Steps
Before you start
- Buy fresh bolillos (or small crusty sandwich rolls) about 6 inches (15 cm) long; very fresh ones are easiest to toast evenly.
- Use raw Mexican (pork) chorizo sold in casings or loose, not dry-cured Spanish chorizo.
- Shred or tear the Oaxaca cheese and slice the avocado before you start cooking so the hot fillings can be assembled right away.
- Have everything within reach: the eggs cook in about 2 minutes and are best served immediately.
Prep the fillings
- Slice the avocados and keep them on a plate with a squeeze of lime if using.
- Shred or pull the Oaxaca cheese into strands.
- Split each bolillo like a hinge and spread the cut sides with the softened butter.
- In a bowl, whisk the eggs with the milk and a small pinch of salt until no streaks of white remain.

Warm the beans

Scramble the eggs

Substitutions
- bolillo rolls → telera rolls or ciabatta rolls. Telera is softer; ciabatta gives a chewier bite. Toast a little less for softer rolls.
- Oaxaca cheese → low-moisture mozzarella or Monterey Jack. Both melt well, though they are milder than Oaxaca.
- fresh Mexican chorizo → plant-based chorizo. Cook 4 to 5 minutes and add 1 teaspoon oil to the pan.
- refried beans (canned or homemade) → mashed black beans. Warm with a pinch of salt and a splash of water for spreadable consistency.
