Chocolate Peanut Butter Oatmeal
A rich, indulgent microwave oatmeal that combines warm chocolate and creamy peanut butter. Quick oats are cooked in milk and water with cocoa powder, then topped with a swirl of peanut butter, making a satisfying breakfast that tastes like dessert but delivers whole grains and protein.
Steps
Before you start
- Gather all ingredients and a microwave-safe bowl
- Have two bowls ready for serving
Mix dry ingredients
- In a microwave-safe bowl, whisk together the oats, cocoa powder, sugar, and salt until evenly combined.
- This prevents lumps of cocoa and ensures even chocolate distribution throughout the oatmeal.

Ready when: mixture is uniform with no visible cocoa streaks
Tip: Whisking the cocoa with the oats prevents it from clumping when liquid is added.
Add liquids and stir
- Pour in the milk and water, stirring well to combine everything into a thick slurry.
- There should be no dry pockets of oats.
- Stir in the vanilla extract if using.

Ready when: all oats are moistened and mixture is smooth
Tip: Stir thoroughly to prevent a thick, pasty texture in some areas.
Microwave until thickened
- Microwave on high for 2 to 3 minutes, stirring once halfway through (after 1 to 1.5 minutes).
- The mixture should start at the edges and bubble in the center.
- It will look slightly loose at first—this is correct, as it will thicken as it cools slightly.

Ready when: mixture bubbles vigorously at edges and looks creamy, not thin
Tip: Stop at 2.5 minutes if you prefer creamy oatmeal, or go the full 3 minutes for thicker texture. The mixture will continue to thicken as it sits.
Divide and top with peanut butter
- Carefully pour or spoon the hot oatmeal into two serving bowls, dividing evenly (about 1 cup per bowl).
- Top each bowl with 2 tablespoons of peanut butter, placed in a spoonful on top where it will begin to soften and swirl into the warm oatmeal.

Ready when: peanut butter softens and can be stirred through, oatmeal is creamy
Tip: Place the peanut butter on top just before serving so it melts gently into the warm oatmeal. You can swirl it in or leave it as a layer—both are delicious.

Tips
- For a thinner, more porridge-like consistency, add an extra 2–3 tablespoons of milk or water and reduce microwave time slightly to 2–2.5 minutes.
- Customize with add-ins: sprinkle with chocolate chips, chopped hazelnuts, banana slices, or a drizzle of honey after cooking.
- Make it overnight oats instead: combine oats, cocoa, sugar, salt, milk, water, and vanilla in a jar, refrigerate overnight, then stir well and microwave for 1–1.5 minutes before topping with peanut butter.
- For a richer chocolate flavor, replace 2 tablespoons of water with chocolate milk or add an extra ½ tablespoon of cocoa powder.
Storage & reheating
Best served fresh, but leftover oatmeal can be stored in an airtight container in the refrigerator for up to 2 days. Reheat individual servings in the microwave with a splash of milk (1–2 tablespoons) for 30–45 seconds, stirring to restore creaminess. Do not freeze, as the texture becomes grainy.
Substitutions
- whole milk or 2% milk → non-dairy milk (almond, oat, soy, or coconut milk). Works equally well; use the same amount. Full-fat versions yield the creamiest result.
- creamy peanut butter → almond butter, tahini, or sunflower seed butter. Any nut or seed butter works beautifully. Tahini adds an earthy note; almond butter is slightly more delicate.
- granulated sugar → honey, maple syrup, or brown sugar. Use the same amount; honey and maple syrup add subtle flavor. Brown sugar deepens the chocolate notes.
- unsweetened cocoa powder → unsweetened hot cocoa powder (Dutch-process or natural). Any unsweetened cocoa works. Dutch-process gives deeper color and slightly smoother flavor; natural cocoa is more intensely chocolate.
