Steps
Before you start
- Read through the recipe and note the 8-hour overnight slow cook time
- Use a slow cooker liner (optional but recommended for easy cleanup)
- If your figs are very hard, soak them in warm water for 15 minutes before chopping
Prepare slow cooker and ingredients
- Lightly coat the inside of a 6-quart slow cooker with softened butter.
- Lightly crush the green cardamom pods (just enough to split the husks and release the aromatic seeds inside) using the side of a knife or a mortar and pestle.
- Chop the dried figs into ½-inch pieces, discarding any hard stem pieces.

Ready when: Cardamom pods are split open, figs are uniformly chopped
Tip: Crushing the cardamom pods releases the essential oils, making the flavor much more pronounced than using whole pods.
Combine wet and dry ingredients
- Pour the rolled oats into the slow cooker.
- Add the whole milk, almond milk, honey, sea salt, vanilla extract, and the crushed cardamom pods.
- Stir well until the oats are fully moistened and no lumps of oats remain at the bottom.
- All the honey should be dissolved into the milk mixture.

Ready when: No dry oats visible, honey is dissolved into the liquid
Tip: Use a 1:1 ratio of whole milk to almond milk for richness and creamy texture; all-liquid oatmeal will be too thin.
Add figs and set to low
- Fold in the chopped figs until evenly distributed throughout the mixture.
- Cover the slow cooker and set it to low heat.
- Cook on low for 8 hours (overnight is ideal, but you can adjust timing based on your schedule—7 hours minimum, up to 9 hours if needed).

Ready when: Oatmeal is tender and creamy, no liquid pools at the edges, and figs are soft and jammy
Tip: Do not use high heat—the oatmeal may burn on the bottom and sides. Low heat ensures even, gentle cooking.
Finish and serve
- When the overnight cook is complete, remove the slow cooker insert and give the oatmeal a good stir to ensure it's evenly creamy throughout.
- If desired, fold in the Greek yogurt for extra creaminess and tang.
- Scoop into bowls and top with toasted almonds.
- Drizzle with a little extra honey if you'd like more sweetness.

Ready when: Oatmeal is creamy and smooth, yogurt is fully incorporated
Tip: Stir from the bottom and sides to break up any firmer edges and create a uniform texture. Add Greek yogurt after cooking to preserve its live cultures.
Good to know
Tips
- If your slow cooker runs very hot, check the oatmeal after 7 hours; some models finish cooking more quickly. The oatmeal should be tender but not mushy or dried out around the edges.
- Fresh pomegranate seeds, toasted pistachios, or a drizzle of pomegranate molasses make wonderful last-minute garnishes that echo the Mediterranean theme.
- For deeper cardamom flavor, toast the pods in a dry skillet over medium heat for 30 seconds before crushing them to awaken their essential oils.
- If you don't have a slow cooker liner, a quick spray of nonstick cooking spray on the buttered slow cooker will prevent sticking and make cleanup easier.
Make ahead
This recipe is entirely make-ahead. Mix all ingredients (except Greek yogurt and toasted almonds) in the slow cooker the evening before, set to low, and breakfast is ready in the morning. You can also prepare the slow cooker up to 12 hours ahead (keep it refrigerated), then set it on the counter 30 minutes before turning it on—this ensures the slowest, creamiest texture."
Storage & reheating
Store in an airtight container in the refrigerator for up to 5 days. Reheat individual portions in the microwave with a splash of milk (1–2 tablespoons) to restore creaminess, stirring halfway through, for 1–2 minutes. You can also gently reheat the whole batch on the stovetop over medium-low heat with a bit of milk, stirring often. Freeze in individual portions in freezer-safe containers for up to 3 months; thaw overnight in the refrigerator and reheat as directed above.
Substitutions
- dried figs, stemmed → Dried apricots, dates, or raisins. Apricots and dates will add tanginess or deep richness; raisins will be sweeter and milder. Use the same weight (150 g / 1 cup). Dates benefit from chopping.
- green cardamom pods → ½ teaspoon ground cardamom or a pinch of ground cinnamon and ground cloves. Ground cardamom can be added in Step 2 instead of crushed pods (you won't need to remove them). Cinnamon and cloves give a warmer, spicier profile.
- honey → Pure maple syrup or agave nectar. Use the same volume (½ cup / 120 ml). Maple syrup will add a deeper, more robust flavor; agave is more neutral.
- whole milk → Oat milk, coconut milk, or additional almond milk. Oat milk provides the creamiest non-dairy option. Coconut milk will add tropical notes. Using 3.5 cups almond milk total will yield a thinner oatmeal; add 1–2 tablespoons more honey to compensate.
