Steps
Before you start

- Wash and pat dry all fresh produce
- Read through all steps so you understand the timing—much happens simultaneously while the squash roasts
- Prepare your largest mixing bowl for assembling the salad
Preheat oven and roast squashOven 425°F / 220°C

Ready when: Flesh is very tender when pierced with a fork; skin is lightly caramelized at the edges
Tip: For smaller chunks in the finished salad, cut each roasted half in half again after cooling
Toast pepitas
- While the squash roasts, place 1/2 cup pepitas in a small dry skillet over medium heat.
- Toast, stirring frequently with a wooden spoon, for 4–5 minutes until fragrant and light golden brown.
- Transfer to a clean plate and season with a small pinch of sea salt.
- Set aside.

Ready when: Pepitas are fragrant, light golden brown, and beginning to pop slightly
Tip: Watch carefully to prevent burning; they toast quickly and can darken suddenly at the end
Cook quinoa
- Rinse 1 cup quinoa in a fine-mesh strainer under cold water until the water runs clear, about 1 minute.
- In a medium saucepan, bring 2 cups vegetable broth to a boil over medium-high heat.
- Add the rinsed quinoa and 1/4 teaspoon sea salt.
- Stir once, reduce heat to low, cover tightly with a lid, and simmer gently for 15 minutes.
- Remove from heat and let rest, covered, for 5 minutes.
- Fluff gently with a fork.

Ready when: Quinoa is fluffy, grains are tender and separated, all broth is absorbed
Tip: Rinsing quinoa removes the bitter saponin coating; do not skip this step
Whisk together vinaigrette
- In a small bowl, combine 3 tablespoons red wine vinegar and 1 tablespoon Dijon mustard.
- Add 1 small shallot, minced very fine, and let sit for 1–2 minutes to allow the shallot to soften slightly in the acid.
- Whisk in 1/4 cup olive oil slowly to create an emulsion.
- Season with 1/4 teaspoon sea salt, 1/8 teaspoon black pepper, and 1/2 teaspoon finely grated lemon zest.
- Whisk until fully combined.
- Taste and adjust seasoning as desired.

Ready when: Vinaigrette is emulsified, well combined, and slightly thickened
Tip: Whisk the oil in slowly for a better, more stable emulsion; if it breaks, start with a fresh egg yolk and slowly whisk in the broken vinaigrette
Massage kale and prepare pomegranate
- Remove the tough stems from 4 cups fresh kale (about 1 medium bunch) and roughly chop the leaves.
- Place in a large salad bowl and sprinkle with 1/4 teaspoon sea salt.
- Massage vigorously with your hands for 2–3 minutes, working the salt in, until the kale becomes noticeably dark green, wilted, and tender.
- Meanwhile, halve 1 pomegranate over a separate medium bowl to catch all the juices.
- Use your fingertips to gently separate the arils (seeds) from the white pith and membrane, letting them fall into the bowl.
- Discard any large pieces of pith.

Ready when: Kale is dark green, wilted, and noticeably more tender; pomegranate arils are cleanly separated
Tip: Massaging the kale with salt breaks down its tough fibers and makes it more digestible and pleasant to eat raw
Cool and combine salad components
- Remove the roasted squash from the oven.
- Let cool for 5–10 minutes until cool enough to handle.
- Using a spoon, scoop the tender flesh from the skin and cut into 1/2-inch chunks, discarding the charred skin.
- In the large bowl with the massaged kale, combine the cooled quinoa, roasted squash chunks, pomegranate arils (with their reserved juice), toasted pepitas, and 1/2 cup dried cranberries.
- Toss gently with your hands or a serving spoon to combine all components evenly.

Ready when: All components are at room temperature and well combined; salad is ready to dress
Tip: Combining while the squash is still slightly warm helps flavors meld and makes the finished salad more cohesive
Dress salad and finish with toppings
- Pour the prepared vinaigrette over the salad and toss gently but thoroughly, using a serving spoon or two, until all components are evenly coated and glistening.
- Taste and adjust seasonings, adding a pinch more salt or pepper if needed.
- Transfer to a serving platter or individual bowls and top each portion with 2 tablespoons crumbled feta cheese.
- Serve at room temperature or lightly chilled.

Ready when: Salad is evenly coated in dressing; all components are glistening and combined
Tip: Don't dress the salad too far in advance or the kale will soften excessively; if making ahead, dress no more than 2–3 hours before serving
Good to know
Tips
- Buy pomegranates that feel heavy for their size, indicating juicy seeds inside; look for thin skin with few blemishes
- Massaging the kale with salt is key to breaking down its tough cellular structure and making it more digestible and pleasant to eat raw
- Toast the pepitas in a completely dry pan without any oil to concentrate their nutty flavor and prevent sogginess
- This salad improves after sitting for a few hours as the flavors meld together and the dressing softens the kale further; make it up to 3 hours ahead, then serve
Make ahead
The roasted squash can be prepared up to 2 days ahead and refrigerated in an airtight container. The cooked quinoa can be made up to 1 day ahead and stored separately. The vinaigrette can be made up to 3 days ahead and kept refrigerated. Assemble the full salad no more than 3 hours before serving to prevent the kale from wilting excessively. Undressed salad components can be combined 1 day ahead, then dressed just before serving.
Storage & reheating
Store leftovers in an airtight container in the refrigerator for up to 3 days. The kale will soften over time and the salad will become more marinated in the vinaigrette flavor, which many people prefer. Serve chilled or at room temperature directly from the refrigerator. The feta cheese is best added fresh just before serving for optimal texture and flavor; if refrigerating, add it when you're ready to serve. To reheat, bring to room temperature or serve chilled as desired.
Substitutions
- delicata squash, medium, whole → Butternut squash or acorn squash. Both will require 30–35 minutes roasting until completely tender; butternut yields a sweeter, nuttier flavor
- pomegranate, fresh → Fresh cranberries (about 1 cup raw) or 3/4 cup diced dried apricots. Fresh cranberries add a bright tartness similar to pomegranate; apricots add sweetness instead
- feta cheese, crumbled → Crumbled goat cheese, blue cheese, or omit entirely for a vegan version. Goat cheese adds tanginess; blue cheese adds depth; omitting keeps the salad fully vegan and adds a lighter texture
- pepitas (pumpkin seeds), raw → Sunflower seeds or sliced almonds. Both provide similar crunch and nuttiness; toast in the same manner for 4–5 minutes
