Steps
Before you start
- Use fresh, good-quality water (filtered if yours is heavily chlorinated)
- Have a fine-mesh strainer or cheesecloth ready
- If making ahead, prepare the spice base and store it in an airtight container for up to 1 week
Toast the caraway seeds
- Heat a small dry skillet over medium heat for 1 minute until warm.
- Add the caraway seeds and toast, shaking the pan frequently, for 2–3 minutes.
- You'll hear the seeds begin to crackle and smell their warm, aromatic spice.
- Transfer to a small plate and let cool for 30 seconds.

Ready when: Seeds are fragrant and lightly browned, making a crackling sound
Tip: Toasting releases the caraway's essential oils and deepens its digestive properties—don't skip this step.
Combine spices and water
- Pour the fresh water into a small 2-quart saucepan.
- Add the toasted caraway seeds, chopped dried apple, crushed cinnamon stick, and whole cloves.
- Stir briefly to combine.
Bring to a gentle simmer
- Set the saucepan over medium-high heat and bring the mixture to a boil, then immediately reduce the heat to medium-low.
- Simmer gently (small bubbles breaking the surface) for 8–10 minutes, until the water has taken on a warm amber color and the apple and spices have softened.

Ready when: Liquid is warm amber in color and smells richly of caraway, cinnamon, and apple; pieces have softened
Tip: Avoid a rolling boil, which can make the drink taste bitter. A gentle simmer extracts the best flavor and retains the delicate apple sweetness.
Strain and sweeten
- Remove the saucepan from heat and let the infusion rest for 1 minute.
- Pour the drink through a fine-mesh strainer into two mugs, discarding the solids.
- If desired, stir in a small amount of raw honey and/or a squeeze of fresh lemon juice to brighten the flavor.
- Taste and adjust to your preference.

Ready when: Liquid is clear when poured through the strainer; no spice particles remain
Tip: Pour raw honey while the drink is still warm so it dissolves fully without needing to be stirred in separately. Lemon brightens the apple and caraway notes without overpowering them.
Good to know
Tips
- Caraway seeds are a traditional digestive aid in European herbal medicine, especially after heavy meals. Toasting them unlocks their full flavor and therapeutic properties.
- Dried apple adds subtle natural sweetness without requiring added sugar, and its gentle acidity balances the warmth of the spices.
- For a more robust flavor, slightly increase the caraway seeds or cinnamon; for a milder drink, reduce either by about 1/4 and taste as you simmer.
- This drink is wonderful served after dinner or as a calming evening beverage. In some traditions, it's enjoyed throughout the day as a gentle digestive tonic.
Make ahead
You can toast the caraway seeds and prepare a spice blend (caraway, crushed cinnamon, and cloves) up to 1 week ahead and store it in an airtight container. Dried apple can also be measured out beforehand. When ready to serve, simply follow Steps 2–4, adding fresh water and simmering as directed.
Storage & reheating
This drink is best enjoyed fresh and warm immediately after preparation. If leftovers remain, store the strained drink in a covered container in the refrigerator for up to 2 days. Reheat gently in a small saucepan over medium-low heat or in a mug in the microwave (1–1.5 minutes), stirring occasionally, until warm but not boiling.
Substitutions
- dried apple → dried pear or dried quince. Pear will be slightly milder and sweeter; quince adds a more floral, tart note. Use the same weight.
- cinnamon stick → 1/4 teaspoon ground cinnamon. Ground cinnamon will dissolve into the liquid, so strain more carefully or use a coffee filter. The flavor will be more intense; start with 1/8 teaspoon and add to taste.
- raw honey → maple syrup or agave nectar. Use the same amount (½ teaspoon to taste). Maple syrup adds a slightly deeper flavor, while agave is more neutral.
- caraway seeds → fennel seeds. Fennel is sweeter and slightly more licorice-forward but also aids digestion. Toast in the same way and use 1 teaspoon (5 g). The drink will be less herbal and more floral.
