Air Fryer Miso-Glazed Salmon Tacos
Crispy-outside, tender salmon fillets glazed with a savory-sweet miso and ginger coating, served in warm corn tortillas with fresh lime crema, shredded cabbage, and cilantro. Ready in under 30 minutes with minimal cleanup.
Steps
Before you start
- Pat salmon dry with paper towels—moisture prevents the glaze from caramelizing
- Preheat air fryer to 400°F (205°C) for 3 minutes
- Have all taco fillings prepped and ready to assemble quickly while salmon is warm
Mix miso glaze
- In a small bowl, whisk together white miso paste, minced ginger, 1 tablespoon lime juice, honey, soy sauce, and toasted sesame oil until smooth and well combined.
- Set aside.

Ready when: glaze is smooth and no lumps of miso remain
Tip: Miso paste can be lumpy—whisk well or stir vigorously to break it up before adding other ingredients
Season and coat salmon
- Pat salmon fillets dry with paper towels.
- Season both sides lightly with kosher salt and black pepper.
- Using a spoon or pastry brush, spread the miso glaze evenly on the flesh side (not the skin) of each fillet, using about half the glaze.

Ready when: salmon is completely dry and glaze covers the flesh side
Tip: Keep the skin dry so it crisps up in the air fryer; don't coat the skin side with glaze
Air fry salmonOven 400°F / 205°C
- Place salmon fillets skin-side down in a single layer in the preheated air fryer basket.
- Air fry at 400°F (205°C) for 8–10 minutes, until the flesh is opaque throughout and flakes easily with a fork.
- The glaze should turn deep golden and slightly caramelized.

Ready when: salmon is opaque, flakes easily, and reaches 145°F (63°C) at the thickest point
Tip: Don't flip the salmon; the skin-down position allows the skin to crisp while the glaze caramelizes on top
Make lime crema
- While salmon cooks, combine Mexican crema (or sour cream) with 2 tablespoons fresh lime juice and minced garlic in a small bowl.
- Stir until smooth and season lightly with salt and pepper.

Ready when: crema is smooth and well mixed
Tip: Make the crema while the salmon air fries so it's ready when you assemble the tacos
Warm tortillas
- While salmon finishes cooking, warm the corn tortillas.
- You can place them directly over a gas flame for 10 seconds per side, or stack them and wrap in a damp paper towel, then microwave for 20 seconds.
- They should be warm and pliable.

Ready when: tortillas are warm and soft
Tip: Warm tortillas are less likely to crack when you fill them
Assemble tacos
- Remove salmon from the air fryer.
- Break each fillet into large flakes (each should yield 3–4 good-sized pieces).
- Lay a warm corn tortilla flat and spread about 1 tablespoon of lime crema down the center.
- Add a small handful of shredded red cabbage and about 2 tablespoons of salmon flakes.
- Top with fresh cilantro and sliced jalapeño if using.

Ready when: each taco is evenly filled and ready to eat
Tip: Work quickly while the salmon is still warm; break it into flakes gently so you get nice chunks, not shreds
Serve immediately
- Transfer tacos to a serving plate and serve right away with lime wedges on the side for squeezing extra juice over each taco.

Tip: These are best eaten fresh while the salmon is still warm and the tortillas are pliable
Good to know
Tips
- Air fryer salmon has crisper skin than pan-seared or baked salmon because the circulating heat browns the surface without drying out the inside.
- Don't skip patting the salmon completely dry—moisture prevents the glaze from caramelizing and the skin from crisping.
- For extra umami depth, add a pinch of white miso to the lime crema as well.
- If your salmon fillets are thicker than ¾ inch (2 cm), add 1–2 minutes to the air fry time and check for doneness with a fork.
Make ahead
The miso glaze and lime crema can each be made up to 1 day ahead and stored in separate airtight containers in the refrigerator. Bring the glaze to room temperature for 10 minutes before coating the salmon. Red cabbage can be shredded and stored in a sealed container for up to 8 hours.
Storage & reheating
These tacos are best enjoyed fresh and warm. Leftover salmon flakes can be refrigerated in an airtight container for up to 2 days (reheat gently in the air fryer at 350°F/175°C for 3 minutes or in the microwave for 30–45 seconds). Do not store assembled tacos. Lime crema keeps refrigerated for up to 4 days.
Substitutions
- white miso paste → red miso paste. Use the same amount; red miso is slightly earthier and more robust than white miso, so the glaze will be deeper in flavor and color
- Mexican crema or sour cream → Greek yogurt mixed with lime juice and garlic. Use ½ cup (120 g) Greek yogurt instead of crema for a tangier, higher-protein topping
- red cabbage → green cabbage or a mix of shredded jicama and carrots. Green cabbage is milder; jicama and carrots add sweetness and crunch
- corn tortillas (5-inch/12 cm) → flour tortillas or lettuce cups. Flour tortillas are larger and softer; lettuce cups (like butter lettuce) make this a low-carb option
