Steps
Before you start
- Preheat your air fryer to 375°F (190°C) for at least 5 minutes
- Use plump, fresh-seeming dried apricots (not rock-hard); if very dry, soak them in warm water for 3 minutes to soften slightly, then pat dry
- Have all ingredients measured and ready before you start stuffing
Cook the filling
- Melt 1 tablespoon (14 g) butter in a small skillet over medium heat.
- Add the minced onion and cook for 2–3 minutes, stirring occasionally, until softened and fragrant.
- Add the minced garlic and cook for another 30 seconds.
- Add the ground beef and break it apart with a wooden spoon, cooking for 3–4 minutes until no pink remains and the mixture is crumbly.
- Stir in the ground cinnamon, turmeric, cumin, salt, and a pinch of black pepper.
- Cook for 1 minute more until the spices are fragrant.
- Remove from heat and let cool for 2 minutes.

Ready when: Ground beef is fully cooked with no pink, and mixture smells warm and spiced
Tip: Don't skip cooling—warm filling is too soft to stuff into apricots without breaking them.
Stir in pistachios
- Once the beef mixture has cooled slightly, fold in the finely chopped roasted pistachios.
- Mix gently until evenly distributed.
- The filling should be moist but not wet, and will hold together loosely.

Ready when: Pistachios are evenly mixed throughout the beef
Stuff the apricots
- Pat the dried apricots dry with a paper towel.
- Using a small sharp knife, cut a slit in the side of each apricot (opposite the stem end), creating an opening about ½ inch wide but not cutting all the way through—the apricot should still hold together.
- Gently open each apricot and place about ½ teaspoon (2.5 g) of the beef-pistachio filling inside.
- Press the apricot gently closed around the filling.
- Work quickly so the filling doesn't cool and harden.

Ready when: All 24 apricots are stuffed and partially closed around the filling
Tip: Don't overstuff—a teaspoon of filling per apricot is enough. Too much will burst out during cooking.
Air fry until crispyOven 375°F / 190°C
- Arrange the stuffed apricots seam-side up in a single layer in your air fryer basket (work in two batches if needed, depending on basket size).
- Air fry at 375°F (190°C) for 12 minutes.
- Shake the basket gently halfway through (at 6 minutes) to ensure even browning.
- The apricots should be caramelized and slightly darkened on the edges, and the filling should be heated through.

Ready when: Apricots are golden-brown to caramel-colored at the edges, filling is hot when tested with a fork
Tip: Don't overcrowd the basket; air needs to circulate for even crisping. If your air fryer is small, cook in two batches.
Cool and serve
- Transfer the stuffed apricots to a clean plate and let them rest for 2–3 minutes before serving.
- They will continue to crisp up slightly as they cool.
- Serve warm or at room temperature.

Good to know
Tips
- Choose plump, soft dried apricots from a quality source—hard or ancient apricots won't soften in the air fryer and will be unpleasant to bite. If yours are very dry, briefly soak them in warm water before stuffing.
- The air fryer's dry heat caramelizes the apricots' natural sugars, intensifying sweetness and creating a pleasant texture contrast with the savory filling. This cannot be replicated on the stovetop as easily.
- These are best served warm or freshly cooled, when the contrast between the crispy apricot exterior and warm, spiced beef center is most pronounced.
- For a Persian-style presentation, serve on a small platter with a dollop of thick yogurt (or Greek yogurt) on the side for dipping, and scatter with a few extra chopped pistachios and a pinch of sumac if you have it.
Make ahead
Stuff the apricots up to 2 hours ahead; cover and refrigerate. Air fry directly from the fridge, adding 1–2 minutes to the cooking time. The filling can also be made up to 1 day ahead and refrigerated; rewarm gently in a skillet before stuffing.
Storage & reheating
Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat gently in a 300°F (150°C) oven for 3–4 minutes, or in the air fryer at 325°F (160°C) for 2–3 minutes, until warm. Do not refrigerate longer than 3 days, as the apricots will dry out. Not suitable for freezing due to texture changes.
Substitutions
- ground beef (85/15 lean-to-fat ratio) → ground lamb or ground turkey. Lamb adds an earthy, traditional Persian flavor (more authentic); turkey is leaner. Use the same weight and cooking time.
- roasted, salted pistachios → toasted pine nuts or finely chopped walnuts. Pine nuts are more delicate; walnuts are earthier. Chop finely and toast lightly before using.
- ground cinnamon → ground cardamom (use ⅛ teaspoon). Cardamom is more fragrant and floral; use sparingly as it is stronger than cinnamon.
- unsalted butter → olive oil (use 1.5 teaspoons). Olive oil lightens the filling slightly and is more Mediterranean; the flavor will shift toward less richness.
