Steps
Before you start
- Preheat your oven to 350°F (175°C) at least 15 minutes before baking
- Line a 9×5-inch (23×13 cm) loaf pan with parchment paper or lightly butter and flour it
- Bring eggs to room temperature for 20 minutes if you have time (this helps the batter emulsify better)
- Pat strawberries dry with paper towels to prevent excess moisture in the loaf
Cream butter and sugar
- In a medium bowl, beat the softened butter and granulated sugar together with an electric mixer on medium speed for 3–4 minutes, scraping down the sides halfway through.
- The mixture should be light, fluffy, and pale yellow.
- This step incorporates air into the batter, which helps the loaf rise evenly.

Ready when: Mixture is light, fluffy, and pale in color
Tip: Don't skip the creaming step—it's essential for a tender crumb in this grain-free loaf.
Add eggs and vanilla
- Add the eggs one at a time, beating well after each addition (about 30 seconds per egg).
- Pour in the vanilla extract and mix until fully incorporated, about 30 seconds.
- The batter may look slightly curdled at this point, which is normal.

Ready when: All eggs are fully mixed in and batter is combined
Tip: Add eggs slowly to prevent the batter from breaking and to ensure proper emulsification.
Combine dry ingredients
- In a small bowl, whisk together the almond flour, baking powder, and salt until evenly distributed.
- This ensures the leavening agent is evenly dispersed throughout the loaf.

Ready when: Dry mixture is uniform with no lumps of baking powder visible
Tip: Whisk the dry ingredients well—almond flour can clump, especially if it's been stored in the fridge.
Fold in dry ingredients
- Gently fold the dry ingredient mixture into the wet ingredients using a spatula or wooden spoon, stirring just until combined.
- Do not overmix—almond flour batters become tough if worked too much.
- A few small streaks of dry mix are fine; mix out only the visible streaks.

Ready when: Dry ingredients are just incorporated with no large streaks visible
Tip: Fold gently and stop as soon as you see no streaks—overmixing almond flour develops gluten from the binding agents and can make the loaf dense.
Fold in strawberries
- Gently fold the halved strawberries into the batter, being careful not to crush them.
- Reserve 4–5 of the best-looking strawberry halves for topping.
- Pour the batter into the prepared loaf pan and smooth the surface with a spatula.
- Arrange the reserved strawberry halves on top, pressing them gently into the batter so they stay in place during baking.

Ready when: Strawberries are evenly distributed and some are pressed into the top
Tip: Pat the strawberries dry before folding—excess moisture can make the loaf soggy. If strawberries are very large, quarter them instead of halving.
Bake the loafOven 350°F / 175°C
- Place the loaf pan in the preheated 350°F (175°C) oven on the middle rack.
- Bake for 42–48 minutes, until a toothpick inserted into the center comes out with just a few moist crumbs (not wet batter).
- The loaf should be golden brown on top and the edges may pull slightly away from the pan.
- The internal temperature should reach 200°F (93°C).

Ready when: Toothpick inserted in center comes out with a few moist crumbs; loaf is golden brown
Tip: Check the loaf at 40 minutes—every oven is different. If the top is browning too quickly, loosely tent it with foil for the remaining time.
Cool in pan
- Remove the loaf from the oven and let it rest in the pan for 10 minutes.
- This allows the structure to set slightly while still warm.
- Then turn it out onto a cooling rack and let it cool to room temperature, about 15 minutes total.

Ready when: Loaf is cool enough to handle and fully set
Tip: Don't skip cooling in the pan—turning it out too soon can cause the loaf to break apart.
Make the glaze
- While the loaf cools, whisk together the powdered sugar, milk, and lemon juice in a small bowl until smooth and pourable.
- The consistency should be like thick cream—if it's too thick, add a few drops more milk; if too thin, add a bit more powdered sugar.
- The lemon juice adds brightness without making the glaze tart.

Ready when: Glaze is smooth, pourable, and uniform
Tip: Make the glaze just before serving so it stays fresh and glossy.
Glaze and serve
- Once the loaf is cool, drizzle the glaze over the top in a light zigzag pattern or let it drip naturally down the sides.
- Let the glaze set for 2–3 minutes before slicing.
- Serve at room temperature or slightly warm.

Ready when: Glaze is set and no longer wet
Tip: If serving the loaf the next day, add the glaze just before serving so it stays fresh and doesn't soak into the loaf.
Good to know
Tips
- Pat strawberries very dry before folding—grain-free loaves are more prone to excess moisture, and wet fruit will make the center soggy.
- Almond flour is denser than wheat flour, so this loaf won't rise as dramatically as a traditional shortcake. The crumb will be moist, tender, and more compact—this is correct.
- For best flavor and texture, use the loaf within 2 days. It's wonderful on day 1 but can dry out slightly by day 3, even when stored properly.
- If you prefer a richer loaf, add an extra egg yolk and reduce the milk in the glaze by 1 tbsp to keep the consistency right.
Make ahead
The loaf (without glaze) keeps well for 2 days and can be made up to 1 day ahead. Cover with plastic wrap or foil at room temperature. Glaze it just before serving for the best appearance and texture.
Storage & reheating
At room temperature: 2 days, covered. In the refrigerator: up to 4 days, wrapped tightly. In the freezer: up to 1 month, wrapped well in plastic wrap and foil. Thaw at room temperature for 1–2 hours before serving. Do not glaze before freezing; add glaze after thawing.
Substitutions
- almond flour → Almond meal (skin-on) or a blend of almond flour and cashew flour. The texture will be slightly coarser, but the loaf will still be moist. Use the same weight.
- fresh strawberries, ripe but firm → Fresh raspberries, blackberries, or blueberries. Use the same weight. Raspberries and blackberries are more delicate—fold them in very gently or scatter them on top after baking.
- vanilla extract → Almond extract (use half the amount, 0.5 tsp) or no extract at all. Almond extract will give a stronger nutty flavor that complements the almond flour. Omit entirely for a cleaner strawberry taste.
- whole milk → Water, or a splash of almond milk. The glaze will work the same way. Water will be slightly less creamy but still delicious.
