Air Fryer Crispy Onion and Paprika Rice
Fluffy, fragrant rice cooked with sweet paprika and topped with golden, crispy-fried onions. The air fryer creates perfectly crunchy onion strands in minutes, and the stovetop cooking ensures tender, evenly-cooked grains with deep flavor from caramelized onions and smoky paprika.

Steps
Before you start
- Preheat the air fryer to 375°F (190°C)
- Measure rice, broth, and butter before you start cooking
- Slice onions evenly for consistent crisping in the air fryer
Prepare crispy onionsOven 375°F / 190°C
- Pat the sliced onion strips dry with a paper towel—removing moisture is key to crispiness.
- Toss them in a bowl with the neutral oil and a pinch of salt until evenly coated.
- Spread them in a single layer in the preheated air fryer basket.

Tip: Pat the onions very dry; any moisture will steam them instead of crisping them.
Crisp onions in air fryerOven 375°F / 190°C
- Air fry at 375°F (190°C) for 12–14 minutes, shaking the basket halfway through (around 6–7 minutes) to ensure even browning.
- The onions are done when deep golden brown and crispy; they may still feel slightly soft when warm but will crisp up as they cool.
- Remove to a paper towel and set aside.

Ready when: Onions are deep golden brown and crispy when cooled
Tip: Shake the basket midway to prevent any pale spots; don't skip this step.
Toast rice and cook aromatics
- While the onions crisp, melt butter in a medium saucepan over medium heat.
- Add the diced onion and cook, stirring occasionally, for 3–4 minutes until softened and beginning to caramelize.
- Add the rice to the pan and stir constantly for 1–2 minutes.
- You'll hear the rice grains clicking against the pan and smell a nutty aroma—this toasts the starches and improves flavor.

Ready when: Rice grains are glossy and click against the pan; you smell a nutty aroma
Tip: Don't skip the toasting step; it prevents mushy rice and adds depth.
Add broth and seasonings
- Pour the vegetable broth into the pan with the rice.
- Add the smoked paprika and stir well to combine.
- Bring the mixture to a boil (about 1–2 minutes), then reduce the heat to low and cover tightly with a lid.

Ready when: Mixture comes to a rolling boil
Simmer rice until tender
- Keep the heat on low and simmer covered for 15–18 minutes.
- Do not lift the lid; the steam needs to stay in the pan to cook the rice evenly.
- The rice is done when all the liquid is absorbed and the grains are tender but still have a slight bite (not mushy).
- You should hear very little sound from the pan.

Ready when: All liquid is absorbed, grains are tender, no liquid remains when you tilt the pan
Tip: Resist the urge to open the lid; each peek releases steam and lengthens cooking time.
Rest and fluff rice
- Remove from heat but keep the lid on for 5 minutes.
- This allows any remaining moisture to distribute and the rice to finish cooking gently with residual heat.
- Remove the lid and fluff with a fork, breaking up any clumps.
- Season with salt and black pepper to taste.

Ready when: Rice is fluffy and grains are separate
Tip: Fluffing with a fork instead of stirring keeps the grains intact.
Combine and serve
- Transfer the rice to a serving dish and top with the crispy onion strands just before serving.
- Toss gently to combine, or serve the onions on the side so diners can add as much as they like.

Tip: Add crispy onions just before serving to keep them crunchy; if mixed in too early, they'll soften.
Good to know
Tips
- The key to non-mushy rice is not lifting the lid during simmering. Every time you peek, you release steam and add extra cooking time.
- For extra color and nutrition, stir in ½ cup (60 g) of frozen peas or corn during the last 2 minutes of simmering.
- If your air fryer is smaller than 4 quarts, you may need to crisp the onions in two batches to avoid crowding, which prevents crisping.
- Serve immediately after topping with crispy onions for the best crunch; the onions will absorb moisture and soften if left to sit.
Make ahead
The rice can be cooked up to 1 day ahead. Reheat gently in a saucepan over low heat with a splash of water, stirring occasionally, until warm (about 5 minutes). Crisp the onions fresh on the day of serving for maximum crunch.
Storage & reheating
Store cooked rice in an airtight container in the refrigerator for up to 4 days. Crispy onions are best served fresh but can be stored in an airtight container at room temperature for up to 2 days (they will soften slightly). Freeze cooked rice in freezer bags for up to 3 months; thaw in the refrigerator and reheat gently on the stovetop.
Substitutions
- vegetable broth → chicken broth. Adds richness and works well with paprika; use the same amount.
- smoked paprika → regular (non-smoked) paprika. Use the same amount; the rice will be slightly less smoky in flavor but equally delicious.
- long-grain white rice → jasmine or basmati rice. Both cook similarly; reduce the broth slightly to 2.5 cups (590 ml) as these varieties are sometimes fluffier.
- unsalted butter → olive oil. Use 1.5 tablespoons (22 ml) for a lighter version with a Mediterranean flavor.
