Air Fryer Piri Piri Chicken Drumsticks with Lemon-Paprika Marinade

Chicken drumsticks marinate in a bright, fiery blend of piri piri chilies, garlic, lemon and smoked paprika, then air fry until the skin is crisp and the meat is juicy. A little reserved marinade brushed on at the end gives a fresh, glossy finish.

Steps

Before you start
  • Plan for at least 2 hours of marinating (up to 12 hours). Longer than 12 hours and the lemon juice and vinegar make the meat mushy.
  • Wear disposable gloves when handling piri piri chilies and wash your hands and cutting board well afterward. Do not touch your eyes.
  • Most 5–6 qt (4.7–5.7 L) air fryers hold only 4 drumsticks in a single layer, so this recipe cooks 2 batches. If your basket is larger, you can cook all 8 at once for the same time.
  • Have an instant-read thermometer ready. Drumsticks vary in size, so temperature is more reliable than time.
  1. Prep chilies and garlic

    • Put on gloves if you have them.
    • Cut the stems off the 6 piri piri chilies and roughly chop them.
    • Peel and roughly chop the 4 garlic cloves.
    • Finely grate the zest of 1 large lemon, then cut the lemon in half and squeeze 3 tbsp (45 ml) of juice.
    + Show details

Ready when: Chilies and garlic are in small pieces and the zest is a fluffy pile with no white pith.

Tip: Zest the lemon before juicing it. A juiced lemon is nearly impossible to grate.

  2. Blend the marinade

    • Add the chilies, garlic, lemon zest, lemon juice, olive oil, red wine vinegar, smoked paprika, oregano, sea salt, brown sugar and black pepper to a blender.
    • Blend for 30–45 seconds, scraping down once, until you have a thick, brick-red sauce with tiny flecks of chili.
    • Taste a small dab: it should be sharp, salty and spicy.
    • Spoon 3 tbsp (45 ml) into a clean small bowl, cover and refrigerate for brushing later.
    + Show details

Ready when: Sauce is thick, uniformly red-orange and no large chili or garlic pieces remain.

Tip: Reserve the brushing portion now, before any raw chicken touches the marinade. Never reuse marinade that has contacted raw chicken.

  3. Dry and score drumsticks

    • Pat the 8 drumsticks completely dry with paper towels.
    • Use a paring knife to cut 2 slashes, about ¼ inch (6 mm) deep, into the thickest part of each drumstick, cutting down to but not through the bone.
    • The cuts let the marinade in and help the meat cook evenly.
    + Show details

Ready when: Skin feels dry and tacky, not slick, and each drumstick has two clear slashes.

Tip: Dry skin is the key to crispness. Wipe off any surface moisture before marinating.

  4. Marinate the chicken

    • Place the drumsticks in a large bowl or zip-top bag.
    • Pour in the remaining marinade (about 6 tbsp / 90 ml) and turn and massage the chicken so every piece is well coated, working the sauce into the slashes.
    • Cover or seal and refrigerate for at least 2 hours and up to 12 hours, turning once if you can.
    + Show details

Ready when: Chicken is evenly coated in a deep red layer of marinade.

Tip: Do not marinate longer than 12 hours. The lemon juice and vinegar will start to make the meat mushy.

  5. Preheat the air fryerOven 400°F / 205°C

    • Preheat the air fryer to 400°F (200°C) for 3 minutes.
    • Remove the chicken from the fridge and let excess marinade drip back into the bowl, but do not wipe the drumsticks.
    • A thin coating helps color, though thick clumps of garlic can scorch.

Ready when: Air fryer shows 400°F (200°C) or the preheat cycle ends.

Tip: Scrape off any big clumps of garlic or chili. They can burn and turn bitter.

  6. Air fry first sideOven 400°F / 205°C

    • Arrange 4 drumsticks in a single layer in the basket, with space between them and the thicker ends toward the outside.
    • Air fry at 400°F (200°C) for 12 minutes without opening the basket.
    + Show details

Ready when: Skin is deep orange-red, starting to blister and no longer looks wet.

Tip: Do not stack or crowd the drumsticks. Hot air needs to circulate for crisp skin.

  7. Flip and finish batch oneOven 400°F / 205°C

    • Turn the drumsticks over with tongs and air fry for another 10–12 minutes at 400°F (200°C).
    • Insert an instant-read thermometer into the thickest part without touching bone: it should read at least 175°F (80°C).
    • Drumstick meat is best when cooked past 165°F (74°C).
    • Cook 2 minutes more if needed.
    • Transfer to a plate and tent loosely with foil.

Ready when: Skin is crisp and deeply browned with charred spots at the edges, juices run clear and the thermometer reads 175°F (80°C).

Tip: If the tops of the drumsticks are browning too fast, lower the air fryer to 380°F (195°C) for the last few minutes.

  8. Cook second batchOven 400°F / 205°C

    • Load the remaining 4 drumsticks and repeat: 12 minutes at 400°F (200°C), flip, then 10–12 minutes more until the thickest part reads at least 175°F (80°C) and the skin is crisp.
    • Add 1–2 minutes if the air fryer was slow to reheat.

Ready when: Skin is crisp and deep red-brown and the thermometer reads 175°F (80°C).

Tip: Check the temperature of every drumstick in the thickest part, since sizes vary.

  9. Brush and rest

    • Brush all the cooked drumsticks lightly with the reserved 3 tbsp (45 ml) of marinade, using about 1 tsp on each.
    • Let them rest on a plate for 5 minutes so the juices settle and the fresh marinade mellows.

Ready when: Drumsticks look glossy and red and the skin stays crisp.

Tip: Only use the marinade that was set aside before the chicken went in.

  10. Garnish and serve

    • Sprinkle with the chopped parsley, if using.
    • Serve hot with the lemon wedges to squeeze over, alongside rice, fries or a green salad.

Tip: A squeeze of lemon right before eating brightens the heat of the chilies.

Good to know

Tips
  • For milder chicken, cut the chilies open and discard the seeds and white membranes before blending.
  • Keep drumsticks from touching in the basket so the skin crisps on all sides.
  • Trust the thermometer: the meat near the bone should reach 175°F (80°C) to be tender, not rubbery.
  • Spoon any leftover reserved marinade over rice or roasted vegetables for extra flavor.
Make ahead

The marinade keeps in a sealed jar in the fridge for up to 3 days, or you can freeze it for up to 2 months. The drumsticks can be marinated in the fridge for up to 12 hours before cooking.

Storage & reheating

Room temperature: no more than 2 hours. Fridge: store cooled drumsticks in an airtight container for up to 3 days. Freezer: up to 2 months, wrapped well. Reheat from the fridge in the air fryer at 375°F (190°C) for 5–7 minutes, or from frozen after thawing overnight, until steaming hot and 165°F (74°C) inside.

Substitutions
  • fresh piri piri (African bird's eye) chilies → 4 dried piri piri or árbol chilies (soaked in hot water for 15 minutes), or 2 fresh red Thai chilies. Adjust to taste. Thai chilies are similar in heat, and dried ones give a deeper, smokier flavor.
  • smoked paprika → sweet paprika. The flavor will be less smoky but still bright and colorful.
  • red wine vinegar → white wine vinegar or extra lemon juice. Any mild acid works. Use the same amount.
  • bone-in, skin-on chicken drumsticks → bone-in, skin-on chicken thighs. Cook 25–30 minutes total at 400°F (200°C), flipping halfway, until 175°F (80°C) inside.
