Air Fryer Charred Broccoli and Crispy Shallot Dip

A French-inspired dip that combines air-fried charred broccoli with creamy Gruyère and crispy shallots. The broccoli is cooked until the edges blacken and caramelize, then folded into a silky crème fraîche and sour cream base with nutmeg and thyme. Crispy shallots cooked separately in the air fryer add textural contrast and a sweet, savory finish. Serve warm with crusty bread, crackers, or vegetables.

Steps

Before you start
  • Read the recipe: you'll cook broccoli and shallots in two separate air fryer batches
  • Preheat your air fryer to 400°F (200°C) for at least 3 minutes
  • Have all ingredients measured and the cream base assembled before air frying begins
  1. Prepare the cream base

    • In a medium bowl, whisk together the crème fraîche, sour cream, grated Gruyère, minced garlic, chopped thyme, nutmeg, and lemon juice until smooth.
    • Season lightly with salt and pepper.
    • Set aside at room temperature.

Ready when: mixture is smooth and fully combined

Tip: Whisk gently so the Gruyère distributes evenly without clumping. Don't overmix.

  2. Season and air-fry broccoliOven 400°F / 205°C

    • Pat the broccoli florets very dry with paper towels.
    • In a bowl, toss the broccoli with 1½ tablespoons (22 ml) olive oil, ½ teaspoon salt, and a few grinds of pepper.
    • Spread in a single layer in the air fryer basket (work in one batch if necessary, or use two baskets).
    • Air fry at 400°F (200°C) for 12–14 minutes, shaking the basket halfway through, until the florets are deeply browned on the edges and the florets feel tender when pierced with a fork.
    • Some blackening on the tips is desirable.

Ready when: florets are deeply browned with blackened edges and tender when pierced with a fork

Tip: Pat the broccoli very dry so it chars instead of steaming. Don't overcrowd the basket; the florets need air circulation to crisp.

  3. Air-fry the shallotsOven 400°F / 205°C

    • While the broccoli cooks, toss the sliced shallots with 1 tablespoon (15 ml) olive oil, a pinch of salt, and a grind of pepper in a small bowl.
    • Once the broccoli comes out, spread the shallots in a single layer in the air fryer basket (or use a small separate basket if available).
    • Air fry at 400°F (200°C) for 4–6 minutes, shaking the basket once halfway through, until the shallots are golden, crispy, and smell sweet and caramelized.

Ready when: shallots are golden, crispy, and fragrant with no pale, soggy bits remaining

Tip: Keep an eye on the shallots toward the end—they go from golden to burnt quickly. If they finish before the broccoli, place them on a plate to cool.

  4. Fold broccoli into cream base

    • Remove the broccoli from the air fryer and let it cool for 1–2 minutes.
    • Chop the charred florets into rough ½-inch (1 cm) pieces.
    • Fold the broccoli into the cream base until just combined, breaking up some florets slightly so the dip is creamy but still has texture.

Ready when: broccoli is folded in with some texture remaining and no lumps of cream

Tip: Don't overmix; a few broccoli pieces can stay larger for nice texture in the dip.

  5. Finish and serve

    • Transfer the warm broccoli dip to a serving bowl.
    • Top generously with the crispy shallots.
    • Taste and adjust seasoning with salt, pepper, and a pinch more nutmeg or thyme if desired.
    • Serve warm with crusty bread, crackers, or raw vegetables.

Ready when: dip is warm and ready to serve with crispy shallots on top

Tip: If the dip cools down and firms up, you can gently warm it in the air fryer at 325°F (160°C) for 3–4 minutes, stirring once halfway through.

Good to know

Tips
  • Pat the broccoli completely dry before air frying so the florets char and crisp rather than steam. Moisture is the enemy of caramelization.
  • Don't skip the shallot layer—the sweet, savory crispiness adds essential contrast and flavor to the creamy dip. They elevate the dish from good to memorable.
  • For a deeper savory note, add ½ teaspoon of Dijon mustard to the cream base. It won't overpower but will deepen the flavor profile.
  • If you don't have an air fryer large enough for both batches, cook the broccoli first, let it rest on a plate, then air fry the shallots. The broccoli will stay warm enough to fold into the cream base.
Make ahead

The cream base can be made up to 4 hours ahead, covered, and kept in the refrigerator. Bring it to room temperature 15 minutes before air frying the broccoli and shallots. Air fry just before serving for the best crispy texture.

Storage & reheating

Store leftover dip in an airtight container in the refrigerator for up to 3 days. The crispy shallots will soften; store them separately in a small container and sprinkle on top just before serving. To reheat, place the dip in an oven-safe dish and warm in a 325°F (160°C) oven for 8–10 minutes, or reheat in the air fryer at 325°F for 5–7 minutes, stirring once. Do not freeze.

Substitutions
  • crème fraîche → Greek yogurt (full-fat, plain). Use the same amount. The dip will be slightly tangier and less rich, but still creamy. Whisk it smooth before mixing with sour cream.
  • Gruyère cheese, finely grated → Emmental or aged Comté cheese. Both have a similar nutty, sweet character. Grate finely and use the same amount.
  • fresh thyme leaves → fresh tarragon or chervil. Use the same amount, finely chopped. Tarragon adds a licorice note; chervil is more delicate and herbaceous. Avoid dried herbs, which can be overpowering.
  • shallots → thinly sliced red onion. Red onion will be slightly sharper and less sweet when crisped. Use the same amount and monitor closely so they don't burn.
