Budget Honey Walnut Spirals
Delicate, crispy phyllo pastries wrapped around a warm spiced walnut filling, then drizzled with honey. These golden spirals are a stunning Mediterranean-inspired treat that taste luxurious but are budget-friendly to make. Perfect for serving with coffee or as a simple dessert.
Steps
Before you start
- Preheat your oven to 375°F (190°C)
- Thaw phyllo dough at room temperature for 1 hour if frozen
- Have a damp kitchen towel ready to keep unused phyllo from drying out
- Finely chop or pulse walnuts to medium-fine crumbs
Prepare the filling
- In a small bowl, combine the finely chopped walnuts, 0.25 cup (85 g) honey, cinnamon, and salt.
- Stir until the mixture is evenly moistened and holds together when pressed.
- The filling should be slightly sticky but not runny.

Ready when: Filling is evenly moistened and holds together
Tip: Chop the walnuts medium-fine; too coarse and they won't bind, too fine and they'll become paste-like.
Set up your workspace
- Line a baking sheet with parchment paper.
- Place the stack of thawed phyllo on a clean, dry work surface.
- Have the melted butter and a pastry brush within arm's reach.
- Cover the phyllo stack loosely with a barely damp kitchen towel to prevent the sheets from drying out as you work.

Ready when: Workspace is organized and phyllo is protected
Tip: Phyllo dries out fast—keep unused sheets covered at all times or they'll shatter when you try to roll them.
Roll the first spiral
- Peel back one phyllo sheet and lay it flat on your work surface with the shorter edge facing you.
- Brush it lightly with melted butter using about 1 teaspoon per sheet.
- At the bottom third, sprinkle 2 tablespoons of the walnut filling in a horizontal line, leaving 1 inch on each side.
- Fold the sides in slightly, then tightly roll the sheet away from you into a log.
- Gently coil the log into a spiral shape on the prepared baking sheet, tucking the end underneath.
- Repeat with the remaining phyllo sheets and filling, spacing the spirals about 2 inches apart.

Ready when: All 12 spirals are rolled and arranged on the baking sheet
Tip: If phyllo tears, don't worry—patch it with a small piece and brush with butter. Keep the spiral coils fairly loose so heat circulates inside.
Brush and bakeOven 375°F / 190°C
- Brush the tops of all the spirals lightly with the remaining melted butter.
- Place the baking sheet in the preheated 375°F (190°C) oven.
- Bake for 22–25 minutes, until the pastry is deep golden brown and crispy-sounding when tapped lightly.

Ready when: Pastry is deep golden brown and crispy
Tip: Don't open the oven door in the first 15 minutes—this lets steam escape and phyllo crisps better.
Cool and drizzle
- Remove the baking sheet from the oven and let the spirals cool on the sheet for 2 minutes.
- Warm the 0.33 cup (115 g) honey gently in a small saucepan over low heat or in the microwave for 15 seconds.
- Drizzle the warm honey generously over the still-warm spirals, letting it pool slightly in the coils.
- Transfer the spirals to a cooling rack to cool further.

Ready when: Honey is fluid and spirals are warm enough to absorb it
Tip: Drizzle while the pastry is warm so the honey soaks into the layers; cold pastry won't absorb it as well.
Good to know
Tips
- Phyllo sheets vary slightly in thickness and size depending on the brand. If your sheets are especially fragile, you can use two sheets per spiral for a sturdier result, using the same amount of filling.
- For extra crunch, sprinkle a pinch of sugar on top of each spiral before baking.
- These pastries pair beautifully with a small cup of strong coffee, Greek yogurt, or a chilled glass of sweet dessert wine.
- Make sure your honey is at room temperature or slightly warm when drizzling so it flows easily and soaks into the warm pastry.
Make ahead
Spirals can be shaped (but not baked) up to 8 hours ahead. Wrap the unbaked spirals on the baking sheet tightly in plastic wrap and refrigerate. Bake directly from cold, adding 2–3 minutes to the bake time.
Storage & reheating
Room temperature in an airtight container for up to 2 days (though they are crispest eaten the same day). Do not refrigerate, as this softens the phyllo. These pastries are best enjoyed fresh but not suitable for freezing once baked, as phyllo becomes tough when thawed.
Substitutions
- raw or roasted walnuts → Chopped almonds, pistachios, or pecans. Use the same amount; each nut will add slightly different flavor but the texture remains the same.
- honey → Maple syrup. Use the same amount, though the flavor will be less floral and more woody.
- ground cinnamon → Ground cardamom or a mixture of cinnamon and nutmeg (1 tsp cinnamon + 0.5 tsp nutmeg). Cardamom gives a more sophisticated, aromatic twist; cinnamon-nutmeg blend adds warm depth.
- unsalted butter, melted → Clarified butter or light oil. Oil produces a less rich flavor but works in a pinch; clarified butter gives the most luxurious result.
