Steps

Before you start
  • Bring a large pot of salted water to a boil for the orzo
  • Trim the ends off the green beans
  • Have all ingredients measured and ready near your cooking station
  1. Cook the orzo

    • In a large pot of boiling salted water, cook the orzo according to package directions until al dente, about 9–11 minutes.
    • Drain in a colander and set aside.

Ready when: Orzo is tender but still has a slight bite when tasted

Tip: Don't overcook the orzo; it will cook further when tossed with the hot ingredients

  2. Blanch the green beans

    • While the orzo cooks, bring a separate pot of salted water to a boil.
    • Add the green beans and cook for 4–5 minutes until they are bright green and tender-crisp.
    • Drain well and set aside.

Ready when: Green beans are bright green and crisp-tender when pierced with a fork

Tip: Don't skip the ice bath alternative if you prefer; we'll char them instead, so a slight undercook here is good

  3. Make the breadcrumb topping

    • In a small skillet over medium-low heat, warm 3 tablespoons (45 ml) of olive oil.
    • Add the minced garlic and cook, stirring frequently, for about 1 minute until fragrant but not browned.
    • Add the panko breadcrumbs and stir constantly for 3–4 minutes until the breadcrumbs are golden and smell toasty.
    • Season with salt, pepper, and red pepper flakes if using.
    • Transfer to a plate and let cool slightly.

Ready when: Breadcrumbs are golden brown and smell nutty and toasted

Tip: Watch the heat carefully; garlic and breadcrumbs brown quickly. Stir constantly to avoid burning

  4. Char the green beans

    • Heat the remaining 5 tablespoons (75 ml) of olive oil in a large 12-inch skillet over medium-high heat until shimmering.
    • Add the blanched green beans in a single layer and let them sit undisturbed for 2–3 minutes to char and caramelize.
    • Stir and cook for another 2–3 minutes until the green beans have dark, blistered spots and are tender.
    • Season with salt and pepper.

Ready when: Green beans have dark charred spots and are soft inside; a fork passes through easily

Tip: Don't stir too early; let the first side develop color before tossing. High heat is essential for charring

  5. Combine and finish

    • Add the cooked orzo to the skillet with the charred green beans.
    • Toss well to combine and heat through for 1–2 minutes.
    • Taste and adjust seasoning with salt and pepper.
    • Transfer to a serving dish and top with the golden breadcrumb mixture.
    • Garnish with lemon zest if using.
    • Serve warm.

Ready when: Orzo and green beans are heated through and well combined

Tip: Add the breadcrumb topping just before serving so it stays crispy; if you do it too early, it will soften from the heat and moisture

Good to know

Tips
  • The key to great flavor is not rushing the charring step. Let the green beans develop dark, caramelized spots for depth and sweetness.
  • If you prefer a less oily dish, you can reduce the total olive oil to 6 tablespoons (90 ml) and skip the extra oil used just for charring; instead, char the green beans dry in a hot skillet, then toss with the cooked orzo and a drizzle of oil.
  • For a more substantial dish, toss in ½ cup (50 g) of grated Parmesan cheese or crumbled goat cheese after combining the orzo and green beans.
  • This dish pairs beautifully with roasted chicken, grilled fish, or a simple salad. It's also excellent served at room temperature as a cold pasta salad the next day.
Make ahead

You can prepare the breadcrumb topping up to 1 day ahead and store it in an airtight container at room temperature. The green beans can be blanched and the orzo cooked up to 4 hours ahead; store separately in the refrigerator. Reheat both gently before charring and combining.

Storage & reheating

Store leftovers in an airtight container in the refrigerator for up to 3 days. The breadcrumb topping and pasta-vegetable mixture will keep best if stored separately. Reheat in a skillet over medium heat for 3–4 minutes, stirring gently, then top with the breadcrumb mixture just before serving. The dish does not freeze well due to the texture of the breadcrumbs.

Substitutions
  • panko breadcrumbs → regular fine breadcrumbs or crushed croutons. Use the same weight; regular breadcrumbs will brown slightly faster, so watch carefully to avoid burning
  • fresh green beans → trimmed asparagus spears or broccoli florets. Blanch asparagus for 3–4 minutes; blanch broccoli for 2–3 minutes. Both char beautifully in the skillet
  • orzo pasta → fregola sarda, pearled farro, or small pasta shapes like ditalini. Cooking times may vary slightly; check package directions and aim for al dente
  • lemon → grated Parmesan cheese or fresh flat-leaf parsley. Either adds brightness; use about 3 tablespoons (30 g) of cheese or 2 tablespoons (8 g) of chopped fresh parsley
