slightly warm, wait. It will melt the filling.
Arrange strawberries
- Scatter the sliced strawberries evenly over the cream layer in a single, slightly overlapping layer, covering the surface edge to edge.
- Press lightly so they sit in the filling.

Ready when: Berries cover the whole surface in an even layer.
Tip: Pat the berries dry with paper towels first if they look wet, so they don't thin the gelatin.
Pour gelatin over
- Check that the gelatin is cool and still liquid.
- Slowly pour it over the back of a large spoon held close to the berries so it spreads gently without disturbing the layers.
- Pour around the edges first, then the center, until the berries are just covered.

Ready when: Gelatin covers the berries and reaches the edges of the dish.
Tip: If the gelatin has thickened slightly into a syrupy consistency, that's ideal. Pour it right away.
Chill until set
- Cover the dish loosely with plastic wrap or foil, without letting it touch the gelatin.
- Refrigerate for at least 4 hours, or overnight, until the gelatin is completely firm and doesn't wobble liquidly when you nudge the dish.

Ready when: Top is firm and doesn't move liquidly when the dish is gently shaken.
Tip: Move the dish carefully into the fridge and keep it level.
Slice and serve
- Run a thin knife around the edge of the dish.
- Cut into 15 squares (3 rows by 5), wiping the knife clean between cuts.
- Lift out with a wide spatula and serve cold.

Ready when: Squares hold sharp edges with a distinct crust, cream, and gelatin layer.
Tip: Serve straight from the fridge. The crust softens as it sits at room temperature.
Good to know
Tips
- Seal the cream layer to the edges of the dish so gelatin can't leak under it and soften the crust.
- Make sure the gelatin is cool but not set when you pour. Hot gelatin melts the filling, and set gelatin pours unevenly.
- Use a thin knife wiped clean between cuts for neat squares.
- Use block cream cheese, not spreadable tub style, for a filling that holds its shape.
Make ahead
"Assemble the whole dessert up to 24 hours ahead and keep it refrigerated, covered. For best crunch, you can bake the crust a day ahead and store it covered at room temperature, then assemble the next day."
Storage & reheating
"Refrigerate covered for up to 2 days; the crust gradually softens after day 1. Serve cold, straight from the fridge, with no reheating. Not recommended for room temperature storage beyond 2 hours, and the assembled dessert does not freeze well because the gelatin turns watery when thawed."
Substitutions
- frozen whipped topping → 2 cups (480 ml) cold heavy cream whipped to stiff peaks with 2 tbsp (15 g) powdered sugar. Tastes richer; it's a bit less stable, so keep chilled and serve within 1 day.
- fresh strawberries → Frozen unsweetened strawberries, thawed and well drained, same weight. Drain thoroughly and pat dry, otherwise the gelatin layer may be too loose.
- strawberry gelatin mix (two 3-oz boxes) → Raspberry or cherry gelatin mix, same amount. Use the same method; pair with raspberries or pitted cherries if you like.
- salted pretzel twists → Gluten-free pretzels, same weight. Crush the same way; the crust may be slightly more delicate.
