Steps

Before you start
  • Rinse black rice under cold water until water runs mostly clear
  • Have an immersion blender or regular blender ready
  • Measure all ingredients before you start cooking
  1. Bring rice to boil

    • In a medium 3-quart saucepan, combine the rinsed black rice, 4 cups (950 ml) of water, and the sliced fresh ginger.
    • Bring to a boil over high heat, then reduce heat to medium-low.

Ready when: Water is at a rolling boil

Tip: Rinsing the black rice removes excess starch and prevents clumping during cooking.

  2. Simmer until rice is very soft

    • Cover partially and simmer for 40–45 minutes, stirring occasionally, until the black rice is completely tender and beginning to break down.
    • The liquid should reduce by about half and look thick and creamy.

Ready when: Rice grains are very soft and easily crushed between two spoons; liquid is thick and creamy

Tip: Stir occasionally to prevent sticking on the bottom and to help break down some rice grains.

  3. Add sugar and stir to dissolve

    • Remove from heat.
    • Add the brown sugar and a pinch of sea salt.
    • Stir well until the sugar is completely dissolved and the mixture is smooth.

Ready when: Sugar is dissolved and mixture is uniform

Tip: Adding salt brightens the sweetness and balances flavors without making the drink taste salty.

  4. Blend until smooth

    • Using an immersion blender, blend the mixture directly in the saucepan for 1–2 minutes until the drink is smooth and creamy with no visible rice pieces.
    • If using a standard blender, work in batches (let cool slightly first), then return to the saucepan.

Ready when: Mixture is completely smooth and creamy

Tip: An immersion blender is safer and easier for this step, but a standard blender works if you blend in small batches.

  5. Stir in coconut milk

    • Pour the coconut milk into the blended rice mixture and stir well until fully combined.
    • The drink should be creamy, smooth, and evenly colored.

Ready when: Coconut milk is fully incorporated and no streaks remain

Tip: If using canned coconut milk, stir the can well before opening, or shake it first, since the cream and liquid may separate.

  6. Reheat and serve

    • Place the saucepan over medium heat and stir gently for 2–3 minutes until warmed through (do not boil).
    • Pour into 4 cups and serve immediately while hot.

Ready when: Drink is steaming and warm to the touch

Tip: Avoid boiling after adding coconut milk so it keeps a smooth, creamy texture.

Tips
  • For a thinner drink, add up to ½ cup (120 ml) more water or milk in step 5. For a thicker, more porridge-like consistency, reduce the water slightly or cook longer.
  • Toast the black rice in a dry pan for 1–2 minutes before rinsing to deepen its nutty flavor.
  • Strain the blended mixture through a fine-mesh strainer if you prefer a smoother, more refined texture with no grain particles.
  • Serve in mugs or bowls, optionally garnished with toasted sesame seeds, a sprinkle of black rice, or a light drizzle of extra coconut milk.
Storage & reheating

Store in an airtight container in the refrigerator for up to 3 days. To reheat, warm gently in a saucepan over medium heat, stirring frequently and adding a splash of water or milk if it has thickened. Do not freeze, as the creamy texture may separate upon thawing.

Substitutions
  • packed brown sugar → white sugar or palm sugar. Use the same amount. Palm sugar adds a more complex, caramel-like sweetness traditional in Southeast Asian drinks.
  • fresh ginger → ¾ teaspoon ground ginger or ½ teaspoon dried ginger. Ground or dried ginger is more concentrated, so use less. Add it in step 3 (with the sugar) rather than at the start to preserve its flavor.
  • full-fat coconut milk → oat milk, almond milk, or soy milk. Use the same amount. The drink will be less creamy and rich but still delicious. Choose unsweetened plant-based milks to control sweetness.
  • black rice (also called forbidden rice) → brown rice, short-grain white rice, or glutinous rice. Black rice has a nutty flavor and purple-black color unique to this drink; substitutes will change the taste and appearance but the method stays the same.
