Steps

Before you start
  • Preheat oven to 375°F (190°C).
  • Have all custard ingredients at room temperature for smooth mixing.
  • Work with phyllo quickly to prevent drying; keep unused sheets covered with a damp towel.
  • Arrange six 4-ounce (120 ml) ramekins or muffin-cup cavities on a baking sheet.
  1. Prepare phyllo cups

    • Work with one phyllo sheet at a time, keeping the rest covered with a damp towel.
    • Lightly brush one phyllo sheet with melted butter.
    • Layer two more sheets on top, brushing each lightly with butter.
    • Cut the stack into 6 equal squares (roughly 3×3 inches / 8×8 cm).
    • Press each square gently into a muffin cup or ramekin, allowing edges to flare slightly above the rim.
    • Repeat with remaining butter and phyllo to fill all 6 cups.
    • The sheets should be golden and will crisp further during baking.

Ready when: Phyllo layers are in place in all 6 cups

Tip: If phyllo cracks or tears, small breaks are fine—they won't affect the finished custard. Keep unused phyllo covered to prevent it from drying and becoming brittle.

  2. Whisk custard base

    • In a medium bowl, whisk together the coconut milk, heavy cream, eggs, turmeric, cardamom, ginger, honey, vanilla, and salt until completely smooth and evenly golden.
    • The spice oils will integrate as you whisk.
    • Pour the custard mixture evenly into each phyllo cup, filling to about ½ inch below the rim.
    • This prevents overflow as the custard rises slightly during baking.

Ready when: Custard is smooth, evenly colored golden, with no lumps

Tip: Whisking thoroughly ensures the turmeric distributes evenly and prevents the bottom from settling. A few gentle whisks are not enough; whisk for 30–45 seconds.

  3. Bake custard cupsOven 375°F / 190°C

    • Place the baking sheet on the center rack of a 375°F (190°C) oven.
    • Bake for 16–18 minutes, until the phyllo edges are golden brown and crispy and the custard is set but still has a slight jiggle in the very center when gently shaken.
    • The custard will continue to set as it cools.

Ready when: Phyllo edges are deep golden; custard jiggles only slightly in the center

Tip: Do not overbake. A barely set custard with a small jiggle is ideal—residual heat will firm it to creamy perfection. Overbaking dries out the custard and makes it grainy.

  4. Cool and serve

    • Let the custard cups cool in the pan for 2–3 minutes, just until they are cool enough to handle.
    • Slide a small offset spatula or knife around the edge of each cup to loosen it gently from the pan.
    • Top with toasted coconut flakes and chopped pistachios if desired.
    • Serve warm or at room temperature.

Ready when: Cups are loosened and toppings are in place

Tip: Loosening the cups while still slightly warm keeps the phyllo from sticking and sticking to the pan. Once fully cooled, the custard firms more and becomes harder to remove without cracking.

Good to know

Tips
  • Turmeric's earthiness pairs beautifully with coconut and cardamom—this is the spine of the flavor profile. Don't skimp on it.
  • For best phyllo crispness, brush every layer with butter rather than spraying. It promotes even browning and creates crackle.
  • This dessert celebrates the custard, not a crust. The phyllo is a texture accent, not the main event. If it softens slightly, the custard is still delicious.
  • Serve these warm or at room temperature—cold custard loses the fragrant spice notes. If making ahead, let come to room temperature or gently warm.
Make ahead

Phyllo cups can be assembled up to 4 hours ahead. Cover and refrigerate on the baking sheet, then add cold custard and bake as directed—add 1–2 minutes to baking time since the pan will be cold.

Storage & reheating

Store cooled custard cups covered in the refrigerator for up to 3 days. Reheat gently in a 300°F (150°C) oven for 5–8 minutes until warmed through but not hot, which keeps the phyllo crispy. Do not microwave (it will soften the phyllo). Freeze for up to 2 months in an airtight container; thaw in the refrigerator and reheat as directed.

Substitutions
  • heavy cream → Greek yogurt or crème fraîche. Adds tanginess and richness; use the same amount. The custard will be slightly denser and more tart.
  • honey → maple syrup or agave nectar. Use equal amount for similar sweetness and body. Maple adds warmth; agave is more neutral.
  • ground turmeric → saffron strands steeped in the warm coconut milk. Use 8–10 strands, steep in the milk before whisking with eggs. More floral and delicate than turmeric.
  • phyllo pastry sheets, thawed → puff pastry or filo dough. Puff pastry will puff more and create a different texture. Bake at the same temperature and watch closely—may brown faster.
