Cabbage Slaw with Turmeric and Black Cumin
A crisp, lightly spiced Indian-style slaw with ground turmeric, toasted black cumin seeds, and fresh lemon juice. The raw cabbage stays tender and slightly tangy, while the warm spices add depth and earthiness. It's a vibrant side dish for curries, grilled proteins, or grain bowls—or enjoy it on its own with warm bread.

Steps
Before you start
- Have all ingredients at room temperature
- Toast the black cumin seeds just before making the slaw so they release their aroma
- Use a sharp knife or mandoline to slice the cabbage uniformly so it wilts evenly
Toast black cumin seeds
- Place the black cumin seeds in a small dry skillet over medium heat.
- Toast for 1 to 2 minutes, stirring constantly, until fragrant and just beginning to darken.
- They should smell nutty and warm.
- Pour onto a plate to cool slightly and prevent further cooking.

Ready when: Seeds become fragrant and slightly darker in color
Tip: Don't let them burn—black cumin seeds are delicate and can turn bitter quickly. Keep the heat moderate and stay at the stove.
Prepare the cabbage
- On a cutting board, slice the cored green cabbage into very thin shreds (about 1/8 inch / 3 mm thick).
- You can use a sharp knife, a mandoline slicer, or the slicing blade of a food processor.
- Place all the shredded cabbage in a large mixing bowl.

Ready when: Cabbage is finely shredded and uniformly thin
Tip: Use a mandoline or processor if you have one—it speeds up the work and ensures even slicing so every bite has the same tender texture.
Make the dressing
- In a small bowl, whisk together the ground turmeric, sea salt, neutral oil, fresh lemon juice, and minced ginger (if using).
- Stir until the turmeric and salt dissolve and the mixture is smooth.
- The dressing should be bright yellow and fragrant.

Ready when: Turmeric and salt are fully dissolved and dressing is uniform in color
Tip: Whisk well so the turmeric doesn't clump—a few extra whisks ensure a smooth, evenly colored dressing.
Combine and season
- Pour the warm dressing (which should still be slightly warm from the toasted spices) over the shredded cabbage.
- Add the toasted black cumin seeds and the fresh cilantro (if using).
- Toss everything together with a large spoon or your hands until the cabbage is evenly coated and the spices are distributed throughout.
- The cabbage will begin to soften and release its liquid.

Ready when: All cabbage is coated with the golden dressing, black cumin seeds are evenly distributed
Tip: Don't skip tossing thoroughly—you want every strand of cabbage to taste the dressing and spices.
Rest and serve
- Let the slaw rest for 5 minutes at room temperature.
- This allows the cabbage to soften slightly while staying crisp, and lets the flavors meld together.
- Taste and adjust salt or lemon juice if needed.
- Serve chilled or at room temperature as a side dish.

Good to know
Tips
- Toast the black cumin seeds fresh right before assembling the slaw—their aroma fades quickly, and toasting releases their full nutty, slightly floral character.
- If you prefer a softer slaw, let it rest for 10 to 15 minutes instead of 5; if you like more crunch, serve it right away after tossing.
- This slaw is excellent alongside curries, biryani, grilled meats, or simple dal and rice. It also works as a topping for grain bowls or wraps.
- For extra warmth, add a tiny pinch of cayenne pepper or finely minced green chili to the dressing.
Make ahead
You can shred the cabbage up to 4 hours ahead and store it in an airtight container in the refrigerator. Toast the black cumin seeds no more than 15 minutes before serving so they stay fragrant. Make the dressing just before tossing to keep the flavors bright and the cabbage crispest.
Storage & reheating
Store in an airtight container in the refrigerator for up to 2 days. The cabbage will gradually wilt and release more liquid over time. Serve chilled or bring to room temperature. Do not freeze.
Substitutions
- black cumin seeds (kalonji) → Regular cumin seeds (jeera) or nigella seeds. Use the same amount. Regular cumin is slightly warmer and less floral; nigella seeds are closer in flavor to black cumin.
- fresh lemon juice → Fresh lime juice or white vinegar. Use the same amount. Lime gives a similar bright acidity; vinegar adds a sharper tang.
- green cabbage, cored → Purple (red) cabbage or napa cabbage. Purple cabbage creates a striking color and is slightly sweeter; napa cabbage is more delicate and wilts faster.
- neutral oil (vegetable, groundnut, or sunflower) → Sesame oil or coconut oil. Sesame oil adds an aromatic, nutty flavor (use only 1½ teaspoons for a milder effect); coconut oil adds subtle sweetness.
