Steps
Before you start
- Preheat oven to 400°F (200°C)
- Have cooked quinoa ready (use leftovers or cook 1/3 cup dry quinoa ahead)
- Line a baking sheet with parchment paper or light oil
Mix chickpeas and herbs
- In a medium bowl, add drained chickpeas and coarsely mash them with a fork until about 60% are broken down (some whole pieces remaining for texture).
- Add minced garlic, diced red onion, cumin, oregano, smoked paprika, salt, and black pepper.
- If using lemon zest and parsley, add those too.
- Stir until evenly combined.

Ready when: Mixture is chunky but well combined, with garlic and spices evenly distributed
Tip: Don't over-mash; the chickpeas should have texture, not become a paste
Add quinoa and breadcrumbs
- Fold in the cooked quinoa and panko breadcrumbs until just combined.
- The mixture should hold together when squeezed gently but should not be overly wet or dense.
- If it feels too loose, add 1 tablespoon more breadcrumbs.

Ready when: Mixture holds together when a small handful is squeezed; no dry crumbs visible
Tip: If the mixture seems too dry, drizzle in water one tablespoon at a time, stirring gently, until it just comes together
Form meatballs
- Brush or lightly coat the prepared baking sheet with 1 tablespoon of the olive oil.
- Using a 1.5-tablespoon ice cream scoop or spoon, portion the mixture into 16 equal rounds on the baking sheet, spacing them 1 inch apart.
- Roll each portion gently between your palms to form a compact ball.
- Lightly brush or roll each meatball in the remaining 1 tablespoon olive oil.

Ready when: All 16 balls are evenly sized and lightly coated with oil
Tip: If the mixture feels sticky, wet your hands lightly with cool water as you form each ball; don't compress too hard or they'll be dense
Bake until goldenOven 400°F / 205°C
- Place the baking sheet in the preheated 400°F (200°C) oven.
- Bake for 20–22 minutes, stirring the pan halfway through (around 11 minutes), until the meatballs are golden brown on all sides and firm to the touch.
- They should not jiggle when gently shaken.

Ready when: Golden-brown color on all sides; firm exterior and warm interior when pressed gently
Tip: Stir halfway through so they brown evenly; if your oven runs hot, check at 18 minutes to avoid over-browning
Serve or cool
- Remove from the oven and let cool on the baking sheet for 2–3 minutes.
- Serve warm with marinara sauce for dipping or spooned over pasta.
- Alternatively, cool completely on the baking sheet before storing.

Good to know
Tips
- These meatballs are naturally vegan and naturally gluten-free if you use certified GF panko breadcrumbs.
- For extra flavor, toast your cumin and oregano in a dry skillet for 30 seconds before adding to the mixture.
- Serve these over roasted vegetables, in a bowl with grains, with marinara and pasta, or as a sandwich filling.
- The mixture can be portioned ahead and frozen unbaked; bake directly from the freezer, adding 3–5 minutes to the bake time.
Make ahead
Prepare the meatball mixture up to 1 day ahead, cover, and refrigerate. Form and bake just before serving, or bake and refrigerate for up to 3 days, then reheat gently in a 325°F (160°C) oven for 8–10 minutes.
Storage & reheating
Room temperature (not recommended): 1 hour max. Refrigerator: Store in an airtight container for up to 4 days. Reheat gently in a 325°F (160°C) oven for 8–10 minutes or in simmering marinara sauce for 5 minutes. Freezer: Layer meatballs in a freezer-safe container, separated by parchment, for up to 3 months. Bake from frozen at 375°F (190°C) for 28–30 minutes, stirring halfway through.
Substitutions
- cooked quinoa, cooled → cooked brown rice or millet (same volume). Use any cooked whole grain; adjust seasonings slightly if needed, as they may absorb flavors differently
- panko breadcrumbs → whole wheat panko, or finely grated stale bread. Whole wheat breadcrumbs may need slightly less liquid; grated bread should be dried slightly first
- marinara sauce, for serving → tahini-lemon sauce, tzatziki, or roasted red pepper sauce. Choose based on your preferred flavor profile; each changes the final dish's character
- extra-virgin olive oil → neutral vegetable oil or grapeseed oil. Use if avoiding olive oil; the dish will be slightly less flavorful but still very good
