Steps
Before you start
- Remove puff pastry from freezer and thaw in the refrigerator for at least 4 hours or overnight
- Pit fresh cherries or have thawed frozen cherries ready
- Preheat your oven to 400°F (200°C) about 15 minutes before baking
- Line 2 baking sheets with parchment paper
Prepare cherry filling
- In a small saucepan over medium-low heat, combine the halved cherries, granulated sugar, lemon zest, cornstarch, butter, and a pinch of salt.
- Stir gently and simmer for 5–7 minutes, until the cherries release their juices and the mixture thickens slightly.
- The liquid should look glossy and coat the cherries.
- Stir in the almond extract (if using) and let the filling cool completely on a plate or bowl, about 15 minutes.
- (Warm filling will make the pastry soggy and difficult to seal.)

Ready when: Filling is glossy, coats the back of a spoon, and has cooled to room temperature
Tip: If you use frozen cherries, thaw and drain them completely first to avoid a watery filling.
Cut pastry pieces
- On a lightly floured work surface, gently unfold the puff pastry sheets (they may have 2 sheets depending on the brand).
- Using a 3-inch round cutter or a knife, cut out 16 circles or squares from the pastry.
- If you don't have a round cutter, you can cut 3-inch squares—the shape doesn't matter.
- Place 8 pieces on the prepared baking sheets, spacing them about 2 inches apart.

Ready when: 16 uniform pastry pieces cut and ready; 8 pieces on baking sheets
Tip: Keep the pastry cool and handle it minimally; warm puff pastry loses its lift. If it becomes sticky, refrigerate for 10 minutes.
Fill the pockets
- Spoon about 1 tablespoon of the cooled cherry filling into the center of each of the 8 pastry pieces on the baking sheets.
- Leave a 0.5-inch border around the edges clear of filling.
- Top each filled piece with a second pastry piece, pressing gently around the edges to seal.
- Use a fork to crimp all four edges (if square) or the entire rim (if round), pressing firmly to ensure the pastry layers stick together.

Ready when: 8 filled and sealed pastry pockets with crimped edges
Tip: Don't overfill, or the cherry juice will leak out during baking. The fork crimp creates a decorative seal and helps trap the filling inside.
Chill and brush pastries
- Transfer the filled pockets on their baking sheets to the refrigerator and chill for at least 15 minutes.
- This helps the pastry puff better.
- Meanwhile, beat the egg with 1 tablespoon water in a small bowl.
- Remove the pockets from the refrigerator and brush the top of each with egg wash.
- If using coarse sanding sugar, sprinkle a pinch over each pocket.

Ready when: Pastry pockets are chilled; egg wash applied evenly; optional sugar sprinkled
Tip: Chilling allows the butter in the puff pastry to firm up, which creates more steam and a better puff in the oven.
Bake until goldenOven 400°F / 205°C
- Preheat your oven to 400°F (200°C).
- Place the baking sheets in the oven and bake for 22–26 minutes, until the pastry is puffed and deep golden brown on top.
- The pastry should look crispy and feel firm when gently tapped.
- If your oven runs uneven, rotate the baking sheets halfway through baking (around 13 minutes).

Ready when: Pastry is puffed, deep golden brown, and crispy to the touch; no pale spots
Tip: Don't open the oven door during the first 15 minutes, or the pastry may collapse. The high heat creates the layers and puff.
Cool before serving
- Remove the baking sheets from the oven and let the pockets rest on the sheets for 5 minutes so the filling sets.
- Transfer them to a cooling rack and let them cool for another 5–10 minutes.
- They will be warm and the filling may still be hot, so handle gently.
- Serve warm or at room temperature.

Ready when: Pastry is firm and no longer steaming; filling is set but still warm
Tip: Cooling on a rack prevents the bottom from getting soggy as steam escapes.
Good to know
Tips
- For a glossy finish without the egg, brush the tops with a mixture of milk and a pinch of sugar, or use melted apricot jam as a glaze after baking.
- If you don't have a 3-inch cutter, use a teacup or ramekin as a template to cut circles with a knife, or simply cut 3-inch squares.
- To prevent the filling from leaking during baking, make sure the edges are well-crimped and the filling is completely cool before sealing.
- For best results, use the puff pastry within 1–2 hours of thawing; thawed pastry becomes more fragile if left out too long.
Make ahead
You can assemble the pockets up to 2 days ahead. After step 4 (before egg wash), wrap the chilled pockets tightly in plastic wrap or store them in an airtight container in the refrigerator. When ready to bake, brush with egg wash, sprinkle with sugar if desired, and bake straight from the fridge—add 2–3 minutes to the baking time. You can also bake them fully and reheat them in a 300°F (150°C) oven for 8–10 minutes until warm and crispy.
Storage & reheating
Room temperature (uncovered or in an airtight container): up to 2 days. The pastry will soften slightly but remains pleasant. Refrigerator: up to 5 days in an airtight container; reheat gently. Freezer: up to 1 month (freeze baked pockets in a single layer, then transfer to a freezer bag). Thaw at room temperature for 30 minutes, then warm in a 300°F oven for 10 minutes until crispy.
Substitutions
- fresh or frozen dark cherries → 2 cups (280 g) canned pitted cherries (drained weight), or 1.5 cups (240 g) frozen tart cherries. If using canned cherries in syrup, drain them well and add only 1 tablespoon sugar instead of ⅓ cup. Frozen cherries often need all the sugar listed.
- almond extract → ½ teaspoon vanilla extract or ¼ teaspoon cardamom powder. Vanilla is milder; cardamom adds a warm, spiced note. Almond extract is traditional but entirely optional.
- lemon → ½ teaspoon orange zest or juice from 1 tablespoon of lemon juice. Orange zest brings a bright, slightly sweet citrus note. Lemon juice can replace zest, though the acidity is sharper.
- thawed puff pastry sheets → 2 sheets thawed store-bought puff pastry or homemade puff pastry dough (about 1 lb / 450 g total). Homemade pastry will require more chilling time and yield a slightly different texture, but the result is excellent. Vegan puff pastry (egg-free) also works and can be brushed with plant milk instead of egg wash.
