Steps

Before you start
  • Preheat your oven to 375 °F (190 °C)
  • Line a 12-cup muffin tin with paper liners or grease it well
  • Have all dry ingredients measured and ready to mix
  1. Mix dry ingredients

    • In a large bowl, whisk together 2 cups (250 g) flour, ¾ cup (150 g) sugar, 1 tsp (5 g) baking soda, ½ tsp (3 g) salt, and 1½ tsp (4 g) cinnamon.
    • If using nutmeg, whisk in ¼ tsp as well.
    • Make a well in the center of the dry ingredients.

Tip: Whisking the dry ingredients ensures even distribution of cinnamon and baking soda so each muffin has consistent flavor.

  2. Combine wet ingredients

    • In a small bowl, whisk together ¾ cup (175 ml) vegetable oil, ½ cup (120 ml) water, and 1 tsp (5 ml) vanilla extract until well combined.
  3. Combine wet and dry

    • Pour the wet ingredients into the well in the dry mixture.
    • Using a wooden spoon or rubber spatula, stir until just combined.
    • The batter should be lumpy—do not overmix.
    • Overmixing develops gluten and makes tough, dense muffins.

Ready when: Batter is just combined with visible flour streaks and lumps

Tip: Stop stirring as soon as you don't see dry flour. A few lumps are fine and will disappear as the muffins bake.

  4. Fold in apples

    • Gently fold the 450 g (about 3 medium) diced apples into the batter using a spatula.
    • Use 10–15 gentle strokes to distribute the apple pieces evenly without overworking the batter.

Ready when: Apple pieces are distributed throughout the batter

Tip: Use diced apples rather than shredded—they hold their shape and provide pleasant texture in each bite.

  5. Fill muffin cups

    • Divide the batter evenly among 12 muffin cups, filling each about two-thirds full (roughly 2½ tablespoons per cup).
    • If using paper liners, fill the liner; if greasing directly, fill the cavity.
    • If desired, mix 1 tbsp (3 g) cinnamon and 1 tbsp (12 g) sugar and sprinkle about ¼ tsp of the mixture onto each muffin top.

Ready when: All 12 cups are evenly filled

Tip: Use an ice cream scoop or a 2-tablespoon scoop to fill cups evenly, which ensures consistent baking time.

  6. Bake muffinsOven 375°F / 190°C

    • Place the muffin tin in the preheated 375 °F (190 °C) oven.
    • Bake for 22–24 minutes until a toothpick inserted into the center of a muffin comes out with just a few moist crumbs or is clean.
    • The tops should be light golden brown and spring back when lightly pressed.

Ready when: Toothpick inserted in center comes out with a few moist crumbs; tops are light golden and spring back when pressed

Tip: Don't open the oven door in the first 18 minutes. Start checking at 20 minutes so you don't overbake and dry them out.

  7. Cool in pan

    • Remove the tin from the oven and let the muffins cool in the pan for 10 minutes.
    • This allows them to set and firm up so they come out cleanly without breaking.

Ready when: Muffins have cooled enough to handle and release easily from the pan

  8. Turn out and cool completely

    • Turn the muffins out onto a wire cooling rack.
    • Let them cool completely, about 30–40 minutes, before serving.
    • They'll continue to firm up as they cool.

Ready when: Muffins are completely cool and ready to eat

Tip: Cool on a rack, not on a plate, so air can circulate underneath and prevent the bottoms from becoming soggy.

Good to know

Tips
  • Dice the apples into small, uniform ¼-inch pieces so they distribute evenly and cook through in the baking time. Larger pieces may stay hard in the center.
  • Don't skip the 10-minute cooling time in the pan—it prevents the muffin bottoms from sticking and breaking when you turn them out.
  • These muffins are egg-free and dairy-free, making them budget-friendly and suitable for vegan diets. The oil provides moisture and richness.
  • For a streusel topping, mix 2 tbsp flour, 2 tbsp sugar, 1 tbsp cinnamon, and 1 tbsp melted oil and sprinkle on top before baking.
Make ahead

Batter can be mixed and stored, covered, in the refrigerator for up to 4 hours before baking. Add 1–2 minutes to baking time if baking from cold. Alternatively, bake and cool the muffins, then freeze, and reheat as needed.

Storage & reheating

Room temperature in an airtight container for up to 3 days. Refrigerator in an airtight container for up to 5 days. Freezer in a freezer-safe bag or container for up to 2 months. To reheat: thaw at room temperature or wrap in foil and warm in a 300 °F (150 °C) oven for 8–10 minutes until soft.

Substitutions
  • Vegetable oil → Canola oil or any neutral oil. Any flavorless oil works; avoid olive oil as it will overpower the muffins.
  • Medium apples (any variety), peeled, cored, and finely diced → Frozen diced apples or 1½ cups (175 g) grated apple (about 2 medium apples). If using grated apple, squeeze out excess moisture first. Frozen apples should be thawed and drained. Either option will work well.
  • Water → Unsweetened applesauce or plant-based milk. Applesauce adds moisture and a subtle apple flavor; use 1:1 ratio. Plant-based milk (almond, oat) works but adds no flavor boost.
  • Vanilla extract → Almond extract or omit. Almond extract adds a pleasant note (use ½ tsp). The recipe works fine without vanilla.
