Steps

Before you start
  • Remove açaí puree from freezer 5 minutes before assembly so it softens slightly but stays thick
  • Slice banana just before serving to prevent browning
  • If using frozen berries, thaw them at room temperature for 5 minutes or use straight from the freezer for a colder bowl
  1. Prepare the açaí base

    • Combine thawed açaí puree (8 oz / 226 g), Greek yogurt (½ cup / 120 ml), honey (2 tbsp / 30 ml), and vanilla extract if using (¼ tsp / 1.25 ml) in a medium bowl.
    • Stir gently until smooth and creamy, breaking up any remaining frozen chunks.
    • The mixture should be thick enough to hold toppings without flowing, similar to soft-serve ice cream.

Ready when: Mixture is smooth, creamy, and free of lumps

Tip: If açaí is too thick, stir in 1–2 tbsp of milk or coconut milk to reach the right consistency; if too thin, refrigerate for 2 minutes.

  2. Divide base among bowls

    • Spoon about ⅓ cup (80 ml) of the açaí mixture into each of the 4 bowls (8–10 oz each).
    • Use the back of the spoon to gently spread it into an even layer, leaving room for toppings.

Ready when: Base is distributed evenly in each bowl

Tip: A slight indent in the center makes toppings look intentional and prevents them from sliding off.

  3. Layer fresh berries

    • Scatter blueberries (about ¼ cup / 37.5 g per bowl), strawberry pieces (about 3 tbsp / 32.5 g per bowl), and raspberries if using (about 2 tbsp / 16 g per bowl) over the açaí base in each bowl.
    • Arrange them in loose clusters for a visually appealing presentation.

Ready when: Berries are distributed across all four bowls

Tip: Place the prettiest berries on top for an Instagram-worthy presentation; save any slightly bruised ones for the middle layers.

  4. Add banana slices

    • Peel and slice the banana into ¼-inch (6 mm) rounds just before assembly.
    • Arrange about 12–15 banana slices (roughly 30 g per bowl) on top of or nestled between the berries in each bowl.

Ready when: Banana slices are arranged and visible on top

Tip: Slice banana last and serve immediately to prevent oxidation (browning); if prepping ahead, toss slices lightly with lime juice to slow browning.

  5. Top with granola and coconut

    • Divide granola (about 3 tbsp / 22.5 g per bowl) evenly among the bowls, sprinkling it over the berries and banana.
    • Finish with toasted shredded coconut if using (about 1 tbsp / 6 g per bowl) scattered on top.
    + Show details

Ready when: Each bowl has a visible layer of granola and coconut on top

Tip: Add granola just before serving so it stays crispy and crunchy rather than softening from the moisture in the fruit.

  6. Drizzle and serve

    • If desired, drizzle a few drops of lime juice over each bowl for brightness and a subtle tang.
    • Serve immediately while the granola is crispy and the bowl is cold.

Ready when: Lime juice is visible on the surface

Tip: Lime juice is optional but recommended—it brightens the acai flavors and prevents the banana from browning if you're eating slowly.

Good to know

Tips
  • The acai base should be thicker than yogurt but softer than frozen ice cream—if it's too thick or cold, let it sit at room temperature for 3–5 minutes, stirring occasionally, until it reaches a spoonable consistency.
  • For the most vibrant presentation, use a mix of berries in different colors (blueberries, raspberries, strawberries) and arrange them deliberately rather than dumping them on top.
  • If your açaí puree is very tart, increase honey to 2½–3 tbsp (37–45 ml), or add 1 tbsp of almond butter or nut butter for creaminess and richness without extra sweetness.
  • This recipe doubles easily for larger gatherings: scale all ingredients by 2 and assemble up to 8 bowls following the same steps.
Make ahead

Prepare the açaí base (step 1) up to 12 hours ahead; store it in an airtight container in the refrigerator. Assemble the bowls no more than 30 minutes before eating to keep the granola crispy. If prepping for meal prep, layer the base and berries in jars 1 day ahead, and add granola, banana, and coconut just before eating.

Storage & reheating

Best served fresh immediately after assembly. Leftover açaí base keeps in the refrigerator for up to 3 days, covered. Do not freeze assembled bowls (granola and fruit textures degrade). The açaí base freezes well for up to 3 months in an airtight container or freezer bag; thaw overnight in the refrigerator and restir before use.

Substitutions
  • açaí puree (unsweetened) → 4–6 oz (113–170 g) frozen açaí packets or unsweetened frozen acai berries, thawed and blended smooth. Packets and loose berries are often less concentrated than puree, so you may need a bit more. Blend until completely smooth to avoid grainy texture.
  • plain Greek yogurt → Plain yogurt, coconut cream, or almond yogurt (use ½ cup / 120 ml). Greek yogurt adds tanginess and creaminess; coconut cream creates a richer, more decadent base; other yogurts work but will be slightly thinner.
  • toasted granola (store-bought or homemade) → Toasted almonds, pecans, or walnuts (coarsely chopped), or crispy cereal like granola clusters. Nuts add crunch and protein; choose unsweetened for less sugar. Cereal should be toasted to stay crispy.
  • fresh or frozen blueberries → Blackberries, diced mango, or pomegranate arils. Any fresh, bright berry or stone fruit works; mango adds tropical sweetness; pomegranate adds tartness and crunch.
