Turmeric Ginger Baked Chicken Breasts
Juicy oven-baked chicken breasts marinated in a bright blend of fresh turmeric, ginger, lemon, garlic and black pepper. The pepper and olive oil help your body absorb the turmeric, and the marinade doubles as a quick pan glaze.

Steps
Before you start
- Plan ahead: the chicken needs at least 2 hours in the marinade, and up to 12 hours is fine. Do not go past 12 hours, as the lemon juice will turn the texture mushy.
- Turmeric stains countertops, wooden boards, and clothing bright yellow. Use a glass or stainless bowl and a plastic or glass board you do not mind staining.
- Take the chicken out of the fridge 20 minutes before baking so it cooks evenly.
- Use an instant-read thermometer. It is the only reliable way to know the chicken is cooked through but not dry.
Pound the chicken
- Place the chicken breasts on a cutting board, cover with plastic wrap or parchment, and pound the thickest part with a mallet or rolling pin until each breast is an even ¾ inch (2 cm) thick.
- Pat both sides very dry with paper towels.

Ready when: Each breast is the same thickness from end to end, with no thick hump.
Tip: Even thickness is the key to avoiding dry thin ends and undercooked thick centers.
Zest and juice lemons
- Finely grate the zest from the lemons into a large glass or stainless bowl, then halve the lemons and squeeze out 3 tbsp (45 ml) juice.
- Cut any remaining lemon into wedges for serving.

Ready when: You have about 1 tbsp zest and 3 tbsp juice.
Tip: Zest first. A juiced lemon is nearly impossible to zest.
Mix the marinade
- To the bowl, add the olive oil, grated ginger, garlic, turmeric, black pepper, honey, salt, and cumin if using.
- Whisk for 30 seconds until it forms a thick, evenly golden paste with no dry turmeric clumps.

Ready when: Marinade is smooth, bright golden-orange and smells strongly of ginger and lemon.
Tip: Black pepper boosts turmeric's active compound, curcumin, absorption, so do not skip it.
Coat the chicken
- Add the chicken to the bowl and turn each piece, massaging the marinade into every surface, including the underside.
- Cover the bowl tightly, or transfer everything to a zip-top bag and press out the air.

Ready when: Every piece is evenly coated in golden marinade with no bare patches.
Tip: Wash your hands and any surfaces that touched raw chicken right away.
Marinate in the fridge
- Refrigerate the chicken for at least 2 hours and up to 12 hours, turning it once halfway through if you are marinating in a bag.

Ready when: Chicken is deep yellow and the surface looks slightly opaque.
Tip: Over 12 hours, the acid starts to make the meat mealy.
Preheat and set upOven 425°F / 220°C
- About 20 minutes before baking, take the chicken out of the fridge.
- Position an oven rack in the center and preheat the oven to 425°F (220°C).
- Line a rimmed baking sheet with foil and set a wire rack on top if you have one, or lightly oil the foil.

Ready when: Oven reaches 425°F (220°C).
Tip: Foil makes cleanup easy because the marinade will stain a bare pan.
Arrange the chickenOven 425°F / 220°C
- Lift each breast out of the marinade, letting excess drip off, and lay them on the prepared sheet at least 1 inch (2.5 cm) apart.
- Spoon a little of the thick marinade left in the bowl onto the tops, then discard the rest.

Ready when: Breasts sit in a single layer with space between them.
Tip: Do not reuse leftover raw-chicken marinade as a sauce unless you boil it for 3 minutes.
Bake the chickenOven 425°F / 220°C
- Bake at 425°F (220°C) for 18 to 22 minutes, until the surface is deeply golden with a few browned edges.
- Check the thickest part of the largest breast with an instant-read thermometer at 18 minutes.

Ready when: Internal temperature reads 160°F (71°C) in the thickest part; it will rise to 165°F (74°C) while resting. Juices run clear.
Tip: Pull the chicken at 160°F (71°C). Waiting for 165°F in the oven often overcooks it.
Rest the chicken
- Transfer the chicken to a clean cutting board or plate and tent loosely with foil.
- Rest for 5 to 8 minutes without cutting.

Ready when: Temperature reaches 165°F (74°C) after resting.
Tip: Cutting too early lets the juices run onto the board.
Slice and serve
- Slice the chicken against the grain into ½-inch (1 cm) strips.
- Sprinkle with chopped cilantro or parsley and serve with lemon wedges for squeezing.

Ready when: Slices are juicy, white throughout, with a golden crust.
Tip: Serve over rice, quinoa, or roasted vegetables.
Good to know
Tips
- Pounding the chicken to an even thickness is the single best way to prevent dry results.
- Use freshly ground black pepper. It has more piperine than pre-ground, which helps your body absorb the turmeric.
- For extra browning, broil the cooked chicken 1–2 minutes at the end, watching closely since the honey can burn.
- Soak stained plastic containers in sunlight or a baking soda paste to fade turmeric stains.
Make ahead
"Mix the marinade up to 2 days ahead and refrigerate in a sealed jar. Once chicken is added, marinate for up to 12 hours. You can also freeze raw chicken in the marinade in a freezer bag for up to 3 months; thaw overnight in the fridge before baking."
Storage & reheating
"Room temperature: no more than 2 hours. Fridge: store cooked chicken in an airtight container for up to 4 days. Freezer: slice or leave whole, wrap well, and freeze up to 3 months. Reheat gently, covered, in a 325°F (160°C) oven for 10–15 minutes or in a skillet with a splash of water or broth over medium-low heat until hot throughout (165°F / 74°C)."
Substitutions
- ground turmeric → 1 tbsp (about 8 g) finely grated fresh turmeric root. Fresh root gives a brighter, slightly more peppery flavor; wear gloves to avoid stained fingers.
- boneless, skinless chicken breasts → Boneless, skinless chicken thighs (800 g). Thighs are more forgiving. Bake 22–28 minutes until they reach 175°F (80°C).
- honey → Maple syrup. Same amount; it also helps browning.
- fresh lemon juice → Lime juice. Gives a slightly sharper, more tropical flavor.
