Charred Culantro and Crab Dip
A vibrant Caribbean-inspired dip that combines sweet lump crab meat with a smoky charred culantro base, balanced by rich cream cheese and a bright lime-habanero heat. The culantro is briefly charred in a hot skillet to mellow its peppery bite and add depth, then folded gently into the dip so the herb flavor blooms without overpowering the delicate crab. Serve warm or at room temperature with crispy tortilla chips, plantain chips, or fresh vegetables.
Steps
Before you start
- Bring cream cheese to room temperature so it blends smoothly
- Pick through crab meat gently to remove any shell fragments
- Have all ingredients prepped before you start—the dip comes together quickly
Char the culantro
- Heat a small 10-inch skillet over medium-high heat until very hot, about 2 minutes.
- Add the roughly chopped culantro and let it sit undisturbed for 1 minute, allowing the leaves to blacken and blister slightly.
- Toss and char for another 30 seconds to 1 minute total.
- The culantro should be fragrant and darkened but not completely burned.
- Transfer to a cutting board and let cool for 1 minute, then chop finely.

Ready when: Culantro is blistered, darkened, and fragrant
Tip: Don't stir too much—let the leaves make direct contact with the hot pan to develop char and depth. Culantro's peppery flavor mellows when charred.
Blend base
- In a large mixing bowl, whisk together the room-temperature cream cheese and sour cream until smooth and fully combined, about 1 minute of gentle stirring.
- The mixture should be creamy with no lumps.

Ready when: Cream cheese and sour cream are fully blended and smooth
Tip: Cold cream cheese will create lumps. If yours is still firm, let it sit at room temperature for 30 minutes or soften gently in the microwave for 10 seconds at a time.
Fold in crab and seasonings
- Add the picked crab meat, charred culantro, minced habanero, minced garlic, lime juice, and lime zest to the cream cheese mixture.
- Using a wooden spoon or spatula, fold everything together gently but thoroughly until just combined, about 1 minute.
- Be gentle to keep the crab in tender lumps rather than breaking it apart.

Ready when: All ingredients are evenly distributed and the dip is well combined
Tip: Fold rather than stir to preserve the structure of the lumps of crab, which add texture and visual appeal.
Season to taste
- Taste the dip and season generously with kosher salt and fresh black pepper.
- Start with 1/4 teaspoon salt and adjust from there, remembering that the lime and habanero already add brightness and heat.
- The dip should taste balanced—savory from the crab and cream, bright from lime, and warming from habanero.

Ready when: Flavors are balanced and well-seasoned to your preference
Tip: Taste as you go. It's easier to add more salt than to remove it.
Transfer and finish
- Spoon the dip into a shallow serving bowl or dish.
- If using olive oil, drizzle a light thread of extra-virgin olive oil over the surface.
- Serve immediately at room temperature, or chill for up to 2 hours and serve cold.
- The dip is best served with crispy tortilla chips, plantain chips, or fresh vegetables like cucumber, bell pepper, and radish.

Good to know
Tips
- Charring the culantro mellows its peppery, assertive flavor and adds a subtle smoky depth that complements the sweet crab meat beautifully.
- For the best texture, use lump or jumbo lump crab meat rather than claw meat, which shreds easily and won't hold its shape in the dip.
- If your habanero is particularly large or you prefer less heat, seed it thoroughly and reduce the amount to half a pepper.
- Serve this dip at a party—it's elegant enough to impress but easy enough to make ahead, and the Caribbean flavors spark conversation.
Make ahead
Prepare the dip up to 8 hours ahead. Cover and refrigerate. Bring to room temperature for 15 minutes before serving, or serve chilled straight from the fridge—both are equally delicious.
Storage & reheating
Refrigerator: covered in an airtight container for up to 4 days. Freezer: not recommended, as the texture of cream cheese becomes grainy when thawed. Reheat: warm gently in a 300°F (150°C) oven for 8–10 minutes, stirring occasionally, or leave at room temperature for 20–30 minutes to soften.
Substitutions
- fresh culantro → fresh cilantro. Culantro has a more robust, peppery flavor. Cilantro is milder and more delicate; you may want to use 2 cups (40 g) and still char it lightly, or add 1/4 teaspoon additional lime juice for brightness.
- habanero chile, fresh → scotch bonnet or jalapeño. Scotch bonnet is equally hot and fruity; use the same amount. Jalapeño is milder—use 2–3 seeded and minced.
- lump crab meat, fresh or pasteurized → jumbo lump crab meat or backfin crab meat. Jumbo lump is larger and pricier; backfin is smaller but still flavorful. Either works. Avoid canned crab in heavy sauce—rinse and drain it thoroughly first.
- sour cream → crème fraîche or Greek yogurt. Crème fraîche adds richness and a slight tang. Greek yogurt (strained) is leaner and tangier; the dip will be less creamy but still delicious.
