Baked Meatball Subs

Tender, parmesan-flecked beef meatballs are baked (no pan-frying splatter), simmered in marinara, then tucked into toasted hoagie rolls and blanketed with melted mozzarella. A classic Italian-American sandwich that is easy to make for a crowd.

    • Preheat the oven to 425°F (220°C) and line a large rimmed baking sheet with parchment.
    • In a large mixing bowl, stir the panko and milk together and let it sit for 5 minutes, stirring once, so the crumbs absorb the milk.
    • Use this time to grate the onion, mince the garlic, chop the parsley, and grate the Parmesan.

    Tip: Grate the onion rather than chopping it so it melts into the meat and doesn't leave crunchy pieces.

  2. Mix the meatballs

    • Add the egg, grated onion with its juices, garlic, ½ cup Parmesan, parsley, oregano, salt, and pepper to the soaked panko and stir to combine.
    • Add the cold ground beef.
    • Using your hands, gently fold and press the mixture together for about 30 seconds, just until the seasonings are evenly distributed.

    Tip: Overmixing makes tough, rubbery meatballs. Stop as soon as everything is evenly combined.

  3. Shape the meatballs

    • Wet your hands lightly with water to prevent sticking.
    • Portion the mixture into 18 equal balls, about 2 tablespoons (roughly 50 g) each and 1½ inches (4 cm) wide.
    • Roll each gently between your palms, then place on the lined baking sheet about 1 inch (2.5 cm) apart.

    Tip: Roll with light pressure; packing them tightly makes them dense.

  4. Bake the meatballsOven 425°F / 220°C

    • Bake on the center rack at 425°F (220°C) for 16–18 minutes, until the tops and edges are deeply browned and a thermometer inserted into the center of a meatball reads 160°F (71°C).

  5. Simmer in marinara

    • While the meatballs bake, pour the marinara into a medium saucepan and warm over medium-low heat.
    • When the meatballs come out of the oven, transfer them to the sauce with a spoon, cover, and simmer gently for 10 minutes, turning once or twice, so they absorb flavor and the sauce thickens slightly.

  7. Fill the subs

    • Return the toasted rolls to the sheet, cut-side up.
    • Spoon about 2 tablespoons of sauce into each roll, then nestle 3 meatballs in each.
    • Spoon another 2–3 tablespoons of sauce over the meatballs, then top each with about 1⅓ oz (37 g) mozzarella, overlapping the slices so the cheese covers the meatballs and reaches the edges of the roll.

  8. Melt the cheeseOven 425°F / 220°C

    • Sprinkle the 2 tablespoons Parmesan over the subs.
    • Bake at 425°F (220°C) for 5–6 minutes, until the mozzarella is fully melted and bubbling with a few browned spots.
    • For extra color, switch to the broiler for the last 30–60 seconds, watching constantly.

  9. Rest and serve

Make ahead

Shape the raw meatballs up to 24 hours ahead, cover, and refrigerate on the lined sheet. Or bake and simmer the meatballs in sauce up to 3 days ahead; reheat gently on the stove, then toast the rolls and assemble and bake the subs just before serving.

Storage & reheating

Store leftover meatballs and sauce separately from the rolls in an airtight container in the refrigerator for up to 4 days. Assembled subs are best eaten right away and should not sit at room temperature beyond 2 hours. Freeze cooked meatballs in sauce for up to 3 months; thaw overnight in the refrigerator. Reheat in a covered saucepan over medium-low heat until steaming hot (165°F / 74°C), then assemble with fresh toasted rolls and cheese.

Substitutions
  • ground beef, 80/20 → Half ground beef and half ground pork, or a beef/pork/veal blend. Pork adds richness and tenderness; keep the total weight at 1½ lb (680 g).
  • panko breadcrumbs → Fresh or plain dry breadcrumbs. Use the same amount of dry breadcrumbs; the soaking time stays the same.
  • low-moisture mozzarella → Provolone slices. Provolone gives a sharper flavor and melts well; use the same weight.
  • whole milk → Water or low-sodium beef broth. Use the same amount; meatballs will be slightly less rich.
